brouwerij west is excited to announce the release of our Saison Extra in 500 ml bottles. As always, we use only imported belgian malt, german noble hops and our brouwerij west yeast.
We chose not to duplicate the standard "peppery/spicy" saison profile and instead go after bubble gum esters and noble hop aroma. Extra is Bright and malty, with a firm bitterness and a dry finish. Hazy gold in color.
6.5% ALC/VOL and of course no spices added.

About our Labels
We have chosen to take a step away from typical marketing and we move instead toward real art by asking artists to use the space on the label as they choose. All art and concept is up to the artist. 
In addition, we are limiting the artwork to a specific edition number with each bottle numbered on the side. The total number of the edition is next to this number. When the edition is finished, we will move on to a new art work and label.
You can find the name and contact of the artist on the side of the label next to the edition numbers.
We will most definitely have a 2nd and 3rd edition of the labels sometime in the future.

This week's recipe



Camargue Red Rice Salad:

While best known for it’s hearty Cassoulet, a duck, sausage and white bean stew, the cuisine of France’s Languedoc region does have a lighter side. For this week’s recipe we are using Camargue Red Rice as the base of a wonderful quick and easy Spring Rice Salad.

Ingredients: 


  • 1 Cup Riz Rouge Camargue Red Rice Blend ***
  • 2 Cups Water or Chicken Stock
  • 1 Can Roland White Asparagus Spears (chopped into ¼ inch pieces) ***
  • 1 Package Cole’s Smoked Portuguese Sardines (roughly chopped) ***
  • 1 English Seedless Cucumber (peeled and diced)
  • 1 Batch Parsley Vinaigrette (blend together the following ingredients together in a food processor )
  • 2 cups (packed) flat-leaf parsley (leaves and stems)
  • 1/2 cup olive oil  ***
  • 3 tablespoons fresh lemon juice
  • 1/2 tablespoon Champagne vinegar  ***
  • 1 garlic clove, crushed
  • Kosher salt and freshly ground black pepper

Assembly:
Add Riz Rouge Rice Blend to boiling stock, cover and simmer for 25 Minutes. Drain rice and let cool while making the Parsley Vinaigrette. Once rice is cool combine with vinaigrette, asparagus, cucumber and sardines, toss gently until mixed. Serves 2 as a dinner salad or 4 as a side.

In 1858, Martin Belot - a farmer in the village of Purnode, Belgium - began to brew beer during the winter months: there was an excellent well near the farm, and brewing was the perfect activity for winter, when there was little work in the fields. A wide range of different beers was offered, and sales in the the area around the brewery grew.

In 1960, farming ceased at Du Bocq so the family could concentrate only on brewing; a focus on traditional, bottle-conditioned Belgian ales led to continued growth. Du Bocq Brewery modernized their brewing equipment and began to export select styles from Belgium in 1983. Upgrades and improvements have continued at the brewery to the present, but always with careful attention to the brewery's history and to the classic flavors found in their beers.

The brewery is still owned by descendants of the original family, and has acheived an international reputation for quality. To this day, the village of Purnode and the surrounding region of Condroz retain their beauty and traditions, allowing Du Bocq to continue to help build Belgian brewing history.

Longtime friends George Clooney, Rande Gerber, and Mike Meldman love tequila. On the rocks, by the shot, at times, straight from the bottle. Tequila-filled nights with friends is how Casamigos was born. Their idea was to make the best-tasting, smoothest tequila whose taste didn't have to be covered up with salt or lime. So they did.

“Casamigos Reposado is smooth and clean with hints of caramel, while Casamigos Blanco is crisp and clear, with subtle hints of vanilla and a smooth finish. Both are great served neat or on the rocks, and are the perfect base for premium cocktails,” says Gerber.

Our Blanco tequila is distilled in copper-lined stills, then filtered, and aged two months in stainless steel containers.

Our Reposado tequila is aged for seven months in American white oak casks that have been reconditioned after originally being used for premium-aged whiskey.

To give each tequila its special flavor profile and ensure the finest quality, we use old-style copper-lined pot stills for distillation.
The unique flavor and profile of Casamigos Tequila comes from our extra-slow fermentation process, which takes 80 hours to complete (and is double the industry standard). Another special feature of the fermentation process is the use of bagasse from our agave, which results in a deep, rich flavor, and produces a tequila that is smooth with no burn.

The Wine and Cheese Place is excited to stock the eighth Trappist Ale -- Stift Engelszell

Stift Engelszell is even more rare than Westvleteren because their production is less than half of Westvleteren.    Stift Engelszell only has a capacity of 53,000 gallons and Westvleteren produces 125,000 gallons.


Up until recently, there were only 7 breweries allowed to carry the Trappist logo...well there is now a number EIGHT!




These criteria must be followed:
**The beer must be brewed within the walls of a Trappist abbey, by or under control of Trappist monks.
**The brewery, the choices of brewing, and the commercial orientations must obviously depend on the monastic community.
**The economic purpose of the brewery must be directed toward assistance and not toward financial profit.
This association has a legal standing, and its logo gives to the consumer some information and guarantees about the produce.

Appellation Highlights:
Minervois: Since being granted AC status in 1985 Minervois has consistently been a source of amazing Red Wine values. Located directly North of the Corbiers within the Cote de Rousillon, inland from the Mediteranean Sea, Minervois has a wonderful climate to grow the main Mediterranean Varietals of Grenache, Syrah and Mourvedre but in fact focuses on Carignan as it’s flagship varietal. 

Come taste what makes the wines of Minervois so appealing this weekend at all 4 Wine and Cheese Place Locations.

2011 Domaine Aime Minervois….$13.99
Rémi’s Minervois is a blend of 70% Carignan, and 30% Syrah, which is an unusually high percentage of Carignan for a Minervois. However, this unique blend seems to add a lot of depth and character to the wine. This is thanks, in part, to the age of his Carignan vines, which are 60 years old. The grapes are sustainably farmed, 100% destemmed, crushed, and vinified using indigenous yeasts. This wine is fermented and aged exclusively in tank.

2009 Domaine Gros and Tollot Minervois La Ciaude…$29.99
This cuvée is made of 4 grape varieties, coming from soils dominated by Assignan sandstone, which face north and west. These small plots, surrounded by scrubland, pine trees, thyme, rosemary and cistus, comprised of: 20 year old Grenache,, 20 year old Syrah, year old Carignan, 40 year old Cinsault. "Milk stout, also called ‘cream’ or ‘sweet’ stout, is a stout containing lactose, a sugar derived from milk. Because lactose is unfermentable by beer yeast, it adds sweetness and body to the finished beer. Milk stouts have been claimed to be nutritious, and were marketed as such in the early 1900s with claims that would make the FDA wince. One ad read, “Ideal for nursing mothers, for the
