One night in late 2012, over dinner at a Bond Street restaurant in Bend, Oregon, home of Bendistillery, a discussion ensued regarding the emergence of the American "Craft" distillery. When Bendistillery came on the scene in 1995, there were less than 10 "Craft" distilleries in the United States. At the end of 2011 there were 234. It should come as no surprise that Bendistillery is the most award winning "craft" distillery in the United States. So later that evening when we asked Jim Bendis, founder and master distiller at Bendistillery, to produce an ultra-premium, American-craft, London-style, dry gin, we had no doubt it would be world-class.
