Mandala Brazilian Cheese
Essex recently began working with Brazilian cheesemaker Pardinho to introduce their cheese Mandala to the US market. Pardinho itself is a farmstead cheesemaker located outside the capital of Sao Paolo. To find a breed of dairy cattle capable of proving high quality milk in a tropical climate, they crossbred Jerseys with a Southeast Asian breed known as Gir. This created some of the most interesting looking dairy cows we have seen – they almost look AI generated. Pardinho makes its only cheese (Mandala) on their farm, aging it in underground caves before it is flown into the US.
While Mandala is an alpine-style raw milk cheese, many here thought it more comparable to a tomme. It is not the type of alpine that will overwhelm your taste buds.
