New cheese from Tasmania
Tasmanian Heritage Signature Blue - in stock at Forsyth
Product of Tasmania
Description:
Tasmanian Heritage Signature Blue reveals a creamy texture, with a uniquely sweet and well rounded salty blue character that develops as the cheese matures. It is matured in wax to prevent oxygen supply to the cheese, which produces its sweet flavour and causes it to retain moisture to enhance the creamy centre. This traditional style blue cheese is an exquisite sensory offering with a broad appeal.
Suggested Accompaniment:
Tasmanian Heritage Signature Blue is pleasurable served on sourdough bread or oaten biscuits with poached pear, truffle honey, fresh figs or walnuts.
General Serving/ Storage comments:
To allow for optimal flavour and enjoyment, it is recommended that the cheese is removed from the fridge 60 minutes before serving. This time may vary depending on the temperature and humidity of the day. Once opened, wrap any remaining cheese in the original packaging to maintain optimum quality. Always serve cheese when it is most ripe to ensure a full flavour and optimum taste. If the cheese is unripe, it should be left in the refrigerator to mature.

Bloomsdale, Missouri
"Baetje Farms is a pure farmstead artisan goat cheese company. This means that we are hand crafting our own goat cheese using milk solely from our own herd of registered Saanen dairy goats. We believe that the best cheese comes from the highest quality milk and that the highest quality milk comes from animals that are in the best physical condition possible. We feed our animals an all natural diet; whole grain ration free from antibiotics and hormones, alfalfa hay, pasture and organic minerals. They also receive supplemental kelp and herbal teas. Their water supply is unlimited filtered spring water, from a spring right here on the farm. Harvest Dance Wheat Wine...$8.49
Here is the latest from the Boulevard Smokestack Series:
"There was three men come out o' the west their fortunes for to try,
And these three men made a solemn vow, John Barleycorn must die,
They ploughed, they sowed, they harrowed him in, throwed clods upon his head,
'Til these three men were satisfied John Barleycorn was dead.
And these three men made a solemn vow, John Barleycorn must die,
They ploughed, they sowed, they harrowed him in, throwed clods upon his head,
'Til these three men were satisfied John Barleycorn was dead.
"This grim little verse belongs to one of the oldest of English folk tunes. It depicts the cultivation of barley as a series of abuses and indignities committed upon pour little John Barleycorn, who eventually triumphs, reborn as beer and whiskey. Our Harvest Dance Wheat Wine is a celebration of John's cousin wheat, the great staple crop of Middle America. Wheat wines are a somewhat recent stylistic development, akin to barleywines in strength, but brewed with a large portion of wheat malt, which provides a soft mouthfeel to balance the big body of these warming brews. We add a generous helping of Hallertau and Citra hops, and age the beer on both French and American oak, resulting in a beer that opens up with a warming burst of tropical fruit flavors, adding subtle Sauvignon Blanc notes before rounding slowly to a dry, oaky finish. This is a perfect beer for sharing with friends and family as we gather together for the fall and winter holidays. Pairs well with aged cheeses or seasonal squash and pumpkin dishes. And though it may appear that Miss Wheat is about to be cut down in her prime, have no fear: just pour a glass of Harvest Dance and you'll find she's alive and well."

2007 Glaetzer Amon Ra Unfiltered Shiraz - Sold Out
The 2007 Amon-Ra Shiraz was sourced from vines ranging in age from 50 to 110 years with yields of only 0.5 tons per acre. It spent 15 months in 100% new oak, predominantly French. A glass-coating, opaque purple in color, it reveals a brooding nose of wood smoke, mineral, scorched earth, Asian spices, blueberry, and chocolate. Super-rich, dense, yet surprisingly light on its feet, this extraordinary effort will evolve for a decade and offer a drinking window stretching from 2015 to 2035."
Rated 96-99/100 The Wine Advocate
2006 Glaetzer Amon Ra Unfiltered Shiraz - Sold Out
"Amon-Ra has become one of Australia’s icon wines. Made from 100% Shiraz sourced from vineyards ranging in age from 80-120 years and with microscopic yields of 0.5 tons per acre, the 2006 Amon-Ra was aged for 15 months in new French and American oak. The wine is a thick, glass-coating, purple/black in color. The aromas cover a wide range of scents including smoke, vanilla, pepper, Asian spices, coconut, espresso, blueberry, and chocolate. Thick, rich, layered, and complete, this monumental wine offers extraordinary intensity and length. It requires 10-15 years to fully evolve and should easily last through 2040. Hats off to Ben Glaetzer for producing an extraordinary portfolio!"

Bonny's is back....
Silver Oak Bonny's Vineyard was arguably the first California Cult Wine. It was produced by Silver Oak from 1979 until 1991. Bonny's Vineyard is situated in front of Justin and Bonny Meyer's home (founders of Silver Oak). After the 1991 harvest, Silver Oak decided to stop producing Bonny's vineyard because demand was so high and too many people were upset if they could not get bottles. Now most cult wines just raise their price to $400 a bottle. I remember the excitement of getting our Silver Oak Bonny's Vineyard every year when I first started working at The Wine and Cheese Place. We would have a waiting list, because it was no doubt the most sought after wine at the time for us.
Even after Justin Meyer sold his half of Silver Oak, the only vineyard he kept was Bonny's Vineyard. 2003 was the first vintage of Bonny's produced in 12 years and we now have the great 2004.
Justin Meyer was one of the founding members of Silver Oak in 1972 and the drving force. He was the winemaker until 1994 and then he sold his portion of Silver Oak in 2001. At that point, he helped his son, Matt, open Meyer Family Cellars. Now Matt is carrying on the great tradition of Bonny's Vineyard.
Meyer Family Cellars
2004 Bonny's Vineyard.....$131.99
Only 200 cases made.
Available online also.
"Bonny’s Vineyard Cabernet: The Bonny’s Vineyard Cabernet was one of the country's first and deservedly best examples of a single vineyard designate wine. Over thirty years ago these precious four acres stood out among thousands that Justin Meyer cultivated in the heart of the Napa Valley's Oakville Appellation. The old creek which runs nearby deposited gravely soils which cause the vines to struggle and produce the most beautifully intense fruit imaginable. This is not a wine we make, but rather one we watch develop itself during its five year ageing process. Whereas we are actively developing the style of the Syrah, when it comes to the Bonny’s we stay true to the techniques Justin Meyer used many years ago. Rather, when each vintage is tasted it is a way of looking back to the year in which it was grown." -- winery
"Bonny and Justin founded Silver Oak Cellars together with their financial partner, Ray Duncan in 1972. Always a labor of love, Silver Oak’s inaugural vintage was crushed that fall a week after Justin and Bonny returned from their honeymoon.
In the early years Bonny managed Silver Oak business and sales while Justin oversaw winemaking and managed burgeoning Franciscan Vineyards, purchases by the partners in 1975. A couple years after the partners sold Franciscan, Justin left and took over primary management duties at Silver Oak. Always part of the management team, Bonny focused on PR, marketing, and package and facility design. The original Silver Oak and Meyer Family Port labels both won design awards, as did the Oakville Silver Oak winery when it was completed in 1982. Today Bonny is an active partner in Meyer Cellars and continues to focus on marketing and design.
Bonny is Principal of Meyer Family Enterprises, investor in the financial markets, commercial property, and green technologies. She is a strategic philanthropist and a community activist. She loves to sail, play guitar and sing with friends. Now and then she skis and drives fast when no one is looking.
The legend of Bonny’s Vineyard states that Bonny gazes upon and blesses her vineyard every morning and that’s what makes the wine so extraordinary. Others say the wine is a manifestation of Justin and Bonny’s love for one another. But no one really knows for sure." -- winery

Ardbeg Corryvreckan: in a league of its own "Man the lifeboats! Here comes the second wave of this deliciously deep, powerfully peaty and wonderfully wild whisky. Corryvreckan takes its name from the famous whirlpool that lies to the north of Islay, where only the bravest souls dare to venture. Swirling aromas and torrents of deep, peaty, peppery taste lurk beneath the surface of this beautifully balanced dram. Its briny character of crisp seaweed, sweet vanilla and rich, dark melted fruits draws you into a long deep finish. Like the whirlpool itself, Corryvreckan is not for the faint-hearted!" -- distillery
"Ardbeg Corryvreckan Single Malt Scotch Whisky. Powerful, muscular, well-textured, and invigorating. Even within the realm of Ardbeg, this one stands out. The more aggressive notes of coal tar, damp kiln, anise and smoked seaweed are supported by an array of fruit (black raspberry, black cherry, plum), dark chocolate, espresso, molasses, bacon fat, kalamata olive, and warming cinnamon on the finish. Quite stunning! "
