The perfumed and penetrating nose is unusually expressive for a young Les Clos and there is so much iodine, mineral reduction and oyster shell nuances present that this could be from nowhere else but Chablis. The big, powerful and imposingly scaled flavors ooze both dry extract and a pungent minerality yet the balance is perfect on the intensely saline finish that is markedly dry but once again not really austere. This should be terrific though note that patience will be required.

Pale, green-tinged yellow. Aromas of lime leaf and mint are lifted by steely minerality. Dense, rich and powerful, even opulent, but without any heaviness. Harmonious acidity frames and intensifies the white peach, lime and mineral flavors. Still holding a lot of gas following the recent end of the secondary fermentation. This beauty is less clenched than the 2012 was at this time last year. A beauty in the making.

The inaugural release, autumn 2013, was The Exceptional Grain, a blend of very special aged Scotch grain whiskies, selected from several different distilleries, each barrel chosen for its distinctive & memorable characteristics. While others blend to produce year-in, year-out consistency, each edition of The Exceptional Grain will offer a Whisky that is authentically individual, possessed of its own qualitative and stylistic distinction.

The Exception Malt will be released in the fall of 2014; the Exceptional Blend in 2015.

A blend of remarkable aged grain whiskies, including a barrel of 30-year-old from the Carsebridge Distillery, long since closed. This exquisite vintage rum possesses a silky smoothness which challenges the oldest cognac. The constant ambient warmth and tropical conditions of Demerara dramatically hasten the maturation process – producing a spirit that is the equivalent of one aged for many more years in a cooler climate.
Tasting Notes:

An extremely rare creature, this rum is rich, smooth and mellow with soft syrupy mouth-feel and subtle notes of caramel and heavy fruit cake. An after-dinner treat for sipping slowly and sparingly.

Blackadder RAW CASK is whisky as it always was. Whisky as it used to be. Every drop is "Whisky from the Old School". We wanted to bottle whisky as it would have been when served direct from the casks behind the bar in Scotland’s pubs one hundred years or so ago.  Blackadder does not believe in chill-filtering or in colouring whisky. We believe that the purest is the best. Quite simply, Blackadder RAW CASK is every bit a Blackadder whisky but even more so. We use a special bottling process to make sure that each and every bottle of Blackadder RAW CASK contains its own share of the cask sediments as well as of natural oils and fats that might otherwise be left behind when filling a cask strength whisky straight from cask. This ensures the maximum possible natural flavour is in each and every bottle. The only thing we do when bottling is to use a small filter to ensure that splinters of wood from the cask do not inadvertently pass into the bottle.

New Asturian Cider

When Asturian cider is served, it is poured in a particular way; El Escanciado: since it is natural and bottled without gas, the bottle must be held above the head allowing for a long vertical pour (requiring considerable skill and accuracy), which causes the cider to be aerated when it splashes into the glass below. This gives it a pleasant "zingy" taste. The glass is passed around and everyone drinks from the same glass. After drinking most of the glass, it is customary to splash a little out onto the ground, as a way to clean the glass of any lees for the next pouring.

The Barrels & The Water:  After spending 9 years in American oak, the spirit was further matured in our Papillon barrels which added perfumed aromatics and rounded out the Mouthfeel.The spirit was then tamed with pristine water originating from a natural hillside spring found on Dave’s property 2000 feet above the Alexander Valley in California.

The Profile:  Intense and inviting with caramelized sugar, baking spices, dark fruits, butterscotch and vanilla notes. The palate is smooth, ultra rich and layered. The finish is impressive with honey, toast and loads of caramel.

The blend of grapes this year is 52% Merlot, 28% Cabernet Sauvignon, 8% Cabernet Franc and 12% Petit Verdot. It awards pleasure and smoothness, thanks to its plump tannins and ripe fruit overtones. Another terrific value, this 1,000-case beauty exhibits lots of white peach, honeyed citrus, brioche and pineapple notes enhanced by a gentle seasoning of wood spice, a full-bodied mouthfeel and loads of fruit as well as exuberance. There is a heavy underpinning of minerality running through this attractive Chardonnay. Consume it over the next 5-7 years.
