Gouden Carolus Beers

These have been rolling...people are very excited they are back
...all reloaded again

Gouden Carolus Tripel...$11.99 / 750ml

A golden-blond Belgian tripel with an ABV around 9%, made by Het Anker.
It is refermented in the bottle, giving it a rich, full body and a creamy, large head.
Aromas include banana, citrus, and mint, with a spicy-yeasty backbone, while the taste balances sweetness and gentle bitterness.
Despite its strength, it remains refreshingly drinkable, thanks to its balanced hopping and clean finish.

Best with bright, aromatic, slightly rich dishes
  • Mussels with garlic & white wine (classic Belgian pairing—its spice and citrus cut through the brine)
  • Roast chicken or Cornish hen with herbs
  • Creamy cheeses like brie, camembert, or triple-cream
  • Thai or Vietnamese dishes with lemongrass or light curry heat
  • Seafood pasta with lemon or capers

Gouden Carolus Noël (Christmas)...$11.99 / 750ml
This is a Belgian strong dark ale (about 10.5% ABV) brewed as a Christmas “winter warmer.”
It’s brewed with six different herbs and spices plus three types of Belgian hops, contributing to a deep, rich flavor profile.
Aromatically, you’ll notice strong notes of black licorice (anise), plums, chocolate, and spiced fruitcake, evocative of holiday desserts.

Best with warm, cozy, wintery dishes
  • Glazed ham or honey-roasted pork
  • Beef stew, especially Belgian Carbonnade
  • Gingerbread, fruitcake, or spiced desserts
  • Blue cheese (bleu d’Auvergne, Roquefort—sweet/spicy vs salty/funky = perfection)
  • Dark chocolate truffles or chocolate tart

Gouden Carolus Imperial Blond...$13.99 / 750ml
This is a strong blond ale (around 10% ABV) from the Cuvée van de Keizer series.
It’s brewed with multiple types of malt and three different spices — giving it a subtle but perceptible spiciness.
The aroma is fruity and herbal, with hints of orange, cumin, and coriander (per its brewery tasting notes).
In taste, it’s quite balanced — rich and full but also refreshingly crisp, thanks to its bright golden character.

Rich blond ale pairs beautifully with savory & slightly spicy meals

  • Grilled shrimp or lobster with butter
  • Moroccan or Middle Eastern dishes with mild spices (cumin, coriander, saffron)
  • Roast turkey or pork loin
  • Washed-rind cheeses like Taleggio
  • Lemon herb pasta with chicken or scallops
Gouden Carolus Imperial Dark...$13.99 / 750ml
Also part of the Cuvée van de Keizer (“Emperor”) series, this is a very rich Belgian strong dark ale with an ABV around 11%.
It has a deep ruby-brown color and a warm, full mouthfeel, designed to age well and develop complexity over time.
On the nose and palate, you’ll find roasted malt, caramel, plums, and dark fruits, with a soft fruitiness layered over warming malt.

Deep, complex, dark ale suits bold, rich, sweet-savory dishes
  • Braised short ribs or slow-cooked beef
  • Barbecue brisket (caramelized sauce matches the dark fruit notes)
  • Duck breast with cherry or plum glaze
  • Aged gouda, cheddar, or alpine cheeses
  • Chocolate mousse, flourless chocolate cake, or tiramisu
