We make multiple passes in each vineyard block throughout the growing season to ensure quality, and hand-harvest 100% of our fruit. This blend is designed to showcase that fruit in an unconstrained blend from all three of our sites.

On the nose bright red fruit is infused with cozy aromas baking aromas of toasted sugar, cinnamon and nutmeg. This palate is instantly gratifying, following up the warmth of the nose with a full bodied and fruit driven finish accented by soft tannin, and excellent acid that provides structure and contrast.

To balance the prominent grip characteristic of Petite Sirah, this particular blend was crafter with a softer, more elegant body. This wine opens with immediate hints of blueberry and blackberry, followed by accents of Dutch chocolate and a subtle touch of cardamom. The palate is big and weighty with ample mid-palate and soft, velvety tannins.
Tannins were skillfully prepared, giving utmost importance to retaining fruit aromatics and crafting a perfectly balanced wine. Once dry, the wine is pressed and put through malo-lactic fermentation to soften the acids. An aggressive oak regime is used to balance and add richness to the tannins.

Just as the disclaimer read, no chickens were harmed in the production of this Belgian Dark Strong Ale that was aged for eleven months in Cabernet Sauvignon Barrels on two strains of Bretanomyces."

Clocking in at 9% ABV, The Dancing Chickens is a Belgian Dark Strong Ale aged for 11 months in Cabernet Sauvignon barrels on two strains of Brettanomyces. This beer is dark, rich, and packed with complex dark fruit aromas and flavors, combined with extremely clean and bright Red Wine Barrel character. It has a wonderfully dry finish and we are extremely proud of the quality that The Dancing Chickens represents within this series.

The end result was so delicious, we ended up brewing it year-round. This delightfully tart fruit beer is refreshing, with a citrusy berry aroma which transitions to a subtly sweet and tart finish.
