When we considered putting oats in a Bourbon, our minds went to the chocolate oatmeal stouts we enjoyed in our brewing careers. Those rich stouts, and resultant, “Winter Whiskey,” imbue our palates with the warmth and cheer of the season. Winter Whiskey is a Bourbon with the unique spice of raw and malted oats, backed by roasted cocoa notes of chocolate malt

It’s quite a unique Bourbon, unlike anything we’ve ever made or tasted. The experience is something of a three-way conversation between the dry cocoa quality of the chocolate malt; a balanced amount of oak; and this unique spicy quality (sort of like kasha-style buckwheat, perhaps blueberry skin) quite distinct from that of rye. The finish dances away on the oaty spice, dusted with Belgian cocoa. Despite the suggestion of “chocolate” in the grains and the name, it never turns cloying, tending to delicate dryness.

The 2022 Savigny-lès-Beaune La Dominode 1er Cru is a notch more intense on the nose than the Clos des Guettes, but side-by-side, I find the latter imbued with greater charm. The palate is wellbalanced with slightly powdery tannins, attractive and quite plush black cherry and mulberry fruit. It gains weight towards the finish but retains its smooth and sleek texture. Like the Clos des Guettes, this will be difficult to resist in its youth.

Now, Jeff Mattingly, a sixth generation descendent of John Graves Mattingly, has created and perfected the first of its kind custom bourbon blending process at his new distillery in Frankfort, KY.

Wonderfully creamy, silky and deep; an utterly seamless wine with the underlying soil-driven minerality to energize and frame its fleshy flavors of dark fruits and spices. This is yet another 2010 whose impression of refinement belies the weather extremes of the growing season. Finishes with building but perfectly integrated tannins and outstanding length.

Coming from Dutton Ranch’s Sullivan Vineyard, planted in 1979 to old Wente clone of Chardonnay, the 2022 Chardonnay The Sage pours a yellow/golden hue. It’s expressive and ripe in the glass, with aromas of honeyed citrus, brûléed golden apples, crushed stones, sweet spice, and luxurious layers. It’s lush and full-bodied, with a custardy texture and a long-lasting finish. There’s a lot of freshness and clarity in its richness, and it retains refreshing acidity. In the cellar, it was aged for 11 months in 40% new French oak, and five barrels were produced. It’s a superb and opulent wine to enjoy over the coming 8-10 years.

A surprising bitter: 25 botanicals and aged in chestnut barrels to rediscover a truthful and unusual taste.
This fernet is a tribute to Italian tradition, but with a surprising personality. A bitter part given by rhubarb and a fresh flavour, due to mint. The brief aging in chestnut barrels serves to accentuate the stringent, almost sapid, note. The color is deep amber, given by the extractions of the plants used. The taste is rich and herbaceous, with intense and round notes; free of dyes and with a very low percentage of sugar.

"G.D. Vajra launched in 1972, when the Vaira family established their vineyard the highest village in the Barolo region. Their version of Barolo chinato has a mysterious aroma and taste, which brings to mind souks and camels laden with herbs and spices (particularly clove). I can’t exactly explain this—especially since the family says it chiefly uses alpine herbs native to Italy. It’s a strongly herbal drink, but expresses itself as a counter to an herbal liqueur like, say, Chartreuse.
