To celebrate this vibrant time of year, the cheese makers of Uniekaas create Meadowkaas, a young Dutch Spring milk cheese made in Gouda style – which uses only the milk from the cow’s first grazing. Over the Winter months, the grasses have grown rich in nutrients and flavor resulting in a treat for the cows which turn out copious quantities of fresh milk with a high cream content – over 50%, making this cheese rich and creamy with just a hint of salty and sweet.
