Over the past several years, Barrell Dovetail has become a highly regarded expression within our portfolio of products and the American Whiskey world. Recently, we became intrigued with applying the concept of “Dovetail” to some of our older stocks. The result is BCS Gray Label Dovetail, which still boasts our award-winning blend of Whiskey finished in rum, port, and Dunn Vineyards cabernet barrels and uses the same finishing and blending method. The difference, as with all our Gray Label offerings, is that we used older and more rare barrels in Gray Label Dovetail. The result harmoniously unites a dark and fruity California cabernet finish, a jammy and pleasurable port finish, and a sweet and funky rum finish to create a well-balanced, iconic whiskey. The component whiskeys are aged up to 20 years, making the final blend significantly more elegant.
This is an ester-forward bourbon with the brooding depth of cabernet and port casks. The varied distillates and casks come together into a complex palate that showcases the cola notes of whiskey that’s spent many years in oak.

Stellum Bourbon finds its flavor in the tension of three Indiana Bourbon mash bills, two of which are high-rye, with the third being almost exclusively corn. Older barrels from both Kentucky and Tennessee are folded in slowly, through a multi-step blending process. Vantage is a blend of straight bourbons finished in three distinct expressions of virgin oak: Mizunara, French, and toasted American oak casks. The result is a warm, elegant bourbon that highlights the many dimensions of oak.
The unique aspects of each wood and treatment are layered atop one another, precluding the singular taste of oak. The nose is creamy, spicy, and resinous, and the palate is richly textured and oily, soaked with barrel influence.

Batch 032 began with a balance of two sets of barrels: a selection of 5 and 6-year-old barrels with a creamy and tropical profile and a selection of 6, 7 and 10-year-old barrels vatted for their complex, old, woody character. These two sets of barrels were slowly blended over three months. A small group of spice driven 7-year-old barrels with notes of cinnamon toast, coffee bean and chocolate were then carefully added to complete the blend. The result is a decadent and rich bourbon with layers of spice and nuttiness.

Brian Heese joined Barrell Craft Spirits as a Brand Development Manager in September 2021, covering the state of Michigan. He has since relocated to New York City to continue his good work on Barrell in the Big Apple. Before Barrell, Brian most recently worked on and off premise at Rabbit Hole Distillery as a National Brand Ambassador; focused primarily on selling in Michigan and a few other markets. Previously, Brian worked as a Beverage Director for a luxury and fine dining hotel/restaurant in Omaha, Nebraska.
When Brian isn’t selling whiskey, he’s very competitive when it comes to Chicago sports. He loves the Cubs, Bears, and Bulls.
