The single malt spent its first eight years mellowing in American white oak bourbon casks. Then, delighted by that whisky’s smooth, soft character, Dr Bill was inspired to finish a select batch in Palo Cortado casks, never before used at Glenmorangie.
Palo Cortado is the rarest variety of sherry, created purely by chance, when the protective ‘flor’ yeast does not form on sherry intended to become Amontillado.
Enchanted by Palo Cortado’s sweet and nutty flavours, Dr Bill sourced a handful of its casks, which are incredibly hard to come by. He filled them with the whisky, imagining the unparalleled depth and complexity they might bring Glenmorangie. Finished in these deliciously wonderful casks, Dr Bill’s creation developed all the rich elegance he had dreamed of.
Uniquely complex and nutty, it layers dark plum depths with milk-chocolate richness, Brazil nuts and sweet spice.

This is a fantastic red blend from Maremma, a sub-region of Tuscany less than two miles from the Tyrrhenian Sea, and is made from three Bordeaux varietals. Monteti is our flagship wine. It is named like the estate after the hill that protects our vineyard from the strong Mediterranean winds guaranteeing an ideal microclimate thanks to which our vines can benefit, protected, from sea proximity.
It is a blend of Petit Verdot (with percentages varying depending on the vintage from 40 to 55%), Cabernet Franc (between 30 and 25%) and Cabernet Sauvignon (between 15 and 20%).
It matures for 18 months in medium-toasted French oak barriques, 70% of which are new. This is followed by further 2 years of bottle ageing before being released onto the market.

With Monteti we seek the personality of the Maremman territory subjected however to the complexity and elegance of a great wine. Petit Verdot is the personality, the rebel horse, Cabernet Sauvignon conveys structure and longevity and Cabernet Franc is the feminine element that embraces and softens both.

Savyll was started by self-proclaimed “dinner party mixologist” Avnish Babla. He has always loved to entertain friends and family, and to experiment with new, innovative cocktail ideas.

A career in the corporate world meant alcohol was ever-present; team events, client meetings, holiday parties – alcohol was hard to avoid.
