Dark purple. Deeply pitched black and blue fruit compote, singed plum, cola and mocha scents are complemented by notes of violet pastille and licorice. Broad, palate-coating blackberry liqueur and fruitcake flavors show striking depth and a plush, velvety texture. Decadently rich but surprisingly lively, finishing with superb power and thrust and smooth, late-arriving tannins.

MILLING & MASHING:  The finest barley is steeped, germinated and gently air dried. Using a traditional roller mill, the malt barley is then turned into a fine grist.

FERMENTATION:  After mashing, the natural fermentation process produces the wash (essentially beer) with over 8% alcohol.

DISTILLATION:  The traditional triple distillation method uses copper pot stills, which create and fine-tune the proper character. After the first distillation, the strength of the spirit is increased through a second distillation with a low wine still. A third distillation in the spirit still, creates a cut above 80% alcohol. This captures the heart of the spirit.

MATURATION:  Our coopers hand-select the finest former bourbon barrels in which to age our proper whiskey. Our spirit slowly ages developing through the years flavours of vanilla, honey and toasted wood.

BLENDING:  The blending of sweet Irish grain spirit and single malt Irish whiskey lies at the heart of Proper No. Twelve. Our Master Distiller selects casks that hold the rich character needed to craft Proper No. Twelve Whiskey.

Shows firm tannins and pretty structure for the vintage. Tight and precise with super polished tannins and a lovely center palate of ripe fruit and earthy undertones. Very, very refined. Classy. Better in 2019.

The 2012 Barolo Cannubi Boschis is a solid and tighter wine compared to the 2012 Le Vigne. Having said that, it veers close to being too austere and hard-bodied, especially at this young stage of its life. Of Sandrone's two new Barolo releases, this wine definitely needs more time to evolve and soften with extra years of bottle aging. The tannins are more evident and the wine's firm backbone acts to support dark fruit flavors with distant accents of spice, licorice and tobacco. Start drinking in 2018

A soaring, majestic Champagne, the 2004 dazzles from the very first taste with its crystalline purity and brightness. In two tastings so far, the 2004 has been nothing less than a total showstopper. The vertical structure and pure, tightly-coiled power are the stuff dreams are made of. There is little doubt the 2004 is one of the very finest Clos du Mesnils in recent memory. Will it join the 1979, 1988 and 1996 as one of the all-time greats? Now, that is a tasting I would love to do!

We are always looking for bottle of Champagne that hits the sweet spot for the Holidays, a step up from the standard NV Brut but not quite at the Tete de Cuvee price point. Well we found our wine, introducing the 2012 Louis Roederer Brut, a sneak peek of Champagne's next great vintage


2012 Louis Roederer Champagne Vintage Brut....$69.99
Roederer’s white golden 2012 Vintage is a classic Millésime. Based on 70% cool-climate Pinot Noir from Verzy and Verzenay (Montagne de Reims) and 30% Chardonnay from a very warm, south/southwest-facing vineyard in Chouilly (Côte des Blancs), the 2012 represents the mineral terroirs of its origins beautifully—pure, refined and fresh. Fermented 8% in oak and with just 16% of the volume having done malolactic fermentation to make the Roederer Vintage Brut a classic gastronomic wine, the 2012 shows a deep, rich and ripe but also fine, precise and elegant chalky nose with hazelnut, toasted almond and blossom flavors. The palate is profound, round, highly elegant and fresh, and the long, remarkably salty finish is very complex and terribly fresh in its persistent mineral expression. This is an impressive, ripe and almost creamy textured but precise and finessed 2012 with power, body and structure. A true, highly stimulating classic. Just love it! Disgorged in January 2017 after four years of bottle aging

The 2013 Masseto paints a glorious picture of Tuscany. It captures an inspired moment in time and walks an impressive tightrope between power and elegance. In my preview tasting last year, I noticed the firm textural richness of the 2013 vintage and the crystalline sharpness of its aromas. Thanks to 12 additional months of bottle aging, that impression is evermore constant and concrete. The focus is there, yet the wine has also fleshed out and put on more velvety definition especially in terms of mouthfeel. It wears its pedigree with pride, but most importantly it offers the balance and integration to promise a long and healthy aging future. The 2013 vintage follows closely on the heels of the impeccable 2006 and 2010 vintages in terms of cellaring potential. This is definitely a bottle that should interest collectors.

Our friends over at Kentucky’s own Willett Distillery have one kind of barrel: wood. And they put two things in them: Bourbon and Rye. We were fortunate enough to get some of their Rye barrels, and we put our Imperial Stout in them. It’s a chocolatey, coffee-y, smoky, Bourbon-y beast of a barrel-aged thing. Word.

Auchnagie Distillery existed for almost 100 years, starting work as a remote farmhouse distillery and ending its days as, arguably, the jewel in the crown of a global whisky empire. It had at least seven different owners and was silent for large parts of its life. This was not unusual for small-scale 19th century distilleries, as their precarious existence was often at the mercy of lack of water, lack of money, changes to duty laws and local demand for the product.

Our sparkling wine fermented on cherries and pear.

The early crispy Stevnsbær cherry is the ideal blend partner for the local pear Lucas variety to go into a cuvée with both lingering freshness and smooth wine character.

The basic blend – called „Cuvée“ – ferments stepwise, according to the fruit specific optimum picking time on its own yeast from the orchard. The ’Cuvée’ is a blend of 60% Stevnsbær cherry and 40% Lucas pear.

After natural clarification by gravity the wine goes into the process of the second fermentation to create the bubbles and the character of a sparkling wine.
