We plan to introduce Dissenter, an Imperial India Pale Lager (IPL) brewed with a wide variety of tropical, citrus-forward hops, this August to mark the tenth installment in our Backstage Series. Like all of our Backstage Series beers, Dissenter will be sold in 750mL bottles.

Dissenter is the first lager we’ve brewed since Noble Lager, a beer that hasn’t been in our production cycle for twelve years. Dissenter is our argument in favor of the potential for complex lagers, clocking in at 8.7% ABV and 70 IBUs.

This beer is a departure from our other releases for a couple of reasons: All of the beers in our standard lineup are ales, which are fermented at warm temperatures, whereas lagers are fermented cold. Plus, Dissenter uses a different kind of yeast from other Founders beers. Test batches of the Imperial IPL were brewed using our pilot system and have been on tap in our taproom off and on throughout the past few months. The longer brewing process used for lagers gives this beer an exceptionally clean finish, allowing the clear beauty of the hops to shine.

“With Dissenter, we’re releasing yet another Backstage Series beer that doesn’t fit within standard beer style guidelines,” said Co-Founder and Vice President of Brand & Education Dave Engbers. “And that’s the point. It’s a celebration of the creativity of our brewing team, and we’re looking forward to sharing it with the growing circle of beer enthusiasts.

Dissenter will be released in limited quantities across our distribution footprint beginning on Friday, August 1, and will be available at our taproom that same week. Look for one more Backstage Series releases from us in 2014.

Cantilon is doubling capacity

Dear Friends,

Great news, Cantillon is expanding.  Since last year, we are looking for a new space and we got it.  The new building is located at 300m far from the brewery and, as you can see on the picture, it welcomed till the sixties a Lambic blender, Brasserie Limbourg.  The new space is big enough to dubbel the Cantillon's production.  Because we can't disturb the balance between new and old Lambic in our blend, we will increase the production each year to finally dubbel it in the four next year.  The wort, brewed at the Cantillon's brewery, will be transfered the day after the coolling and will matured for years in the new location.  As you know, we need at least two or three years to produce a beer. In this way to work, the next production increasing will take place during the season 2016-2017.  The building will be at our disposal next October, more news will follow.

We could have been like all the others, following the standard one year maturation period of cane used in other premium rums. But to make the finest premium rum possible, the cane in Sammy's Beach Bar Rum matures for a full two years before it can meet our standards. This gives the sugar from the cane its intense character and wonderful aroma. After carefully selecting only the best crops, the canes are harvested and then gently pressed near our distillery. This pressing extracts the first-press sugar cane juice. The cane juice is fermented for 5 days in custom made vats to create "mash" with an incredible bouquet."

Sammy Hagar is the multi-platinum Red Rocker, the front man of hard rock legends Van Halen, respected member in the Rock and Roll Hall of Fame and currently embarked on his fourth platinum career with his supergroup, Chickenfoot.

Raised in Fontana, California, Hagar burst on the scene from San Francisco as the lead vocalist of Montrose. After a string of eight solo albums, culminating with the several platinum efforts and hundreds of sold out concert appearances across the country, Hagar joined Van Halen in 1985 and took the band to unprecedented heights, including four consecutive No. 1 albums before the band broke up in the mid nineties. He later returned to Van Halen to lead a triumphant 2004 reunion tour.

2010 Barolos score big with The Wine Advocate

Early reports of the 2010 vintage from Piedmont were very positive and the recent reviews from The Wine Advocate seem to confirm the 2010 is going to be thought of as one of the great and classic vintages in the last few decades. The next ten years should see a steady evolution of aromas stemming from the spice, tar and licorice layers already on display despite the wine’s young age. When you get three hopheads together to collaborate on a beer, it’s only natural to expect some hopped up liquid incarnation of their lupulin lust to spring forth from such a session. Maybe it seems passé to some—three masters of hoppy beer once again exploring the familiar territory of the India pale ale. After all, who needs yet another IPA, double or otherwise, right?It’s all been done. To those who feel this way, this trio’s reply is: “so what?” In birthing a double IPA made bitter and fruity care of a mélange of new and experimental hops (Azacca, Belma, and yet-to-be-named varieties from Washington’s Yakima Valley), they aren’t staying in a comfort zone—they’re hitting a sweet spot in the name of all that is good, delicious, hoppy and forward-thinking to create an IPA that’s both like and unlike anything they, or you, have ever tasted. Rife with essence of pine, resin, and fruits both citrus and tropical, there’s no need for apologies with this beer. All that’s necessary is a yearning for hops, a sturdy constitution and an empty glass.

Stone Stochasticy Project Quadro Triticale...$7.49 / 22oz
STYLE: BELGIAN QUADRUPEL
rappist ales as we know them have a proud lineage dating back nearly a century. Rather than follow the footsteps of the monks who forged the quadrupel—the warmest and darkest of monastery offerings—we aimed to test its inherent makeup. In doing so, we added triticale, a hybrid grain combining the pleasant flavor of wheat with the elemental durability and spice of rye, to breathe new life into the malt bill. Because of this, this reimagined brew comes across differently than its classic Belgian predecessors, and beautifully so. Lower in sweetness, but rich with flavors mirroring dried fruit, it’s a modern interpretation of one of the most historically sacred styles on Earth.

In bringing together artisans from disparate aural planes, one might expect an offbeat, feedback-warped cacophony, shrill to the point of unlistenable. Yet, by inviting Kyle Hollingsworth, keyboardist for eclectic, jam-prone sextet,The String Cheese Incident, and Keri Kelli, wailing rock guitarist of Alice Cooper fame, we were able to make truly beautiful music. Turns out, these musicians have a great deal in common, both with each other and with Stone. We all enjoy turning things up to 11, and that is represented in this collaborative offering, an imperial India pale ale ably backed by Nugget, Comet and Calypso hops, and amplified care of a healthy dry-hopping with Vic's Secret, a new Australian hop, adding citrus and tropical fruit oomph. To give this modern masterpiece some soulful, classic character, we traced the roots of brewing to the days when Old World herbs were used to spice beers, adding in coriander and, a first for us, elderberries. To stand up to that sumptuous spice and blaring bitterness, we added golden naked oats, which are lightly roasted and add body and enhanced mouthfeel to the brew like a steady, unbreakable backbeat to an incendiary jam solo. Sit back, crank the volume and get lost in this operatic incarnation of genres combined in the name of invention.

Since Day One, we've been abundantly forthright and fully transparent about our lust for hops. It's led us to craft many an IPA, most of them imperial—some intense for their time and all timeless in their intensity. For Stone Go To IPA, we are embracing our hop obsession in a new way, funneling an abundance of lupulin-borne bitterness into a "session" IPA delivering all the fruity, piney character of a much bigger IPA. To accomplish this, we employed "hop bursting," a new technique wherein an irrational amount of hops is added during the final phase of the brewing process to coax out extreme flavors and aromas while also imparting a burst of desirably pleasant bitterness. 2010 Clos del Rey Le Sabina....$19.99
The Montagnes’ 2010 Cotes du Roussillon Sabina as usual showcases Grenache, though here the complimentary young-vines Syrah amounts to 30%. There is infectious juiciness and invigoration from seedy red and black raspberries – mingled with beet root and laced with a hint of horseradish for a borscht-like effect – in the context of formidable sheer intensity. But that is not to say that nuance is left behind. Iris and violet on the nose proceed to waft through the entire proceedings, while crushed stone and saline suffusions serve for counterpoint and saliva-liberation on a long, energetic and dynamic finish. This effusive and polished performance should remain captivating – not to mention offer outstanding value – through at least 2016.

2009 Clos del Rey Clos del Rey....$44.99 
60% Carignan and 40% Syrah

The depth of richness to the Montagnes’ 2009 Cotes du Roussillon Clos del Rey – only released in 2013, as they always practice long elevage followed by bottle-aging in their cellars – is predictable given the nature of that vintage and this father-son team’s track record. What takes me by delightful surprise are the fine grain to its abundant tannins and the lift and brightness as well as the counterpoint of mineral and fruit elements that are here allied to almost massive density and concentration. A pungent nose of poached cherries laced with licorice, rosemary, black pepper and a hint of vanilla leads to an expansive palate and a finish of tongue-tingling intensity, mouthwatering salinity, schist-licking stoniness, and peppery bite that vividly sets-off the plush, ripe, yet vibrant fruit. This beauty should prove worth following through at least 2025. And one again, incidentally, it illustrates the versatility and adaptability – to site, to style, and to one another – of the grapes grown in Roussillon, as here we have roughly 60% Carignan and the rest Syrah.

2012 Alfredo Roca Pinot Noir....$12.99
Tasting Notes: Deep crimson color, with black cherry fruit aromas, and light floral, vanilla notes. Ripe and full-bodied on the palate, with delicate plum character and a long, lingering finish.  Serve With: Excellent with pizza and hearty pasta dishes, it will also stand up to red meats, grilled or stewed. Fruit was sourced from the Finca Santa Herminia and Finca La Perseverancia vineyards. Soils are comprised and sandy and clay loam. Average yields of 5 tons/acre. Grapes were harvested by hand during the second week of March.
