Introducing the Theodore Rex Ozark Highlands Bourbon Series

Exciting announcement!  More details coming!

PEOPLE         LAND        PURPOSE

Introducing the Theodore Rex Ozark Highlands Whiskey Series. The Wine & Cheese Place is proud to introduce a first of its kind project in partnership with Demetrius Cain and Nobletons Distilling House. The Theodore Rex Ozark Highlands Whiskey Series is an annual selection of four single barrel whiskeys released to coincide with the changing seasons, and a fifth barreling comprising a blend of the four seasonal single barrels. The annual lineup will include: “Planting Season” (Spring), “Summer Solstice” (Summer), “The Harvester” (Autumn), “Orion’s Journey” (Winter) and “Celebration” (Holiday Blend). Ozark Highlands whiskeys have been distilled in Missouri for over 200 years, and finally won official designation in 2022 in an effort led by Demetrius. The Theodore Rex series honors the rich legacy this historic American spirit by allowing our patrons to taste its nuances through different barrelings and mash bills over the span of years.

A release date for the 2024 Planting Season bottling—which is a bourbon—will be announced shortly

Demetrius will help us launch the project at a bottle signing event, limited to 45 guests (one bottle per guest).  Please watch our announcements for the ticket release dates and details.  A small number of bottles will be available on the bar menu of Bulrush, a James Beard nominated restaurant in St. Louis city that focuses on Ozark cuisine.  All remaining bottles will be offered via our rewards club.

About The Theodore Rex Line of Wines, Spirits and Craft Beers from The Wine & Cheese Place

Our Theodore Rex offerings represent the best of the craftspeople who make them and the land from where they come.  We launched the concept with a Pinot Noir by famed winemaker Adam Lee featuring Sonoma Coast fruit.  We are following this up with Theodore Rex Ozark Highlands Bourbon as well as two craft beer releases and a Chardonnay due later in 2024.  The Theodore Rex mission is simple: people, land, purpose.

Chateau Potensac Medoc

2019 Chateau Potensac Medoc....$31.99
Bright, with crushed-stone and floral character on the nose. Medium body with a firm core, expanding through the palate. Vivid and bright. Lots of good energy. Crushed-stone and lightly chalky character at the end. Needs two or three years to come around
Rated 94/100 James Suckling
Purity, precision and energy here, fresh and juicy and full of life on the palate with creamy-edged ripe, red fruits. Lovely power, with a clear Pauillac-like tannic structure but mouthfeel that is silky and smooth. A fresh mineral finish leaves the palate nicely cooled. A top buy.
Rated 94/100 Decanter Magazine
Lots of black cherries, currants, ripe tobacco, and cedar notes emerge from the 2019 Château Potensac, a medium-bodied, concentrated, beautifully pure, elegant Médoc that's well worth seeking out. It's going to continue to drink nicely for 10-15 years.
Rated 92/100 Jeb Dunnuck
Always a dependable bottling, the 2019 Potensac opens in the glass with aromas of dark berries, cherries and pencil shavings. Medium to full-bodied, fleshy and nicely concentrated, with lively acids and powdery tannins, the vintage has made for an unusually polished Potensac that will offer a broad drinking window.

Amazing single vineyard Macon!!!
2022 Les Gentilhommes Macon Peronne....$26.99
100 % Chardonnay -- Single Vineyard from the heart of the Macon
This single-vineyard Chardonnay is produced in the village of Péronne, in the heart of the Maconnais region in Burgundy, from 40 year-old vines planted on the limestone based soils of the Mount Epin. A beautiful golden color with green reflections, delicate toasty notes and attractive aromas of citrus and ripe summer fruits combine with floral and honey nuances that are typical of the old vines. Fresh, ample and full-bodied on the palate, the wine is perfect by itself as an aperitif and delicious during the meal.

Great Value in White Burgundy!
2022 Tramier & Fils Macon Villages...$26.99
100% Chardonnay from Burgundy
Ripe fruit and flowery nose. On the palate, it begins with smooth yet sharp aromas of grapefruit and lemon followed by a rich texture giving place to hints of honey and white flowers. The finish is long thanks to good acidity levels
This wine pairs nicely with smoked salmon, mixed salads, sushis, poultry and veal in cream sauce, creamy risotto, and goat cheeses. Just south of the Burgundy region, the Chardonnay benefits from great exposure to sun throughout the growing season. Once the fermentation is over, the wine is aged in oak for a couple of months to add flavor and complexity.

2023 Comte de Langeron Coteaux Bourguignons Blanc...$25.99
  • 90% Chardonnay
  • 10% Aligote
A blend of Chardonnay and Aligoté of which most is matured in stainless steel. It has a great Burgundy nose with a touch of minerality that comes from the Aligote. Great flavors of tart apples and a steely acidity finishes off this great wine. Highly recommended and very limited production
Nice pale robe, the nose is discreet yet intense with hints of white flower and honey. The wine expresses minerality and length on the palate with a nice balance of acidity on the finish.
This wine is a free blend of the two main white varietals of Burgundy: Chardonnay and Aligoté. The berries are sourced from different parts of the Burgundy region characterized by a large variety of different soils. Both grapes are vinified separately and blended before bottling, which gives them more control on the typicity of this wine. This is a great aperitif wine but it also pairs well with pasta, cured meats, pork, chicken, rich fish like salmon and tuna as well as soft, mild cheeses.

2022 Damien Martin Saint Veran...$26.99
100% Estate Grown Chardonnay

Full malolactic and 6 months on the lees to add richness and complexity
Pure, clean orchard and tropical fruits, spice, crushed stone, and white flower notes all emerge from the 2022 Saint Véran, a medium-bodied, clean, incredibly classy, balanced Saint Véran that has good mid-palate density, integrated acidity, and outstanding length
Rated 91/100 Jeb Dunnuck

2022 Damien Martin Bourgogne Blanc...$19.99
Bright citrus, orange blossom, honeyed flowers, and a kiss of minerality all emerge from the 2022 Bourgogne Blanc, a clean, medium-bodied, vibrant, refreshingly crisp white revealing outstanding length as well as a touch of salinity on the finish. Drink bottles over the coming 3-5 years, if not longer.
Rated 90/100 Jeb Dunnuck

2022 Heritiers du Comte Lafon Macon Chardonnay Clos de la Crochette...$39.99
The 2022 Mâcon-Chardonnay Clos de la Crochette has a quite backward nose that needs more tension. The palate is well-balanced with fine acidity, much more expressive than the aromatics, with a peachy, seductive finish. Lovely. But the nose needs to step up a gear
Rated 90/100 Vinous Media

New Batch of Tears of Llorona Tequila Anejo

Tears of Llorona Extra Anejo...$249.99 / 1L
Requiring a careful combination of patience, care, and love, the process of creating Tears of Llorona starts with 100% pure Weber Agave Azul grown in the volcanic slopes of the Mexican highlands, where agaves grow slowly and naturally to achieve a higher starch content. Germán personally inspects each plant before harvesting and then slow-roasts the piñas the traditional way before fermenting using a proprietary yeast.
The fermented mosto, or must, is then distilled twice in traditional copper pot stills and aged in three distinct types of oak barrels— Scotch, Sherry Oak, and Brandy — for five years, which is two years longer than most traditional extra añejos.
Aged for five years in three types of barrels, including scotch, brandy, and Sherry oak barrels, Tears of Llorona is then masterfully blended by Germán, delivering a layered tasting experience with a complexity of flavors. Germán then bottles at 43% specific gravity to balance the flavors. This slow, hand-crafted process results in a very high rate of osmotic loss, known as the “angels’ tears”; another reason for the name, Tears of Llorona.
AROMA: Caramel custard, dried fruit, and dark chocolate
TASTE: Agave with a heady spiciness and complexity for experienced palates
FINISH: Described best as "a warm scarf on a cold day."

Ok, that is a mouthful. Just let the bottle do the talking.

A long lingering finish carries the theme of the wood, spice and toffee right through to the end.
