The sourness comes from the kettle sour method where lactobacillus (same bacteria used to produce yogurt) is added to warm wort in the brewhouse to sour the wort by producing lactic acid. After 2 days of souring, the wort is boiled and then a few special ingredients like apricots and tart cherries are added to the beer.
