As before the release will be based heavily on Perennial support starting from November 1st, 2021 until the release.  We will announce that date when we know.

**Single Barrel #7 Released March 4th, 2022**


    The Bottled-in-Bond Act, signed into US Federal law on March 3rd, 1897 was the precursor to the Pure Food and Drug Act nine years later. The BIB Act was a statement of quality and authenticity. The spirit in that bottle had been produced at one distillery, in one season, aged at least four years and bottled at exactly 100proof. (this barrel is over seven years old!)

    We start this whiskey off using 100% sorghum we get locally from a farm in Sikeston, MO. Double distilled and aged in new oak barrels for over seven years, the sweet, rum-like notes of sorghum make this whiskey exceptional. Let the hints of fig and spice take you back to a time gone by, the age of the paddleboat and pioneer; back to Twain’s St. Louis. High society, gamblers, fine ladies, river rats… imagine yourself along with them floating up the Mississippi River in style on the luxurious S. S. Sorghum Whiskey paddleboat… enjoy Sidni’s Sweet Sorghum Whiskey!

Aged over SEVEN years, this incredibly complex whiskey is truly unique.

Tasting Notes: Sweet, baking spices meander on the nose. The palate is rich and complex, with rum-like notes of dark fruit and cinnamon, oak, vanilla, pie dough, molasses, and plums.

Bringing Bourbon back to Bourbon County

    Prohibition took a toll on many things- agriculture, industry, economy. Prior to the instatement of The National Prohibition Act in 1919, there were at least 26 active distilleries in Bourbon County, Kentucky. After Prohibition, none of them reopened. Hartfield and Company is the first and only Bourbon Distillery in Bourbon County since those times, first opening in 2014, it has become our passion to preserve tradition, and carry on a legacy that has remained dormant for far too long.

    Our Bourbon Whiskey is made from 62% Corn, 19% Rye, 19% Malted Barley. Most mashbills use somewhere between 5-7% Malted Barley. By pushing ours to 19%, it brings in some smoke, leather and deep tobacco notes into a what is a traditional Bourbon mashbill. We distill in batch around 115-120, which means that everything that comes off our still goes directly into the barrels. From there we use 6.3 gallon barrels with an aging time of 5-6 months. We give a nod to the idea of Bottled in Bond by bottling our Bourbon at 100 proof.

    The taste profile for our Bourbon is sweet and spicy, smokey and smooth. Deep flavors of stone fruits play on the front end with an incredibly long finish reminding most of an excellent Scotch Whiskey.

From the owners of Premiers and Grands Crus in Puligny-Montrachet since 1859, Chartron & Trebuchet Bourgogne Blanc is made from 100% Chardonnay from Burgundy aged for about 8 months (half in oak and have in stainless steal). Clear light golden color with greenish highlights. Richly aromatic, exuding aromas of dried fruits and white flowers. The stainless steel tanks bring fruitiness and freshness whereas the oak barrels bring structure and roundness.

White gold in color with silver highlights. The notes of chalk and limestone make it a very tense and mineral wine. The palate is complex with aromas of lemon and orange blossom. Single Vineyard from the heart of the MaconThis single-vineyard Chardonnay is produced in the village of Péronne, in the heart of the Maconnais region in Burgundy, from 40 year-old vines planted on the limestone based soils of the Mount Epin.
A beautiful golden color with green reflections, delicate toasty notes and attractive aromas of citrus and ripe summer fruits combine with floral and honey nuances that are typical of the old vines.  Fresh, ample and full-bodied on the palate, the wine is perfect by itself as an aperitif and delicious during the meal.
In the heart of the central Mâconnais, the Mâcon-Péronne AOC is found on either side of the Bicheron river. The vines on the western slope at Saint-Pierre-de-Lanques run alongside the first plots of Mâcon-Lugny, while to the east, the vines are planted on the first western slope of the Viré-Clessé range.


2019 Comte de Langeron Bouzeron Aligote...$24.99
Bouzeron is one of the five appellations in the Cote de Chalonnaise and the closest one to the Côte-d’Or (Bouzeron is a close neighbor of Rully and Chassagne-Montrachet). It was officially recognized in 1997 as a full-fledged Burgundian appellation village. The only appellation where the grape Aligote is the star. Bouzeron only produces white wines and the only grape is Aligote. Aligoté grape is a cross of Pinot Noir and Gouais (that no longer exists today). Comte de Langeron Aligote has aromas of fresh peaches, white flowers, and green apples. On the palate, it is well balanced and creamy, but the wine is very pure with great focus and nice streak of acidity running through it. Great crisp White Burgundy with a round mouthfeel! Great bottle!

100% Estate Grown Chardonnay
Full malolactic and 6 months on the lees to add richness and complexity
Organic but not certified. The straight Saint-Véran is a blend of several parcels, but they are all vinified differently to give him the option to experiment and make the best blend.
Tasting Notes: Well defined citrus and stone fruit aromas, with hints of acacia, honeysuckle, verbena, and fennel. Combines vivacity, roundness, fruitiness, and aromatic richness.
Serve With: Excellent as an aperitif for its beautiful crispness, it pairs with poultry, veal, and lighter meats, risottos with meat or fish, cold antipasti, mixed salads.

2020 Damien Martin Pouilly Fuisse...$34.99
The Pouilly-Fuissé vines were planted in 1976 and this parcel of vines is in Vers Chânes in Fuissé. Fermented with indigenous yeasts. Fermented and matured 8 months on the fine lees in 1-4 year old French oak barrels. It’s at the top of the slope and produces a wine that is very rich, with notes of candied fruit and vanilla. This wine could easily pass for a Premier Cru White Burgundy at more than twice the price. Full-bodied, layered and multidimensional, bursting from the glass with a complex bouquet of crisp pear, citrus oil, wet stones, paraffin wax and toasted sesame, framed by a discreet touch of youthful reduction, it's full-bodied, layered and multidimensional, with incredible concentration and searing levels of dry extract. Structured and tightly wound, it's seamless and complete, concluding with a long, intensely mineral finish.

Tasting Notes

Color: Bright copper

Nose: Warm pineapple upside-down cake with a dollop of vanilla ice cream, dusty church pews, pine sap, and hints of salted black licorice and pipe tobacco in the background

Palate: Oily and mouth coating, the salted black licorice really comes to the fore with accompanying hints of cherry pipe tobacco, as the layers build there’s pineapple core and tamarind paste

Finish: The fruit dissipates quickly but both the salted licorice and pipe tobacco remain for a good while, flavors from a recently downed espresso linger at the back of the throat

Primary Botanicals: Genepy, wild alpine peppermint, thyme, eucalyptus, chamomile, wormwood, fennel, lavender, nutmeg, cinnamon, and juniper
Botanical Source: Local are wild foraged between 500 and 1700 meters, with the majority above 800. Genepy, a protected plant, is the exception, and is cultivated above 2000 meters. Others sourced from Asia.
Finished ABV: 28%
Method of Production: Botanicals infused individually in organic neutral wheat spirit for 20-50 days. Alpine water and beet sugar added. Rested 20-30 days in stainless steel. Paper-filtered.

    Bordiga was started in 1888 by Pietro Bordiga, a bartender in Torino when the city was the epicenter of Italian spirts and cocktail culture. He decided to locate his distillery in the small town of Cuneo because it offered him a strategic position a little over an hour south of Torino, and also close to the Occitan Alps, where he was sourcing his wild botanicals. The climate there, influenced equally by altitude and proximity to the Mediterranean sea, creates herbs that are particularly rich in essential oils and aromas. His great-grandson, also named Pietro Bordiga, still lives above the distillery.
    Centum Herbis (translation: 100 herbs) is part of a group of Italian liqueurs called Centoerbe which are indigenous to the alps and other mountainous regions. Bordiga’s rendition, unique because of its lower ABV, defines itself with a brighter, more floral bouquet of aromatics. Genepy forward, and packed with mint and fresh green herb, it has a delicate finish and pairs well with a variety of spirits and other modifiers.

Backbone “The Forge” is blended bourbon where at least 51% or more of the blend is Straight Bourbon. We spent several months coming up with the blend. Our starting point was simple – how could we use our older barrels of whiskey to create something that was outstanding and stood apart from other high-end American whiskeys. The bulk of the blend is some of our best Straight Bourbon barrels between 5 & 7 years old. We also included some older Straight Rye and some wonderful barrels of Light Whiskey that were barreled in 2006. The right combination of these mature whiskeys including a stout proof of 110 allowed us to create a rich and decadent blend.
