Trappistes Rochefort

Rochefort is one of the classics that we have stocked for the 40 years we have been in business.  It seems like it has always been on the shelf, so we never talk about these beers as we take them for granted.  They are considered some of the best in the world!
We are mentioning Trappistes  Roquefort because we are seeing a new beer from them....should arrive tomorrow!

Trappistes Rochefort Triple Extra "Purple Cap"...$5.39
Rochefort Triple Extra (purple cap, triple, 8.11% ABV).
In 1920, well before the production of the famous Trappist Rochefort 6-8-10 in the 1950s, the monks at Rochefort brewed an extra-strong blonde beer and continued brewing it for several years. Now, 100 years later the monks are very happy to offer a strong blonde beer inspired by the original recipe.  Golden Blonde colour, launched in October 2020, first in The Netherlands and later in Belgium. According to the monks, they are still finetuning the recipe before releasing it worldwide

Trappistes Rochefort 6 "Red Cap"...$5.49 / 11.2oz bottle
Dark Trappist Ale "Dubbel"
7.5% ABV
Reddish-brown color with amber-gold highlights; soft body leads to earthy flavors and an herbal character. Refined, soft spiciness in the bouquet finishes with a bit of caramel. Bottle-conditioned for soft natural carbonation. Rochefort Trappist 6 is named after its original gravity measured in “Belgian degrees” – a brewing scale no longer used today. It was first sold to the public in 1953.

Trappistes Rochefort 8 "Green Cap"...$5.49 / 11.2oz bottle
Dark Trappist Ale
9.2% ABV
Deep brown color; the flavor is vigorous and complex, with firm body to support the strength. The aroma has elusive notes of fresh fruit, spice, leather, and figs.
Originally brewed for New Year's Eve and called “Spécial,” Rochefort 8 dates to the mid-1950s. The name comes from the original gravity in “Belgian degrees.”
Rated 96/100 The Wine Enthusiast

Trappistes Rochefort 10 "Blue Cap"...$6.49 / 11.2oz bottle
Dark Intense Trappiste Ale
11.3% ABV
Dark brown color. Great strength balanced by a complexity of flavors and firm malt backbone. The bouquet covers a wide range: port wine, leather, apricots, oak, spices – a deeply intriguing beverage.
Although written records of brewing at Rochefort date to 1595, Rochefort 10 was developed in the late 1940s and early 50s. It appears on virtually every list of the world’s finest beers.

Old Forester Whisky Tasting Set

Old Forester Whisky Tasting Set....$99.99 / 3 pack 375ml bottles

Includes one 375ml of each of the bottles below

Old Forester 1897 Bourbon Bottled in Bond
...375ml bottle
100 Proof Bottled in Bond
BIG FLAVOR. SMALL BATCH.
This 100 proof expression is the second release in our Old Forester Whiskey Row Series was specially crafted to honor the U.S. Bottled-in-Bond Act of 1897. After the U.S. Bottled-in-Bond Act of 1897 to be labeled as Bottled in Bond, whisky must be the product of one distillation season, one distiller and from one distillery. The concept behind the Act – the idea of “sealed-in quality” – was something that Old Forester – America’s First Bottled Bourbon – introduced in 1870.

Old Forester 1910 Old Fine Whisky...375ml bottle
93 Proof
TWO BARRELS. ONE FINE BOURBON.1910 Old Fine Whisky, Old Forester’s fourth and final expression in the Whiskey Row Series, is a double barreled Bourbon creating a smooth mingling of sweet oatmeal raisin cookie and milk chocolate, caramel corn, and evolving spice that lead into a refined, charred oak finish.
NOSE: Interlaced layers of buttercream, sticky toffee, cedar, and apricot
TASTE: Smooth, well rounded mingling of sweet oatmeal raisin cookie and milk chocolate leading into caramel corn and evolving spice
FINISH: Charred oak leads with a clean peripheral spice

Old Forester 1920 Prohibition Style Bourbon...375ml bottle
This 115 proof expression is the third release in our Old Forester Whiskey Row series and celebrates the brand’s continued distillation during Prohibition. For 13 years, the production, transport and sale of alcohol was strictly prohibited. However, Old Forester was granted a permit to continue distilling on Louisville’s Whiskey Row. The 115 proof expression represents a barrel sample that company president Owsley Brown I would have batched at the beginning of Prohibition.

Boon Geuze!!!!!

Boon Oude Geuze A L'Ancienne Vat 110 Mono Blend...$17.99 / 375ml
Brewed on 4/16/2014 and bottled on 12/15/2016
Vat 110 is characterized by its richness in aromas originating from the brett yeasts present in the foeder.  It is a slightly dry, yet full-bodied traditional Oude Geuze with hints of vanilla and dried fruit.

Boon Oude Geuze A L'Ancienne 2 pack with a glass...$29.99 / set

2 bottles and a Boon glass!
Oude Geuze Boon is one of the finest examples of the traditional 100% spontaneous fermentation Lambic style. To moderate the sourness, Boon Brewery only brews Lambic in the 7 cold months, from early October until April, according to the traditional “turbid mash” system.

Boon Geuze Discovery Box....$59.99 / 4pk with tasting manual

  • Vat 91
  • Vat 92
  • Vat 108
  • Vat 110
  • plus a tasting manual

As the name suggests, the Geuze Discovery Box is a box that lets you discover several new geuze beers. The box contains four new Oude Geuze Boon ‘VAT’ beers, each matured in its own particular oak barrel at the Boon Brewery reserve. In the cellars of Boon Brewery today, there are 158 giant oak barrels known as “foeders”, each containing up to 27,000 liters of lambic beer. Visitors to the Brewery sometimes ask whether they can taste the beer in the barrels and whether the beer from a particular barrel can be bought in shops. In the past, this wasn’t possible because Oude Geuze

Boon normally consists of a mixture of lambic from several different barrels. “But then we thought about it and, in 2013, we brought the very first Oude Geuze Boon VAT 44 to market,” explained Frank Boon, founder of the brewery. “This was a small production of Oude Geuze made up of 90% lambic from a single barrel, foeder number 44. The remaining 10% was a young lambic which contained the sugars for the bottle conditioning.” “The oak barrels in our brewery each have their own history and are characterised by unique microflora of wild yeast. The use of lambic from a particular oak barrel creates geuzes with very distinctive characteristics: vinous, whiskey-like, bone dry or very soft.

The number on the bottle always indicates the vat number”, explains the eldest son, Jos Boon. Discover Four Different Oak Foeders Since 2013, the brewery has made four Oude Geuze Boon ‘VAT’ beers. But now, for the first time, four different VAT Geuzes are brought onto the market together at the same time in the ‘Geuze Discovery Box.’ In this convenient box, you’ll find Oude Geuze Boon VAT 91, VAT 92, VAT 108 and VAT 110. These are 37.5 cl bottles. The ability to taste four different VAT numbers at the same time is really a fascinating experience. The Geuze Discovery Box also comes with a booklet which contains more information about the Geuze production process and the various foeders. This booklet also contains tips on the art of Geuze pouring and tasting. It’s perfect for beer tastings, or as a gift.

Wildflower from Australia

Wildflower Gold Australian Wild Ale...$13.99 / 375ml
Delicately balanced, gold shows notes of creamy meyer lemon, fresh limey hops and stone fruits. The palate is effervescent and dry with a subtle bitterness, pillowy body and developing acidity from the indigenous flora. This beer undergoes a warm primary fermentation by our house mixed culture of foraged wild yeast, naturally occurring souring bacteria and brewers yeast in a wide vessel before being transferred into French oak barrels for maturation. Mature barrels are then selected and blended to meet our desired character before being packaged and naturally bottle conditioned for a minimum of 3 months. Only then do we release this unspiced wild ale to be enjoyed at table with your favourite foods and best of friends.

Wildflower Solera Australian Wild Ale...$13.99 / 375ml
Solera is an Australian Wild Ale made with 30% NSW raw spelt, fermented with our house culture and aged in our 2,400 litre foudre. Its recipe is similar to our Gold except raw wheat is exchanged for raw spelt. By taking successive pulls of this large barrel, we will document development of the beer inside the foudre as it continually and eventually blends itself. Because we get less chance to intervene and blend ourselves, Solera exemplifies a different acid line than our Gold and Amber blends and has a distinctly unique body.
Solera is a spelt beer aged in foudre. It’s recipe is similar to our Gold except raw spelt is exchanged for raw wheat. We took the fifth pull of half the volume of our 2,400 litre foudre on July 24th 2019 and packaged it, unblended, on the same day. The foudre was then filled again with a single batch of the same freshly fermented spelt based beer. We will be taking successive pulls of this large barrel every four to six months (pull #4 was in February 2019).

At release this pull has aromas of perfumed rose blossom aromas, sweet juicy mandarin and subtle funk mingling with nutmeg, cinnamon and vanilla. Smooth palate with tight creamy carbonation brimming with orange citrus and spice. Lively and energetic whilst maintaining a depth and complexity from the Solera method.
