This is the legend speaks of the virtues of the water that has given its name, since 1895, to one of the most important drinks in all of Mexico: Topo Chico Mineral Water.

There was a beautiful Aztec princess who suffered a terrible disease, so strange that none of her father’s doctors, Moctezuma I Ilhuicamina, successor in 1440 of the King Itzcoatl had been able to cure.

Desperate, the King turned to the older priests in the kingdom to find a cure for his beautiful daughter. They told him that according to the timeless stories of travelers, in a far away northern land, there were strange and hidden waters which flowed at high temperatures, waters in which one only needed to bathe in or drink from to regain vigor, joy, strength, and refreshment.

Encouraged by this news, Moctezuma I ordered an immediate expedition to take his daughter to this amazing place. After traveling long and rugged roads, the expedition and the Princess reached a fertile valley flanked by mountains. To the east, they saw a mountain with the form of woman’s face (now “Cerro de la Silla”) and also found a mole-shaped hill, from whose slopes flowed the prodigal waters.

After spending some time there, taking baths and drinking from the water, the daughter of Moctezuma I, his priests and chiefs returned to the Anahuac lands optimistic, strong, happy and refreshed. The news about the recovery of the Princess spread throughout the kingdom and has passed from generation to generation up until modern times.

  • Mezcal Vago "Elote"  ($49.99)  The unique Mezcal Vago Elote - Between the normal second and an extra third distillation of our Mezcal Espadin, Aguilino naturally infuses the batch with roasted corn grown on his farm. The result is mezcal with a flavor that is truly the essence of Mexico. This recipe was created by Aquilino's family and is available exclusively through Mezcal Vago. Elote has a nose full of smoky toasted corn and dry river stones. The body is sweet with wood tones and layers of honeycomb, green tropical fruit, and smoke. It has a prolonged finish loaded with mint and papaya.
  • Mezcal Vago "Espadin" ($44.99)   Aquilino's family has been making mezcal for more generations than they can remember. He cultivates his Espadin in the hills above his palenque in the small village of Candeleria Yegole, located on the boarder of the Central Valley and Sierra Sur regions of Oaxaca. Yegole is an arid region of Oaxaca, yet sits on the confluence of two rivers. The dry environment, coupled with ample fresh water amke it the ideal location for making mezcal. Arroqueño has notes of luscious melon on the palate, like cantaloupe and a bit of baking chocolate in the background. It is very vegetal, reminiscent of fresh green beans, with savory medium to long finish.

Notes of fennel, dill, radish peel and crushed aloe lead toward spicy bitter chocolate notes, finish is long, clean and fruit-driven with low mineral influence.

The liquid must then be distilled a second time to raise the alcohol percentage which is done in a copper pot still, discarding the head and tails, leaving only the heart worthy for bottling Xicala Mezcal.

Doom may be impending but that doesn’t mean you have to fear it. A collision of worlds, the intense hop character of our imperial IPA mingles with the warm vanilla and oak notes imparted from time spent in our favorite bourbon barrels. Like all good things, Doom comes to those who wait.

We last released Doom in 2013 as part of our Backstage Series of beers, although it was featured in our taproom as a draft-only option long before that. Its return has been much-anticipated and we can’t wait to share it with you all.

Doom, a 12.4% ABV imperial IPA aged in bourbon barrels, is the third release of 2017 in the Barrel-Aged Series, preceded by Frootwood and KBS. There are two remaining Barrel-Aged Series beers to be announced this year, with the returning favorite Backwoods Bastard being the fifth in the lineup.
