The ageing process plays a significant role in the maturation of fine single malt Scotch whiskies. Every distillery is different. Its location. Its water source. Its still shape. Its wood policy. In fact, there are a myriad of variables. With Balblair we go one step further. Our Vintage whiskies are hand–picked, specially selected 'years' that represent the very best whisky the distillery has to offer.
Every year our Distillery Manager, John MacDonald selects only those whiskies that have reached their exact point of 'optimum maturation', the absolute peak of perfection.
The casks not selected, are simply not chosen because they have not yet reached their absolute best. They are left to quietly mature further in our warehouse.

In order to avoid confusion with a similarly named single malt, Knockando, the decision was made in 2000 to change the brand name to anCnoc, pronounced a-nock.
This is a Gaelic word meaning 'the hill'. This bestowed upon the whisky the rather intriguing distinction of no longer being named after the distillery which produces it.
