Warm Farro Salad with Smoked Salmon and Goat Cheese
Thanks to the wonders of the internet I found this great recipe featuring some of my favorite ingredients. Healthy, easy and tasty, give it a try.
Ingredients:
- 1 cup farro grains ***
- 2 cups baby spinach
- 4 carrots, peeled and chopped
- 8 oz smoked salmon, chopped ***
- 3 tbsp goat cheese ***
- 1 lemon
- 3 tbsp extra-virgin olive oil ***
- 1 bunch parsley, chopped
- Salt and pepper to taste ***

Directions:
Cook the farro in a pot of abundant boiling water according to the package directions (mine took 10 minutes). Combine the spinach, carrots, and smoked salmon in a large salad bowl. When the farro is ready, strain in a colander and place directly in the salad mixture while still steaming. Dress the salad with the lemon and olive oil and add salt and pepper to taste. Toss to combine and plate immediately, then top each dish with goat cheese crumbles and parsley.
