I had the pleasure of taking a tour of Perennial Artisan Ales today. Perennial looks to be the next St. Louis brewery to release beer out into the market. The bottling system is getting ready to be set up, bottles are on order and kegs are ready to be filled. We are hoping to have Perennial beer on the shelves of The Wine and Cheese Place in mid September (yes, that is only about 3 weeks away!)
Here is the outside of the building which was once an old Coca Cola syrup plant. Phil Wymore, co-owner and head brewer, took me for a tour of the new brewery which smells of beer brewing. Beer is in the air!! Phil worked for two famous Chicago Breweries -- he was the head brewer of Half Acre Brewing and he was the Cellar Manager at Goose Island Brewing.

Cory King brewing away...
Some kegs ready to fill....
The bottling system - their beers will be bottled in 750ml bottles.
With plans of a canning line in the future.
Beautiful palate of hops-
The bar and tasting room....
The bar front is made from old cork and wood floor boards
The bar will have 8 draft handles and will feature a few "guest" brews.

THE BEER
The beers we expect to see from Perennial are guaranteed to be some of the most diverse.
I got a chance to taste a few beers they are working on including a Cardamom Peach Ale and the Mexican Chocolate Stout (from The Create a Perennial Beer Contest - read more)
This is the 11% Mexican Chocolate Stout I was enjoying
Just listening to some of the ingredients that Phil is planning for their beers is incredible. Ingredients that I would never have guessed you would use in a beer. I don't want to spoil all of their surprises, but here are the first beers we will see bottled as the labels have already been approved.
We cannot wait to see these beers here on our shelves at The Wine and Cheese Place!!!
"Our first brews on this system will include: Hommel Bier (a dry-hopped Belgian Pale Ale), South Side Blonde (a Belgian Blonde Ale), Strawberry Rhubarb Tart (a Witbier with strawberries, rhubarb stalks, and Indian coriander), Saison de Lis (a Saison brewed with chamomile flowers), and Heart of Gold (a big 10% ABV Wheat Wine)." - Perennial Website
