The Markut name was changed back to a previous old World spelling "Marcoot". We know for certain by the mid-1800's our ancestors had Jersey cattle because we have dated "Marcoot Jersey Farm" letterhead. Seven generations of the family have raised Jersey cattle.....The cheese is made solely from the milk of our own Registered Jersey, grassfed cattle.  The 60 milking Jersey cows enjoy pasturing on the paddocks of a variety of grasses to provide abundant natural nutrition.  No hormones are given to the cattle.  Homeopathic remedies are the first line of defense when necessary

Rachel Barrie - Mini Bio
Whiskey Creator & Master Blender As Glenmorangie Whisky Creator and Master Blender, Rachel Barrie is one of a small number of female Scotch whisky experts and master blenders, and as such she is often regarded as an inspiration to women in traditionally male-dominated industries. Rachel started her career in 1991 at the Scotch Whisky Research Institute, where she was the only female scientist in the maturation and blending department. She was part of a team who carried out extensive work on developing the ideal ex-bourbon cask for whisky maturation, and also researched air-seasoned versus kiln-dried wood. Some of these findings were adopted by Glenmorangie, which further developed this area leading to the development of the company’s famous wood management policy, which uses slow growth, air-seasoned oak from the Ozark Mountains. In 1995 Rachel joined The Glenmorangie Company as Lab Manager, and over the past 12 years, has established the on-site sensory laboratory, created the sensory panel (composed of 50 employees, identified and trained by Rachel, who are vital in conducting taste studies on the company’s whiskies), analysed the Ardbeg whisky and stock profile, and has been at the forefront of the development of many of the company’s product innovations.

We have found them with Dry Dock Farms. Dry Dock Farms has all free range Heritage Breed chickens. Tomorrow we are getting our first batch, it will be an assortment of heritage breeds. Once you try these farm fresh eggs, you will not be able to go back to the "grocery" store mass produced eggs. The flavor is so much fresher and richer. What is Heritage Breed? Basically many of these "heritage" breeds of chickens (and other animals) were becoming threatened because the large egg producers were favoring chickens that produced a quantity of eggs and not quality. To quote The American Livestock Breeds Conservancy (ALBC), "Modern food production now favors the use of a few highly specialized breeds selected for maximum output in a controlled environment. Many traditional livestock breeds have lost popularity and are threatened with extinction. These traditional breeds are an essential part of the American agricultural inheritance." Some of the Heritage breeds that Dry Dock has includes: Ameraucana Chickens - "Easter Egg Chicken" -- produces blue and green eggs Barred Plymouth Rock Chickens -- Brown Eggs - pre-World War II - this was the most popular and most likely the eggs being eaten. The Great Warehouse Collapse of 2010

Glenfiddich Snow Phoenix commemorates a moment of drama in the long history of The Glenfiddich Distillery. It all began in December 2009 when it started to snow - it kept snowing for several months. After weeks of record low temperatures and alternate freezing and thawing there were four feet of densely compacted snow on the distillery roofs. On the evening of Thursday 7th January, in the most remote part of the snow covered distillery, some of our warehouse roofs collapsed, ripped open by the sheer weight of snow, leaving maturing oak casks of Glenfiddich exposed to the winter sky. It was as if some of the distillery angels had finished their 'share' and had come back looking for more.

In all 4 roofs collapsed and several more were badly damaged. The distillery engineers calculated that there were 400 kilograms of snow on every square metre of warehouse roof - the equivalent of a herd of elephants standing on top of each warehouse. The Glenfiddich Distillery team immediately swung into action - working around the clock to clear snow from the distillery and neighbouring warehouses to make everything safe. Enduring temperatures as low as -19°C (-2°F) they could only work for a few hours in the bitter cold before having to go indoors to thaw out. Before the rebuilding of the warehouses could start, all the casks of maturing Glenfiddich had to be moved to other secure places where they could continue their maturation undisturbed. I came to see the warehouses for myself and standing amongst the wreckage decided to create a special Glenfiddich whisky to mark this moment in the distillery's history and recognise the fantastic and difficult work carried out by the distillery team.

To create this whisky I selected the finest casks from the snow damaged warehouses – marrying together different ages of mature Glenfiddich – some very old. Some of these casks had previously held Oloroso sherry and others were traditional whisky casks made of American oak. Each one was specially chosen to make a unique contribution to the taste and aroma of the final whisky. We have called it Snow Phoenix - a great Glenfiddich Single Malt born of chance and adversity. It is a limited edition, one of a kind and will only be bottled in 2010
