Delicious Salami from Chicago

Last week we met Master Salumiere, Greg Laketek, and taste through his wide range of salami. We were blown away by how good they were! 


One huge takeaway was that despite the 80/20 meat to fat ratio, these could be sliced thicker than other  traditional Italian salamis without the rubbery, fatty texture. They recommend cutting them at a 60 degree angle, and about the width of a peppercorn. We brought in four flavors: Soppressata, Finocchiona, Chorizo, and Barolo.
