During bottling, a small quantity of sugar and yeast is added to the beer, which, placed in a hot room, causes refermentation in the bottle that gives it a natural cloudiness and a particularly high alcohol content of 13%.The old-style maturation, in oak barrels, enables the drinker to fine aromas and tannins absent in beers for decades that will delight the most demanding palates. La Trappe Quadrupel Trappist beer is the heaviest beer of La Trappe with a beautiful amber colour. The warm taste is full and well balanced. Slightly sweet and pleasantly bitter.

Oak Aged
In 2009, Beerbrewery the Koningshoeven decided to restore an old tradition and started to mature La Trappe Quadrupel in barriques (wooden barrels). This traditional way of aging in wooden barrels got more and more into the background in the 20st century. Koningshoeven thought 2010 was the right time for this tradition to be picked up again. Maturing the beer for about 12 months on the wooden barrels creates a unique, complex flavour. The taste varies by the type of barrel that is used.
This beer can be stored for many years and is a treat for the true beer lover. The full, complex flavour with many types of tannin, however, will also surprise many wine drinkers!

Types of barrels
We use different types of barrels, both new and used. The new barrels provide tannins, vanilla and almond associations. The used barrels provide an interesting taste combination which varies according to what fluid the barrels originally were filled with. The first filling / batch of Quadrupel Oak Aged is available from June 18, 2010. The batchnumber is stated on the back label.

"The nose has an intense lilac quality dancing gently around a blue fruit, roasted meat and blood core. Think of a rosemary, lavender, black pepper and garlic encrusted beef roast. There is a cinnamon stick (cassia) quality in the nose as well. The mouth is full and supported by blue and black fruits with the sanguine blood and iron qualities providing ballast. It is what makes this Syrah so special; it has the depth and concentration of fruit so hard to find in northern Rhône Syrah without sacrificing balance, acidity and the secondary aromas of blood, meat and white pepper common to those wines. It has power and finesse. We suggest you decant before enjoying. It should evolve for at least 10+ years." -- Peay

"The nose is quite intense with dried rose petals enveloping a Serrano ham and red berry core. The mouth emphasizes the cured meat, brass and berry aromas adding cherry pipe tobacco, tea, forest floor and cedar notes in the mid-palate. The wine evolves over the 30 minutes in the glass and continues to reveal new aromas including black licorice, cranberry, and sanguine notes. The finish is clean due to very good acidity and lingers for an astonishing amount of time. Although young, the Pomarium is ready to drink now with a decant but we suggest aging it for at least 3 years and holding for 15-20 as it has the tannins, acidity and balance to flourish over time." -- Peay

2009 Peay Estate Pinot Noir.....$35
"The 2009 Sonoma Coast Pinot noir is comprised of 70% estate fruit and 30% purchased fruit. While lacking a little of the depth of the Pomarium, the Sonoma Coast Pinot noir is a serious wine and definitely not a slouch. The nose is quite exotic, lifted and pretty with dried orange peel accenting cherry skin and dried pine needle aromas. The cherry and tea flavors are kept in focus by medium plus acidity resulting in quite a well-balanced wine. The length is surprising for a wine at this price point and along with the good acidity, present tannins and low alcohol bodes well for aging potential." -- Peay

"The Sonoma Coast Chardonnay is a blend of 60% estate fruit with 40% sourced fruit from Hirsch and Campbell vineyards. The nose reveals the wine’s youth and promise displaying aromas of dried pineapple, kiwi, lemon and limestone. The mouth bursts with strong mineral, ginger snap and apple flavors kept taut and focused by quite high, racy acidity. The finish has a biscuit, leesy finish that will become more pronounced as the wine ages and the fruit subsides. The Sonoma Coast is delicious and has all the qualities to age 3-5+ years but can be enjoyed upon release." -- Peay

The 2007 Cabernet Sauvignon is a gorgeous example of elegance allied to power. The final blend of 85% Cabernet Sauvignon and the rest Merlot, Petit Verdot, and Cabernet Franc offers up notes of crushed rock, spring flowers, red and black currants, and plum as well as hints of white chocolate and subtle barrique smells. Medium to full-bodied, with a nicely layered mouthfeel that builds incrementally, the wine has superb purity as well as accessability. It can be drunk now or cellared for 15 or more years.

Still, it’s impossible to deny the wine’s personality and class. This is a great effort from Zenato. Anticipated maturity: 2016-2026."

A great wine in the making, the 2007 Cabernet Sauvignon Estate (just under 10,000 cases produced) possesses a fragrant bouquet of sweet black currants, crushed rocks, earth and background oak. Full-bodied and dense, with Montelena’s typical power, tannin and reserved nature, this is a big, rich, formidably endowed red that requires 4-5 years of cellaring. That in itself is atypical of this exuberant, flamboyant vintage. Given this cuvee’s past history, this 2007 should age for 30+ years.

Dark ruby with a nice tannic overlay, the wine was aged 15 months in American oak. Spicy, impressively rich, with good acids and loads of concentration, this is a beauty to drink over the next 5-7 years.

“First brewed in the 1980s as a special beer for the BrewPub at BridgePort, Highland Ambush is making its triumphant return more than 20 years later. Stuart MacLean Ramsay, then pub manager, conceptualized the brew to pay homage to his Scottish heritage. This year’s Highland Ambush takes inspiration from the original ale using NW pale ale malt along with a Scottish crystal and roast malt. The hopping rate of Highland Ambush has been toned down to help highlight the complementing vanilla from the American oak bourbon barrels and caramel-toffee malt nuances. Reddish-Brown in color, Highland Ambush will warm the coldest of toes and noses this holiday season.

They are also started a Minnesota page since they are going there also. Right now Missouri has 297 fans on the Stone Brewing in Missouri page and Minnesota has 294 -- we need to stay ahead of Minnesota!!

Join us each Saturday at our Cheese Counter and taste the weekly pick of a cheese paired with a wine and a beer*. Each Saturday we will feature a cheese in our award winning cheese department at all 3 TWCP locations and have a wine and beer to taste that we feel is a great match.

It will be fun and informal just come in for a taste at the Cheese Counter.

Pairing cheese with wine or beer is an age old excercise and everybody has an opinion. First of all, there are no wrong answers. It is all about what you like. There is no sense in buying a cheese that you don't like because "an expert" said that it is the best match. The perfect match is the wine/beer you like and the cheese you like! But we will hope to give you a few guidelines and ideas to start your journey through the matching process. Join us each week for a new match.
