On the palate, this wine expresses the typicity of a Mediterranean Viognier very well, with roundness and balance. This wine’s flavors of stone fruit and honey pair well with tender turkey and chicken as well as shrimp. This Viognier also pairs well with spicy takeout dishes like Thai or Indian food. Early morning picking and cold temperature fermentation to preserve freshness. The lees are stirred post-fermentation to add volume to the wine and balance the fruit.
