Kenny Mattingly makes an unusual blue cheese: Bleu Gouda. Beginning with the same washed-curd recipe that gives Gouda it's smooth texture and mellow flavor, he adds blue mold culture. After several days he "needles" the cheese to allow air into the paste. While delicate interior veining is apparent, the cheese maintains it's Gouda sweetness and nutty qualities, blended with a slightly moist, tangy blue sharpness. The Bleu Gouda is an innovative adaptation to a traditional cheese using American creativity.
Perfect on its own, drizzled with Sweet Sophie Maple Syrup, or on salads.
