More about the Orphan Bourbons...
"The goal of The Orphan Barrel Whiskey Distilling Company is to locate lost and forgotten barrels of whiskey from around the world and share them with discerning adult fans. The first two variants to be released from the company will include the 20-year-old Barterhouse Whiskey and the 26-year-aged Old Blowhard Whiskey. Both brands are expected to begin appearing on select shelves throughout the U.S. in March 2014 under strict allocation due to limited supply.

Barterhouse Whiskey stocks were discovered in old warehouses at the Stitzel-Weller facility in Louisville, Ky. Rumor has it warehouse workers have already begun lining up for the first taste of this beautiful whiskey with a soft nose reminiscent of warm spice, biscuit and buttercream. The whiskey's mellow taste includes notes of roasted grain, charred oak and a brown sugar finish. Barterhouse Whiskey is bottled in Tullahoma, Tenn. and will be expected to sell for a suggested retail price of $75.

Old Blowhard Whiskey was also found at Stitzel-Weller and is hand bottled in Tullahoma. At 26-years-old, the whiskey contains exuberant, rich flavors with undertones of smoke and honey followed by a gentle finish – dry and spicy with a hint of orange peel. Carrying a suggested retail price of $150, Old Blowhard Whiskey is meant to be sipped slowly and best enjoyed among gregarious friends and unyielding debates.

Recipe of the Week : Kalamata Olive Tapenade



Kalamata Olive Tapenade

This was a huge hit at or Greek Wine Class and very easy to make, great as a burger or bruschetta topping, or simply as a dip for chips.

Ingredients:
  • 2 cups pitted Kalamata olives *** 
  • 2 tablespoons capers   ***
  • 3 white anchovy fillets   ***
  • Juice of one lemon
  • 2 cloves of garlic
  • 1 tablespoon fresh thyme(dried will work as well, just use a pinch)
  • 1 tablespoon fresh oregano(dried will work as well just use a pinch)
  • 1/2 cup of olive oil    ***
  • Freshly ground black pepper   ***

In a food processor, combine all the ingredients, pulse until all ingredients are well combined, let the tapenade rest in your fridge for a half our before serving to allow for the flavors to come together.

Region: Toro, Spain
Toro is a wine region in Castilla y Leon, north-western Spain, known for its powerful red wines made from Tempranillo. It is named for the town of Toro, an ancient settlement located on the Duero River (which bisects the region's northern half) just 40 miles east of the Portuguese border. The Spanish word toro means 'bull', and while it is unclear precisely how the town's name came about, the bull is nonetheless a fitting symbol for robust, red Toro wines. Linie Aquavit - aged at sea in oloroso casks

Matured at Sea
This is a very special Aquavit distilled from Potatoes.   Linie is the Norwegian word for "line" and it refers to the line known as the equator.    Linie is aged in Oloroso sherry casks and placed on the deck of a ship and for a journey on the sea crossing the equator down to Australia and then again back to Normay.  The journey takes it across the equator twice, it goes through big temperature changes, absorbs the salty air, and swirls around in the barrel (the back of the label shows the specifics of its voyage).  After the voyage, it is then aged for another 12-14 months before being blended.    


  • From maturing in oak casks previously used to age sherry, Linie Aquavit acquires a hint of sherry flavor.
  • Linie’s casks cross the equator twice on ocean ships over a four-month voyage under conditions that create the smoothest aquavit.
  • Made from potato spirit, with notes of caraway, aniseed, sherry and vanilla, which create a rich, herbal flavor.
Over 200 years ago, Catharina Lysholm brought her aquavit to ports in the East Indies, selling all but five casks. On her return to Norway, she found that her remaining, well-travelled aquavit tasted significantly better.   Though commercial sailing ships have long since vanished, Linie Aquavit still crosses the equator twice on a four-month sea voyage spanning 35 countries. The temperature and humidity of the crossings give Linie its smoothness.  To this day, every bottle of Linie Aquavit carries details of its four-month sea voyage in casks formerly used for aging sherry. On the back label you will find the date of departure, the date it returned after crossing the equator twice, and the name of the ship. This beer is the best there is, the best there was, and the best there ever will be.
A solid dose of light pilsner malt along with a variety of similarly undermodified German-style malts gave us a crisp, clean base to work with. Then we got it All Funked Up. Generous additions of Apollo and Vanguard hops created a substantial flavor of citrus peel and floral spice as well as plenty of IBUs for such a mild malt bill. Ale yeast was then used for primary
fermentation before adding a blend of three strains of Brettanomyces. These superattenuating little bugs were allowed to thoroughly ferment out many complex sugars and leave behind their characteristic (and very apparent) wild and funky flavors. After about four and a half months, we added a fresh addition of whole leaf Amarillo hops that spent about a week imparting a citrusy, almost candylike flavor. Finally, we moved the beer to a bottle for a final fermentation that cleaned and carbonated this beer to be ready for the glass.

Sparkling wine aged at the bottom of the Ocean

We introduced the 2010 to you last year, the 2011 just arrived!

Very limited amounts make it to the U.S.


They pull the bottles up from the ocean and do not wash them.  They then let seashells, algae. barnacles and whatever else from the bottom of the ocean all dry on the bottle and seal them in plastic.  Each bottle is different and each bottle is numbered.   The ocean offers perfect dark place and constant temperature for ageing the sparkling wine.

"BRILLIANT ideas sometimes arise out of pure necessity. Consider Piero Lugano, 63, the suntanned artist-turned-wine-merchant who opened a shop called Bisson in this town on the Italian Riviera in 1978.

Not content merely to sell wine, he soon began making it. Ten years ago he decided to try producing sparkling wine from indigenous varieties grown in vineyards overlooking the Golfo Paradiso on the Mediterranean.

But he immediately encountered a problem: there was simply no space in his already cramped shop and winery to carry out the aging required to make a bottle-fermented sparkling wine in the classic method of Champagne. Environmental conditions to achieve this type of sparkling wine, is known, which require an environment that meets the specific conditions of temperature and light (underground caves and tunnels).

Looking around and thinking about the wrecks of the galleons in the sea, which have repeatedly returned food products (wine) well preserved by the organoleptic characteristics intact.

Combining my passion for wine and the sea, I thought that the ideal could actually be the seabed. Depth 60 m, +15 ° constant temperature, darkness, pressure and a series of favorable factors in this ideal context for the most exclusive champagne!

The choice of location, thanks to the cooperation of the Area Portofino Marine Park, has fallen in "Cala English 'in the heart of the park. Over the years, completed all the trials and research, and the project started in May 2009, 6,500 bottles matured into the seabed.

For Stone Go To IPA, we are embracing our hop obsession in a new way, funneling an abundance of lupulin-borne bitterness into a "session" IPA delivering all the fruity, piney character of a much bigger IPA. To accomplish this, we employed "hop bursting," a new technique wherein an irrational amount of hops is added during the final phase of the brewing process to coax out extreme flavors and aromas while also imparting a burst of desirably pleasant bitterness. The result is an Alpha-acid-rich beer that fans can enjoy more of without missing out on the assertive hop character you, like us, crave. 2010 Marietta Angeli Cuvee Alexander Valley...$29.99
The peppery, meaty, superb 2010 Angeli Cuvee is primarily a blend of Zinfandel, Petite Sirah, Carignan and cool climate Syrah. Production of this big red (15.4% natural alcohol) was 3,300 cases. Its dense ruby/purple hue is followed by aromas of licorice, black currants and cherries intermixed with hints of camphor and spice. This is a full-bodied, opulent, mouth-filling, savory wine with not a hard edge to be found. It should drink well for 5-7 years.

A tremendous Zinfandel, Ravenswood’s most expensive, and while you might quiver at the price, it’s easily a very great wine. This is Zinfandel on steroids, a monster of wild summer berry, tobacco, currant and spice flavors, wrapped into significantly thick tannins. Yet despite the power, it never quite loses elegance and balance. The winery’s 2007 was their greatest Zinfandel ever, and this one isn’t far behind.
