Tasted as a sample blended from several foudres, the 2018 Cotes du Rhone Coudoulet de Beaucastel features scents of sun-warmed stones and ripe raspberries. Medium to full-bodied, it's plush and open-knit, already giving a lot of pleasure, and finishing zesty and long.

Lovely density and darkness to the colour, density of fruit too on the palate. Very well balanced, with dense, deep, grippy tannins. The Mourvèdre makes itself known this year - intense damson and liquorice on the long finish. A good value pick. 30% Grenache, 30% Mourvèdre, 10% Syrah, 10% Counoise, 10% Vaccarèse/Terret Noir/Muscardin, 3% Cinsault, 7% white varieties. Grenache and Cinsault fermented in cement, Syrah and Mourvèdre fermented in foudre.

1969 Viuva Gomes Collares Reserva Tinto...$159.99

The red grape in Colares is called Ramisco--Ramisco is grown nowhere else.Old yet still fresh. This pearl of Colares has gained an onion skin color, although it has maintained a pleasant lucidity with aromatic notes of raisin cherry and damp earth. In the mouth this wine has a light structure, with a memory of where Ramisco’s deep tannins used to be, marked along with some acidity due to the ocean’s winds, leading to salty finish.


On the coast, northwest of Lisbon, there is a small D.O.C. (Denominação de Origem Controlada) called Colares. It is one of Portugal’s most ancient areas and it is entirely planted on sand. When phylloxera destroyed most of Europe’s vines in the 19th century, it didn’t destroy Colares. Their vines are all original, ungrafted, and, for the most part, very old.
Colares is also one of the most endangered wine regions in the world. It has become the go-to vacation spot for affluent Lisboans so the land has become much more valuable as beachfront property than vineyard land. There are only 23 hectares left. The production of wines allowed to use the Colares designation is around 4,500 bottles… quite a change from a century ago when there were thousands of hectares of vines and, as one of the only regions left with vineyards, their reputation soared. They were called “The Bordeaux of Portugal” and experienced a brief, yet intense, international flowering of interest but as Europe’s vineyards came back on line and Portugal descended into a nearly eighty years of strife, civil war, and dictatorship, the fortunes of Colares faded.
The red grape in Colares is called Ramisco, the white is Malvasia. Ramisco is grown nowhere else, and same goes for this breed of Malvasia (although we find its cousin in the Douro and other parts of Portugal).

This is another rock-star chardonnay from here with dried-apple, pear-skin, crushed-stone and peach-pit character. Full body. Creamy texture. Phenolic form and a long, flavorful finish.

We love Beer.
Our family has been making alcohol since the days of prohibition (shhhh, don’t tell Uncle Sam), we still have the stoneware crock that Michael’s great grandmother used to supply her “tea room” with beer.

In 1995 Michael began homebrewing beer and quickly became obsessed. He joined Brew Free or Die and the American Homebrewers Association and carefully developed his skills over many years of practice.

Since the start of Moonlight Meadery we have made over 10 beer collaborations with some of the world’s leading craft breweries, including Stone Brewing Company, Smog City, and Heretic Brewing.

These collaborations all included honey in the brewing process, allowing us to create unique dynamic flavor profiles.

Hidden Moon Brewing is here to bring you delicious beers… but we won’t be making any old beer – we will be making the oldest kind: braggots (beers brewed with honey in additional to malt and hops).

What is Braggot?
A Braggot can be either a beer fermented with honey, or a beer and a mead blended together after fermentation. The Hymn to Ninkasi is the oldest known recipe of beer, written around 1800 BCE, and it describes using honey in the brewing process:

“You are the one who holds with both hands the great sweet wort, brewing it with honey. You, the sweet wort to the vessel, Ninkasi.”

Sparkling White Wine Piquette.
Light and refreshing, made with rehydrated skins from, well, Skins. Think wine tea. Literally, we have turned water into wine on this cellar experiment. Piquette was a way to meet the needs of the people during the late 1800s wine blight in France. By taking the pressed skins and rehydrating them with well water, you create a low-alcohol tea with all of the leftover flavor bound up in the dried skins. After repressing the skins 7 days later, we get a light and refreshing low alcohol elixir. We add a little of our finished table wine for acidity and stability and then bottle. The leftover sugars and native yeast then go to work giving the finished wine a light sparkle.
