Mezcal Clase Azul made from wild Cenizo Agave, grows wild in the State of Durango where the extreme climate, the rich minerals of its soil, and the source of natural springs in the area, give particular force and complexity to its notes, making it an entirely different mezcal than what is produced in the rest of Mexico.  They do not buy their juice, the own and produce it.

In addition, its unique and colorful top is hand-crafted by artisans belonging to the Wixarika or Huichol culture.  Each piece that a Huichol artisan creates, using beeswax, resin, a needle, and individually placed beads, in a special way represents their roots and their traditions that race back to ancient times.  In this instance, combining images that together reference the origins of mezcal.

This version of Stone Enjoy By IPA omits the part where we filter out the extra yeast, hop sediment and proteins that build up in beer as a natural result of the brewing process. Cluck Cluck! The Chiquen has come home to roost!
An amber ale brewed with rye malt and aged in rye whiskey barrels. Our first barrel aged beer here at Against the Grain is the Kentucky Ryed Chiquen. Named so because it was made in Kentucky, has a lot of Rye in it and was aged in rye barrels and it's not Chicken. As we all know (or should know) Chiquen refers to anything that is not chicken.
Now that we have all that straight, we will talk about what is in this beer. Brewed with Maris Otter from the UK and rye malt and caramel rye from Germany, imparting a spicy, fruity and dry flavor. Then hopped with enough English Nugget and Kent Goldings just to balance and fermented with our house ale yeast. After fermentation we moved the entire batch into the AtG private dining room and into used Redemption Rye barrels from our good friends at Strong's Spirits. There it aged for 5 weeks until we felt it had picked up the right amount of residual bourbon character and oak flavors. We then transferred it to our serving tank, carbonated it and the end result is on tap now, a balanced drinkable and complex barrel aged beer.

Bourbon Barrel Aged Smoked Ale

Literally, Son of Vagina Testicle, why? It's kinda funny.
Truly a ground breaking beer, this Barrel aged Rauchbier was an attempt to replicate the flavors present in Islay Scotch Whiskey. We used Munich malt as a base and added copious amounts of Beechwood and Peat smoked malt, which provides the intense smoky and earthy peat flavors found in Scotch. Then the addition of Alderwood smoked salt lends a crisp brininess that is reminiscent of the sea air in the Islay region of Scotland. Aged in used Angel's Envy Bourbon Barrels to give an intense caramel, vanilla and whiskey flavor.

The very elaborate and long-lasting manufacturing process (10 months in the warehouse) makes it a real rarity. Samichlaus can mature in the bottle for many years, older grades gain in complexity and maintain their creamy-warm finish. The proof: The 2004 vintage was at the World Beer Cup 2012 of gold medal winners in the category "aged beers".
