These olives are picked before they mature—that's why they are green. Mild and nutty, they make beautiful toppings for main courses. Together with Niçoise olives and the oil-cured black olives with herbs, they form a "Provençal olive trinity" often found together in appetizer bowls before meals. These bright green olives have a delicate subtle flavor, slightly salty. Picholine are used in French specialties including cold appetizers or as a topping for warm main courses and salads.
