Kenny's Farmhouse Apple Cheddar
A seasonal Favorite, usually released in the Fall when the air starts to get a little crisp in the evening. We use a tart yellow apple, which tends to stand up well to the 9-month aged cheddar. The chopped apples are first soaked in hard cider from our friends at Thomas Family Winery and then rolled over and mixed in with the cheese curds before they are pressed and aged through the summer months. The cheddar still shines as it is aged quite a bit but the apples have themselves slightly fermented providing a really unique and full-bodied autumn profile.
Serve with a tall glass of unfiltered hard cider or a hoppy beer.
Wine Pairing: Reisling or Chenin Blanc
