Collingwood Rye 21-Year-Old has matured for 21 years in seasoned oak barrels and in its finishing step, this unique Canadian whisky rests with toasted Maplewood to complete its smooth character.

2002 Dom Ruinart Blanc de Blancs Champagne...$129.99 net
I had very high expectations for the 2002 Brut Blanc de Blancs Dom Ruinart and was not disappointed. Actually, that is an understatement. The 2002 is a flat-out great Dom Ruinart. It is as compelling as any Champagne I have ever tasted from the estate. Layers of sweet, perfumed fruit emerge with no end in this subtle, sexy Dom Ruinart. The 2002 vintage generally yielded big wines, and of course, a significant amount of the Chardonnay for Dom Ruinart comes from the Montagne de Reims, where the wines are richer and broader, yet those are truly mere details. The 2002 convinces for its superb overall balance and sheer personality. It possesses striking depth and an endless, eternal finish. I imagine the 2002 will enjoy a wide drinking window that will stretch out several decades. Truth is, its pretty special even today. Anticipated maturity: 2012-2032.

Aromas of apple skins, spring flowers, lemon zest and a delicate hint of pear emerge from this wonderfully effervescent, dry, crisp,light-bodied, featherweight style of wine.

"Denois’s non-vintage Chardonnay Brut Blanc de Blancs. Legally, this “traditional method” wine is merely a vin mousseux, yet it is in fact a tribute to the terroir of Limoux (whose sparkling wine appellation must be based on the local Blanquette de Limoux a.k.a. Mauzac grape, for which Denois evidently has little respect). It will be hard to find a more delicious and interesting sparkling wine for the price. Ripe apricot, grapefruit, blueberries, and lily in the nose lead to an intensely pit-fruited palate that – despite a mere five grams of residual sugar – suggests a hint of sweetness on account of its sheer ripeness. Yet, there are suggestions of saline, chalky minerality here as well, a fine mousse, and a refined finish. This will be easy to guzzle but not to forget. Bravo Denois!" -- The Wine Advocate

Tasting Notes: Offers vibrant pear and apple aromas. Has a touch of richness, but thankfully lacks fat, buttery flavors.  Serve With: Excellent on its own, but can stand up to richly sauced poultry, seafood, or creamy pasta dishes.

Tasting Notes: Deep crimson color, with black cherry fruit aromas, and light floral, vanilla notes. Ripe and full-bodied on the palate, with delicate plum character and a long, lingering finish.  Serve With: Excellent with pizza and hearty pasta dishes, it will also stand up to red meats, grilled or stewed. Fruit was sourced from the Finca Santa Herminia and Finca La Perseverancia vineyards. Soils are comprised and sandy and clay loam. Average yields of 5 tons/acre. Grapes were harvested by hand during the second week of March.

Delphi Pilsner Beer - from Greece

Delphi Beer is a Mediterranean pilsner, blond, double fermented and, of course, blurry.  It has got a distinctive, particularly aromatic taste, with a light, pleasantly bitter aftertaste evocative of fresh malt. The dominant scent of acacia and orange blossom balance with the delicate scent of hop. A non-pasteurized beer which is traditionally fermented in the bottle.
Served at 7⁰C and ideally accompanied with sea-food and yellow cheese.
Ingredients: water, malt, barley, hops, yeast. Alcohol: 4.5% Vol.

Seef is an old style of beer that was produced in small family breweries in Antwerp. It disappeared entirely after WWI as these breweries were dismantled for the war effort, by one side or the other. People remembered it, but the beer was not brewed for almost 100 years until Johan Van Dyck—who had been intrigued by stories of the beer—set out to recreate what had been a very popular beer.

Seef
Seef is hard to describe. It’s effervescent, full-bodied, nicely finished. It has fruity, wheat beer-like notes in the nose and palate, but it also has a beguiling earthiness. Moderate hops nevertheless leave Seef dry and more-ish, easy to enjoy. Do I taste brettanomyces? Is it sour? Not really, but sort of. . .

Seef is a totally unique beer. It will remind you of many other beers you love but nothing is exactly like it. Fermented with a very special strain of yeast, it’s unlikely to be duplicated.

  • SINGLE CASK BOTTLES Each bottle of Brenne Whisky comes from a single barrel selected at its peak. We don’t blend barrels. Each barrel number is stamped on the back label.
  • COGNAC DISTILLING TECHNIQUE Using cool fermentation and small batch production, Brenne Whisky is twice distilled in copper alembic stills for a smooth finish.
  • NO AGE STATEMENT Because Brenne Estate Cask is bottled individually by barrel, the aging for each cask differs as it depends on how long the Cognac was in the barrel before. On average, the whisky ages for a total of about 7 years.

About the creator...
Allison Patel and her husband Nital shared a passion for food and drink has immersed them in cultures all over the world. Making an effort to visit local markets, wineries, and distilleries in their travels, they have developed an appreciation of great taste experiences, especially with their favorite category: whisky. Years ago while on a slew of international business trips, Nital would frequently call his wife (often waking her up in the middle of the night due to time differences!) to tell her about all of the amazing whiskies he tasted. After failing to find many of these “non- traditional” whiskies in the US, Allison took into own her hands and started setting up an import/ export company for this sole purpose.

While exploring the world whisky scene for something “new”, Allison encountered a third generation Cognac producer who had started distilling a unique Single Malt at his farm distillery in the heart of Cognac, France. At that time, a majority of the oldest whisky was around three to four years old in new French Limousin oak barrels. Upon tasting it, Allison immediately knew it was something special. She and the distiller collaborated over a span of three and a half years to refine the aging spirit and continue laying down more barrels as each year’s crop of barley was ready to be harvested. A breakthrough occurred when Allison decided to incorporate his previously used Cognac casks in the whisky aging process. This stimulated the whisky in a beautiful way; ultimately creating a new profile within the Single Malt category that became Brenne Whisky.



Brenne Whisky is crafted from seed to spirit in the heart of Cognac, France in very limited batches. Allison’s first expression, Estate Cask, has no age statement as every barrel is bottled in single barrel releases and the aging time on each cask may vary slightly.

After intense work, Allison is honored to share Brenne with the world, introducing an incredibly smooth, approachable, and fruit-forward French whisky that reinvigorates the category. Brenne officially launched on October 1, 2012 in New York City and we are excited to share our dream with whisky enthusiasts far and wide.

AROMA WITHOUT WATER
Initial rum and raisin notes, with a delicate vanilla edge. Smooth peach and nectarine fruit flavours mingle beautifully with toasted malt.

TASTE WITHOUT WATER
Hints of rich Sherried Christmas cake, with a touch of marzipan. Some mixed spices emerge. Smooth and creamy with mouth warming qualities.

AROMA WITH WATER
Subtle ripe green apples notes, with a delicate touch of smoke (charred oak) comming to the fore. Some malty notes become apparent.

TASTE WITH WATER

New Craft Beer from Brazil

Founded in 1995, Cerverjaria Colorado is named after it’s first brewing equipment, purchased on the used market. Marcelo Carneiro da Rocha, struggling for a name for his fledgling brewery, thought to himself “The equipment is from Colorado! A good name for a brewery!” Indeed, the brewery is Pan-American, with gear from Canada, The United States and Brazil.



Colorado Guanabara Imperial Stout...$7.99 / 600mlNamed after the famous bay of the same name—the home of Rio de Janeiro—pictured on the label.   Made with black rapadura sugar, a rough-and-ready form of cane sugar. It adds a treacly, molasses note to this stupendous Imperial Stout. Brewed with Colorado’s deft touch, Guanabara is splendidly integrated in overall flavor: hops, malt, sugar all come into balance with roasted notes, gentle bitterness and a nose redolent of figs, pomegranate syrup and a high note of resiny hops.  A beautiful match for game, well-matured cheeses, charcuterie and creme bruleé. Serve cool but not chilled for best, most explosive, flavor.



Colorado Berthô Ale brewed with Brazil Nuts...$7.99 / 600ml
What could be more indicative of it’s origin than Brazil Nuts? In this unique brew, Brazil Nuts are roasted to develop flavor and bring the foam-killing oil to the surface of the nuts. They are cooled slightly and then wiped down by hand to remove the oil. This is repeated until no more oil rises to the surface. Needless to say, it’s an intense brewing process!
The beer is fully nutty, with a rich, full mouthfeel and the very delectable aroma and flavor of freshly roasted nuts. The only brown ale we’ve had that TRULY tastes like a “nut brown”. Delicious, but let it warm up for best aroma and flavor.

First brewed 1996; claimed to be based on a recipe from 1679 which used wheat, oat and barley.
Tripel Karmeliet is a very refined and complex golden-to-bronze brew with a fantastic creamy head. These characteristics derive not only from the grains used but also from restrained hopping with Styrians and the fruity nature (banana and vanilla) of the house yeast. Aroma has hints of vanilla mixed with citrus aromas. Tripel Karmeliet has not only the lightness and freshness of wheat, but also the creaminess of oats together with a spicy lemony almost quinine dryness.

Talisker in any guise is a very special and idiosyncratic single malt, defining an Island style that is all its own. The last year has seen Diageo expand the existing portfolio with three new Talisker expressions, namely Storm, Dark Storm (matured in heavily charred casks), and Port Ruighe (port finish), all released without age statements. Of this trio, Talisker Storm seems the pick, with one commentator describing it as “…everything that you love about other Taliskers with the settings turned right up.”
Talisker Storm_Hi ResOne of the ways in which the bolder aroma and flavor profile of Storm has been achieved is by using a mix of refill casks and rejuvenated casks. The latter—older casks which have been de-charred and re-charred to give them a new lease on life—offer a distinctive wood influence when again filled with spirit.
Essentially Talisker Storm exhibits a more smoky, maritime character than the familiar 10 year old expression, yet could not be mistaken for anything other than a Talisker. Although it does not carry an age statement, this is one of those instances where you never feel when drinking the dram in question that the lack a specified age is about conserving precious stocks of older whiskies (although that may well be the case). All seems harmonious and well integrated, and any more youthful notes that emerge on the nose or palate seem entirely in keeping with the nature of the expression.
Storm arrived in the U.S. in October, and Talisker aficionados will no doubt argue long and hard over whether it just outpoints the 10 year old. One of the reasons behind the development of Storm was to be able to offer a new Talisker variant that remains true to the brand’s essential character while offering something slightly different, with easy availability and an affordable price. —Gavin Smith

Winemaker Notes

Hints of cedar, leather and savory spice from aging in French oak barrels contribute depth and nuance, while a streak of uplifting acidity adds dimension to this wine’s smooth velvety texture. De Dolle Oerbier Reserva is a specially matured version of De Dolle Oerbier. This version of De Dolle Oerbier is matured for 18 months in Bordeaux wine casks.

Oerbier means original, from the spring. This beer has been brewed in small scale (5 gallons) at home in a copper wash kettle, by two brothers who were students at the time. They took over an old brewery which was out of business and said: "If we don't remake the brewery alive, nobody will!". It was also a unique opportunity to create some interesting brews, so why not try it ? Therefore we want and will do the main work ourselves and keep the scale of the brewery like it was. Since then, the brewery and its beers have been an inspiration source for a lot of brewers. Oerbier is brewed from no less than 6 malts. Poperinge Golding hops in flowers and a special yeast which makes it a little tart, especially with aging. At the brewery we have excellent cellars which have a constant temperature of 8°C and allow Oerbier to age at its best. After a couple of years Oerbier tastes like it should have been blended with wine … Oerbier has been refermented in the bottle and contains a layer of yeast, having vitamins B. NAT en STRAF on the glasses means WET and STRONG, a warning for the 7.5 vol. alcohol content. The little person on the glasses is the Oerbier man, a simple creature who holds a brewers fork in his right hand, symbolizing the work and science, but looking to the other side, the result of all this, the glass of (Oer)beer. The artwork on the poster is a wallpainting found in Spain, (Altamira) and is considered by art lovers as being the best prehistoric art work (30.000 years BC). On the other hand we have Oerbier started in 1980, going on with the tradition.
