Lambic Beer
Lambics are the oldest continuously brewed style of beer in the world. Their distinctive flavor is the result of “spontaneous fermentation” – utilizing the wild yeasts and microflora in the natural environment. To earn the appellation “lambic” this process must occur at one of a handful of peer-recognized breweries in Belgium’s Senne River Valley, all of whom follow traditional methods.

De Troch releases their output exclusively under the brand name Chapeau, offering the most extensive and diverse selection of fruit lambics, including flavors such as Banana and the pineapple juice flavored Exotic, alongside the classic cherry-fruited Kriek and other traditional fruit blends.

Marko has bottled first release of R5 C Whiskey in 'Clear' and 'Aged'...

The beer is distilled in double copper alambic charentais pots 24 hours a day for nine days straight before being aged for 22 months in French Oak. The result offers a definite whiskey taste profile with clear notes of hops, fruit, and malt when sipped. Distiller Marko Karakasevic, who started such experimentation with a pilsner-fueled light whiskey for Charbay nearly fourteen years ago, says he used 6,000 gallons of Racer 5 to produce 590 gallons of the spirit.

Bear Republic's Racer 5 IPA Becomes a Whiskey

Drink.Eat.Play's cocktail classic was staged last Friday in Downtown L.A., giving...attendees a glimpse at newfangled spirits like Douglas Fir eau de vie, Death's Door white whiskey, and vermouths aspiring to greater peaks through ever-stranger infusions of botanicals.

But what really blew our minds was the ground-breaking meld of craft beer and whiskey in what St. Helena's coveted Charbay distillery calls its "hop whiskey." The product, which will soon see release under the name "R5 Aged Whiskey," is basically whiskey made through the distillation of, not of grain nor fruit, but Healdsburg-based Bear Republic's famed Racer 5 IPA. 

Karakasevic is also working on a version using Bear Republic's stout, and is releasing a new tequila under the name Tapatio (unfortunately, without Tapatio hot sauce) and vodkas infused with blood orange and Meyer lemon.

The biggest challenge will most likely not be in handling this 99-proof R5 Aged, but of course, finding it.
  • Tasting Notes: Look for the green spicy aromas with hop and malt tones followed by flavors of tropical fruit like lychee, dried papaya and stone fruit. A certain freshness, almost beer like taste - but it's whiskey and smooth to sip.
  • Serving Suggestions: Enjoy room temperature neat, with a splash of spring water or a spring water ice cube. What's really neat is to pour a glass of Racer 5 beer beside a shot of R5 Whiskey Clear and R5 Whiskey Aged. Taste the progression of all the flavors so you can see how they evolve and follow through. And the cocktail ideas are just starting to pour in...

Glenfiddich's sixth Malt Master, Brian Kinsman, continues our tradition of innovation with his latest creation. The Malt Master's Edition is matured twice, each time for a number of years, in two separate casks consecutively. First the whisky is aged in traditional oak for a period of years then in the highest quality sherry casks for its final years of maturation. This creates a rich, complex whisky with flavors imparted from both woods.

This labor-intensive process differs from finishing in that there is a balance of maturation for several years in two distinct woods, not long-term aging in one type of wood followed by a short period spent in another.

Bourbon  Collection from Buffalo Trace Distillery is an extraordinary barrel proof, uncut,
unfiltered rye recipe bourbon.

Weighing in at a hefty 134.5 proof, this small batch bourbon was aged for seven years on the sixth floor of Buffalo Trace's Warehouse C, built by Colonel Taylor in 1881.
When your [sic] experience this uncut and unfiltered Bourbon, "an aroma of cooked, berries meets the nose, followed by a rich caramel and slightly floral smell.  The taste is bold -- the finish is long and satisfying with a powerful rye character and lingering hints of fruit......"

Colonel E.H. Taylor Single Barrel...$56.99 / 750ml

Colonel Taylor is widely considered one of the founding fathers of the bourbon industry, fighting for the Bottled-in-Bond Act of 1897, nearly three decades after he purchased the now Buffalo Trace Distillery. During his time, Taylor implemented several innovative methods still used today, such as climate controlled aging warehouses. In addition to his bourbon interests, Taylor had political ties. He was the great-nephew of President Zachary Taylor and elected the mayor of Frankfort, state representative to the Kentucky General Assembly and a member of the State Senate.

E.H. Taylor Single Barrel is aged exclusively in Warehouse C, which was built by Taylor in 1881 and proven to be an excellent aging warehouse. This bourbon whiskey is very delicate. The aroma carries lightly toasted oak, with dried figs and butterscotch. The sweetness on the tongue remains balanced with tobacco and dark spices that finish just long enough to prepare the palette for another sip. The bottle itself replicates Colonel Taylor's original design used over a century ago.
