In this series of classes, we'll concentrate on a single Distillery, pouring 6 different expressions from cask strength to cask finished whiskey. The Linkwood Distillery in Speyside is the subject of our 1st class. Owned by Diageo, Linkwood is a component in both Johnnie Walker and White Horse blends but never released by Diageo in the U.S. leaving independent bottlers to access and bottle expressions. Linkwood has a big following with single malt fans due to the sweet, lush fruit and nuttiness on the palate and finish. Don't miss out on this special class.

Prunelle de Navacelle is a trailblazing vigneronne in the emerging Beaujolais-Lantignié region. She produces small lots of her personal project at her family’s Château du Basty, home of the Perroud family since 1482. Prunelle farms old vines with regenerative agroecology methods to encourage biodiversity while fighting climate change.
Her Régnié is made from a single .64ha, 80-year-old, certified organic gamay parcel that she received in a trade from her friend Julien Sunier, who had previously converted the parcel to organic farming. The vineyard is planted in pink granite at 390m, produced with respect to her natural principles with biodynamic farming methods and cover crops. Bottled without fining, filtration, or added sulfur, the result is authentic, elegant, and transparent Régnié.

Efe Gold is made from Anatolian grapes and aniseeds.
Raki is usually aged in stainless steal vats, and according to production standards in Turkey, a maximum 10 grams of sugar per liter can be added to Raki in the process. Efe Gold has no added sugar, and has been aged for 120 days in oak barrels to give it a smooth taste, as well as distintive color and aromas.

Itxas Harri, located in the village of Monteagudo in the northern Basque region of Navarra, is a new project from Ignacio Ameztoi and his long-time friend and winemaking partner, Iñaki Guelbenzu. Wines from Itxas Harri defy standard logic, as the Spanish Basque Navarra region lies inland, yet the wines have a restraint and freshness with lower alcohol levels (12.5%) which we associate with the coastal areas. This flavor profile is the result of the vineyard planted on well-drained gravelly limestone soils in an ancient seabed at 385m in the Monteagudo village. This old-vine garnacha rosé made by direct-press is appropriately named Ŕoxa, which is “rosé” in Basque. It is an elegant, refreshing wine that pairs beautifully with the grilled artichokes and vegetables for which Navarra is so famous. On its own, or paired with a Mediterranean meal, Ŕoxa is dry, bright, and charming.
Vinification – The grapes are harvested in the early morning to preserve freshness. Only the free-run juice is used, with a two-hour skin maceration. The wine is then fermented with native yeasts in temperature-controlled stainless steel tanks at 14°C to 16°C.

BCS Gold Label Dovetail is created with the same finishing and blending method as our award-winning Dovetail, and incorporates whiskeys aged up to 25 years, resulting in a more powerful and robust blend. In our minds, producing tequila is an art form, one we take very seriously. With Cazcanes, you won’t find a large scale distillery producing tequila for multiple brands. What you will find is a boutique-style distillery that operates in harmony with the land, environment, and the natural spring that preserves it. Cazcanes takes a distinctive approach to produce hand-crafted tequila from start to finish.
Cazcanes sources natural artesian water for our tequila. The water starts off as rain high up in the pristine peaks of the San Pedro De Los Landeros Mountains. It slowly travels through natural minerals deep within the volcanic mountains before emerging at the Navichi springs.
We hand select each individual 100% Weber Blue agave for harvest during peak sugar levels to deliver a distinct Cazcanes taste. The “piñas” are then cooked and put through our roller mill to extract and concentrate their flavors.
Next comes fermentation using, natural wild yeast, followed by distillation in our alembic stills.Our attention to detail continues through every step of our small batch process until our tequila finds its final resting place in a hand-blown glass bottle.

A sensational Troplong. Vibrant and vivid, this makes you smile from the first smell: milk chocolate, floral notes of roses and lavender, wet stones, liquorice, cinnamon and ripe bramble fruits. Round and thrilling on the palate, tannins are abundant with a chalky blueberry coolness while a salty tang settles around the mouth. Lovely precision and purity of fruit; you feel the sharp definition - still linear which makes it less immediately charming than the 2019 but giving undeniable complexity. Deep but not heady, this remains pure and detailed, with a leanness from the terroir really setting this apart. After a few minutes, the glamour starts to appear giving a salivating, succulent and moreish aspect to the finish. An absolute beauty.

Absolutely pure gold and reminding me of the 2009 (or is it the 2010?), the 2020 Château Smith Haut Lafitte sports a dense purple hue to go with incredible aromatics of blackberries, blueberries, scorched earth, wood smoke, and acacia flowers. One of the most concentrated, rich, and sexy wines in the vintage, this massive an extraordinarily opulent 2020 shows the vintage's pure, elegant profile yet backs it up with sensational levels of fruit and texture. Based on 65% Cabernet Sauvignon, 30% Merlot, and the balance Cabernet Franc and Petit Verdot, it already offers pleasure given its wealth of fruit, but it deserves 7-8 years of bottle age and will evolve for 40-50 years. Not enough can be said about the quality of these wines. Bravo to Florence and Daniel Cathiard, as well as to director Fabien Teitgen, for another incredible achievement.
