Medium to full-bodied, deep and velvety, it's elegant and fine-boned, with lively acids, refined structuring tannins and a long, perfumed finish. Readers who gravitate toward classical styles of Beaujolais will prefer the 2019 to the richer, more gourmand 2018, but both are lovely vintages for this reference-point address.

We are proud to introduce Patrick St. Surin who is making Clairin (the local rum of Haïti) in the most thoughtful way possible: harvesting his own sugarcane or using sugarcane syrup made in-house or nearby, native yeast fermentations, and distilling in small, alembic stills. In essence, Clairin is the most compelling argument for the expression of terroir in spirits, and it achieves this in the most visceral way.

Patrick St. Surin, who lives in Carrefour Des Pères, a small commune about a thirty-minute drive outside of Cap-Haïtien. Here the plateau that forms much of the middle of the island gives way to plains that reach the Caribbean Sea to the north. He farms just over ten hectares of sugarcane, and has been distilling since 2012, when he decided against his father’s will to stay in his hometown to launch his business. As Patrick puts it, he did not view success as getting out of Haïti. Instead, he saw the opportunity to have success on his own terms.

The fields surrounding the distillery are pieced together with the aforementioned ten hectares worth of sugarcane planted with local cane varieties like Medialande, Pete Coca, Zariete grown by Patrick. In addition to this, there are a few hectares farmed by neighbors who allow him to harvest the cane in exchange for allowing their cattle and goat to graze freely around the property. Once the cane is harvested — the months considered to produce the highest quality sugarcane are February-March and July-August — it is carted back to the distillery by donkey and immediately crushed. ​

The juice is then poured manually into large open-top fermenters called pièces where a small addition of sugarcane syrup is added in the local method. Fermentations occur naturally, usually taking 10-15 days to complete. From here, the fermented cane juice is loaded into a small pot still and is distilled twice, rested, and then bottled by hand at full proof. The result is one of the purest expressions of sugarcane that we have ever tasted. -- importer

It’s perfect served straight, chilled or on the rocks. Versatile in mixed drinks and for cooking.

Il mallo (the husk) is where it all begins: the green walnut. Packed with aroma, essential oils, active principles and vitamins, a fleshy hull to be picked when still green.

Popular tradition dictates that for the preparation of Nocino, the walnuts are picked before they ripen, when their green husk is still soft enough to be cut with a knife. The best time is the week of St John, specifically the night of 23 June, traditionally the moment for harvesting the green walnuts, which are at the perfect stage for infusing.

And this is the moment we can point to one of the common denominators in the Modena tradition; a custom that encompasses the entire production cycle of preparation, maturing and sharing. It’s a cycle that’s linked to the women of the region, the home owners (rezdòre), who would climb ladders – barefoot, to avoid slipping – into the walnut trees to harvest the best nuts, and then lay them on jute sacks on the ground to be covered by the dew. Then they prepared the infusion, which was left to rest until Christmas, when the Nocino was made, ensuring that there was always something to offer for life’s unexpected moments.

Today Il Mallo continues to respect the ancient art of preparing Modenese Nocino: the meticulous selection of the green walnuts, picked at just the right time; their cutting and maceration in agricultural alcohol; the tapping and pressing; the infusion left to rest in vats. The recipe we follow has remained unchanged for many years: an infusion of walnut husks, water, sugar, alcohol and spices (cinnamon, cloves and coriander seeds).

This is a liqueur whose roots lie in the distant past, but which has always been in step with the times. Its strong character makes it unique yet versatile; its velvet-smooth flavour is warming when drunk on its own, but can also be mixed or used in cooking.

The KELT Commodore attempts to combine the most interesting qualities of a Grande Champagne VSOP, Napoleon and XO. The blend is extremely complex and depends heavily on the barrel selection for the Ocean Maturation.
Once the blending is completed we embark on the Tour du Monde. This is the legendary 3 month Ocean Maturation exclusive to KELT which brings out hidden qualities in the Limousin oak and rounds off the cognac in a beautiful and unique way making the KELT cognac the smoothest on the market while presenting a remarkably broad pallet of tastes and aromas.
We use our extensive experience and stock of Limousin oak barrels in the most creative way to get the maximum effect from the Ocean Maturation. For our Commodore we use barrels of between 8-15 years of a particular quality and history. The exact composition and details are a closely guarded secret know only to two persons within the company.
The blending and Tour du Monde puts our Commodore squarely in a tasting age of an XO but it still maintains the pleasant vanilla and fruit notes of a younger cognac.

Named for the golden hills of the Santa Lucia Mountain Range that frames our family-owned San Bernabe Vineyard in Monterey, Diora is inspired from “d’Or,” the French phrase meaning “golden” and bestowed on beautiful, sun-filled regions. No effort has been spared along Diora’s 30-year journey from vineyard-to-bottle. The result is an expressive wine overflowing with flavor, depth and personality and a devotion to indulgence.

This wine comes from the Limestone Ridge area in block 218 at our San Bernabe Vineyard. Within this block, there are three clones of Chardonnay: 1) # 4 (one of the more prevalent California clones giving the wine nice apple and tropical fruit notes). 2) Clone 95, a newer Dijon clone, adds a nice lime component and 3) Clone 76 provides some stone fruit to balance the flavors. The underlying limestone lens in this block produces wine with great minerality, giving nice texture which will age for many years. The Santa Lucia Highlands portion comes from our own vineyard at the northern end of the appellation. This particular vineyard is predominantly Clone 4, with some smaller amounts of Dijon clones.

This wine was aged in 100% French barrels, of which approximately 89 % were once used French oak barrels. The Damy Vosges long-toast barrels gives the wine some nice length with some slight char notes. The Cadus barrels gives the wine some nice vanilla sweetness and depth. A few Vicard barrels were also used for sweetness.

Washington was smart enough to distill most of his estate grown rye and went on to have the largest distillery in the country at the time of his death in 1799.
