Taleggio is a pungent cow's milk cheese from the Lombardy region of Italy. The cheese is cave aged and becomes quite tangy. It is thought that this may be one of the oldest soft cheeses. The cheese has a strong aroma but the flavor is fairly mild. Made from local cow’s milk, Taleggio uses five different types of mold to produce the red smear that gives it its unique look and flavor. Soft tones of fruit play in tune with a composition of mild and buttery notes, finishing with a tangy aftertaste that lingers on your palate. Pair with white or red Burgundy, Barbaresco or even a rich Chardonnay. Fantastic on a cheese board or melted into a rich sauce.
