Chester Osborn manages to produce a cool and juicy white from the warm climes of McLaren Vale, particularly in 2016, when rain in late January refreshed the vines. He focuses this blend on fruit grown in free-draining soils over limestone, once a seabed built by the shells of creatures like hermit crabs. Early-harvested fruit provides brightness to the richer fruit left to ripen later. The wine has the crispness of Asian pear to balance the fuller notes of peach and smoky chamomile. Chill it for Dungeness crab.

A refreshing neo-Berliner Weisse, Festina Peche.  Sadly, there are only a few breweries left in Berlin still brewing the Berliner Weisse style, which is characterized by its intense tartness (some say sour). There were once over 70 breweries in Berlin alone making this beer! In addition to fermentation with an ale yeast, Berliner Weisse is traditionally fermented with lactic cultures to produce its acidic (or green apple-like) character. Served as an apertif or summertime quencher, Festina is delicately hopped and has a pale straw color. To soften the intense sourness, Berliner Weisse is traditionally served with a dash of essence of woodruff or raspberry syrup. In Festina Peche, since the natural peach sugars are eaten by the yeast, the fruit complexity is woven into both the aroma and the taste of the beer so there is no need to doctor it with woodruff or raspberry syrup. Borgogno Chinato Barolo

The Barolo Chinato di Borgogno was created in the early decades of the 20th century. Thanks to the creativity of Cesare Borgogno, an enthusiastic herbalist and friend of large Vermut producers, including comm. Mario Cora and Count Alfredo Marone Cinzano. Producing this special wine involves starting from an excellent base, which must be Barolo. Sugar, alcohol and infusion. The infusion is the element that lends character. It is obtained from natural products, including roots, leaves, flowers, seeds and fruits, and there are at good 37 different spices. Of the most commonly used herbs and spices for the Barolo Chinato, the most notable is obviously the China in the three classic varieties: Calisaya, Soccimano, Succirubra. The Barolo Chinato has moderate alcohol content, a red colour somewhere between amber and garnet, the characteristic fragrance reminds on of tanned leather and the taste is warm, full-bodied and lingering. Best served in small glasses at 13⁰ or 14⁰, and enjoy with chocolate or with a chocolate based baked goods. In addition to the Barolo Chinato Borgogno also produces the Chinato and the Bianco Borgogno, with the same production method but a different base.

The Chinato Borgogno is produced with 70% Nebbiolo and 30% Barbera.

THE STORY:  John Wilkinson was telling his friend Steve Matthiasson how much he loved Matthiasson Vermouth, a sweet elixir made from the (white) Flora wine grape. Steve makes only a few hundred cases every two years, as there are only 10 or so acres of this varietal in all of California.
Steve was immediately on board and wanted to make a cherry vermouth with wine grapes that evoke dark cherry flavors like Petit Sirah and Merlot. He suggested we add fresh Tartarian cherries.
Thus the inspiration to create a new sweet vermouth to pair perfectly with our style of whiskeys. (One we could make more than a few hundred cases!)

THE WINE:   Partner Vermouth hearkens to an earlier America when alcohol and medicine were one and the same. Whiskey and vermouth cured all.
Vermouth is wine infused with botanicals. This marriage of flavors dates back to the origins of wine itself. The Caesars and Pharaohs of the ancient world had their own royal recipes, as well as the common folks on their farms…families throughout history added herbs and spices to their local wine, both for flavor and for health. Vermouth has always been considered medicinal as well as delicious, and we are continuing the tradition.
A blend of Merlot and Petite Sirah, heightened it with fresh Tartarian cherries from Lodi California, and exotic spices from around the world. We made grape spirit infusions of spices such as Smoked Black Cardamom, Star Anise, Indian Coriander, Chinchona bark, and Wormwood.
