So cask strength after 11 years is 95 proof?
How is that possible? What ABV is it barreled at?

I know the maximum it can be barreled at is 125 proof, I think the minimum might be 100 proof. It used to be, but the law might have been changed. But depending on humidity and temperature some bourbons go down in proof in the barrel and some go up in proof.

low proof cask strength bourbon can be a real treat. you get all of the wood oils and flavors at their full density without the thinning and drying effect of the additional ethanol.

o totally agree with you on that. I have 5 bottle and 2 are at 47 abv.
I've been all about saos since they first started. I actually have several bottles of the rye ( cask strength and the regular ). I called the distillery a year ago and asked about the rye. It's no longer available for right now.
It comes down to price point for me. I know it cost to store barrels for 11 years no matter the cask strength. I'm not sure they were going for that strength or how they pick the barrels. The essentially get more bottles from a barrel with less water evaporation. To me the price and abv should be inversely proportional.
I know they are a very transparent distiller and in this case a non distiller. I wish they could tell us more info for the whiskey nerds.
I've heard stories of barrels be almost empty after aging to long.
It is very nice to have a cask strength at that abv.
