The 2006 Domaine Costal Chablis “Les Truffières” is an excellent example of Chardonnay grown in the typical kimmeridgian clay/marine fossil soil of the appellation. The name “Truffières” comes from an essence of truffles that you can find on the nose despite the fact that there are no actual truffles in Chablis. Vinified in no wood whatsoever, this Chablis smells incredibly fresh and fragrant, with a crisp, lingering finish. "Montanet’s 2007 Bourgogne Vezelay La Chatelaine – the latest installment of what has become a consistently excellent value in white Burgundy – emphasizes the saline, chalky, lemony aspects of its vintage and terroir, but intriguing suggestions of herbed chicken stock and shrimp shell reduction emerge, especially as one matches this with a wide range of cuisine. There have been richer and more concentrated vintages of this wine, but the clarity and sheer lip-smacking refreshment of this 2007 are hard to beat for the price, and should remain accessible for at least 2-3 years.
