"Assumption Abbey is a secluded Trappist monastery nestled
in the foothills of the Missouri Ozarks. It was established in 1950 by a group of monks from New Melleray Abbey in Dubuque, IA. Through the years, the brothers of Assumption Abbey have continued to live by the centuries old Trappist tradition of contemplation and study, private prayer and common worship, and living by the work of their own hands. When Assumption Abbey was first developing its bakery, the monks sought the help of world class chef Jean-Pierre Augé, who at one time served in the royal employ of the Duke and Duchess of Windsor. Mr. Augé's assistance, and his generosity in providing the recipe and ideas for production, gave the monks the impetus to go forward with the Assumption Abbey Fruitcakes.Assumption Abbey Fruitcakes are the dark, rich, traditional style of fruitcake. It’s full-bodied with round tannins and a soft, creamy finish. Some iron and iodine to this. So attractive at the finish. From biodynamically grown grapes. Better after 2023.

Believe it or not, this bourbon came close in taste, texture and smell to the more expensive, virtually impossible to find Pappy Van Winkle 20-Year Old Kentucky Bourbon. Wonderful rich, honeyed, caramel, toffee, maple syrup, wood spice, smoke and vanilla notes are found in this full-bodied, broad, rich, medium amber/tawny-colored bourbon. 94 points

The Willett family distillers brought their distilling knowledge with them from England to the American Colonies in the early 1600's. Before coming to the colonies, they had utilized their knowledge and practiced their talents for many years. They distilled brandy in France, where the family originated. Even today, this is evidenced by "Square Willette" at the foot of Montmarte in Paris. Finally, in Bardstown, Nelson County, Kentucky - the "Bourbon Centre" of the world - the Willett family distillers became involved with developing several of the most famous bourbon distilleries of the area and, in the early 1900's decided to build their family owned and operated distillery. The distillery they named "The Willett Distilling Company" in 1935, which has been operated by several generations of the Willett family distillers since its very beginning."

Meet the Head Distiller - Lauren Platz
Lauren’s Bio…
For Redwood Empire Whiskey’s head distiller Lauren Patz, the secret to craft distilling is passion, palate and patience. Growing up in a winemaking family, she developed the palate and appreciation for good food and drink from a very early age. After earning a dual degree in Classics and Japanese at Bates College, teaching English in Japan, and working at Tcho Chocolate’s Factory, Lauren discovered her true calling when she joined Spirit Works, a small Sonoma County distillery, in 2013 as an apprentice distiller.

Diving fully into learning her craft, she swiftly worked her way up to Head Distiller and managed all Spirit Works operations and product development for three years before joining Redwood Empire Whiskey in January 2021.

Lauren has judged at the American Distilling Institute since 2017, and taught distillation seminars and workshops in the local community. Her passion and creativity help to push Redwood Empire’s innovation forward without abandoning its roots. “I ask a lot of questions,” she says, “and I drive us further toward defining our identity on the distilling side.”

Amburana casks are challenging to work with, as they impart strong cinnamon, nutmeg, clove, and vanilla spice notes. True blending expertise is required to enhance the bourbon with Amburana and maintain balance. The BCS blending team created a bourbon blend of two mash bills with different char levels finished in sustainable Amburana casks. A vatting of individual casks without finishing was layered in to add depth, richness, and complexity, ensuring the bourbon shines through first and foremost.

2020 San Francisco World Spirits Competition Double Gold Winner!
Just released in fall of 2019, the goal was to create an affordable everyday bourbon that had that unique and unmistakable Smoke Wagon flavor, consisting of delicate sweet notes with a rye spice finish. Barrels with our same high rye mash bill were racked on the top two floors of the warehouse and never rotated. The higher the floor the hotter it gets in the summer causing more expansion and more movement into the wood. Because we don’t chill filter, these combined aspects create a bourbon that is rich and creamy beyond its years. Never rotating the barrels ensures there are no harsh tannin flavors and the high rye mash bill adds a delightfully spicy and nutty finish.
Nose: honey, toasted nuts and with some oak and heat.
Taste: Creamy mouthfeel with initial rich sweet notes of honey and caramel on the tip of the tongue followed by nuts, oak and pepper spice that starts on the sides of your tongue. The nuttiness and oak fade as pepper spice from the rye takes over the entirety of your pallet. Finishes with a creamy sweetness that coats followed by once again by oak and a pepper spice that lingers .

Our high rye content bourbon is aged in the heart of a century-old brick warehouse. To ensure a unique and consistent flavor, barrels are hand selected to create a perfect blend that is smooth and at the same time bold and intense.  Released in 2016, our goal was to create a unique great tasting high rye content bourbon. The problem is that rye ages much faster than corn. So while our younger vintages had a big rye spice flavor (which we love) the mouth feel was too thin and it lacked the sweet, delicate complexity of a well aged spirit. Our older vintages had the smoothness and sweet notes that can only be achieved by moving in and out of #4 char and caramelized oak for many, many years, but the nice rye spice had been aged out!
So what to do? Find the perfect blend. We combined the two. The younger vintages maintain the bold spiciness of the rye, cut down on the tannins and keep it fruit forward. The older vintage brings in a creamy mouth feel with sweet aromas and taste notes that only appear over time from aging in a barrel. We hope you enjoy drinking it as much as we enjoy making it.

"The journey to create Uncut the Younger began around October 2020.... being able to offer an affordable cask strength bourbon that could be one of our core expressions AND a high proof lover’s daily sipper, really got me excited. I truly believe having superior and affordable bourbons is essential. Also I wanted Straight to have a cask strength sibling the way Small Batch has Uncut Unfiltered, it all just made sense.
A year and a half later - Uncut the Younger, our second expression in the entry level category is finally here! Consisting mainly of 4 year 36% rye bourbon from several floors and warehouse locations. Uncut the Younger is blended to be fruit forward, with tons of candy flavor notes and finishing with some bold cinnamon spice with gentle heat. It’s non chill filtered so it’s buttery and creamy, drinking more delicately than one would think based on its proof.

Uncut Unfiltered Bourbon - No water added because none is needed.
We took the same vintage blending philosophy that we used to create Small Batch, except this time the goal was to create high proof bourbon that tasted its best neat. Uncut is so rich and sweet with an unbelievably thick mouth feel, the heat and rye spice finish are a welcome addition. It's like milk with cookies!
Blending vintages of our high rye mash bill to achieve this flavor profile at 115-116 plus proof was a very rewarding challenge for us. There is a delicate balance between creamy mouthfeel, tannins and sugars that comes into play that makes the end result magical. Older vintages have more evaporation which means a higher concentration of fats and sugars per ounce which gives them a nice creamy mouthfeel as well as caramel and honey goodness. They also have more tannins because alcohol has been in contact with the wood for longer. A lot of what some perceive as alcohol burn is actually a harshness due to tannins. This can counterbalance the benefit gained by the high concentration of lipid esters insulating your pallet from alcohol heat. There needs to be enough of the older bourbon for the oak flavors and mouthfeel, but also some younger ones to cut back on the tannins and bring in some delicate fruit and caramel flavors.

Inspired by the art of traditional distilling and the beauty of America's Ozark Highlands, Stowloch™ Whiskey is distilled using natural, limestone-filtered Ozark Highlands water, long fermentation, and aged a minimum of 4 years in Missouri Oak barrels. Stowloc is made using an imported recipe brought to the Americas by our distiller's family in 1761. We use only heirloom, non-GMO grain and long fermentation to give this Ozark Highlands whiskey a pre-prohibition style that is sure to satisfy any palate. Our mash build is corn, wheat and malted barley, and since we use no rye in our mash you will find a hint of sweet in every sip.
This sustainable, all-natural whiskey captures the essence of the 200-year history of Ozark Highlands distilling and is sure to become one of your favorite drams.
The name Stowloch is the combination of the Anglo-Saxon word for holy place – “Stow” – and the Irish Gaelic word for lake – “Loch.” We take the liberty of translating it “Holy Water.”

Mark Sutherland is the CEO of Stone Ledge Spirits Company, the organization behind Stowloch Whiskey. Originally from Scotland, he has been in Missouri for 30+ years and is a passionate advocate for the Ozark Highlands and Missouri’s beverage industries. He is also a part time British diplomat, serving as His Majesty’s Hon. Consul to Missouri. Distilling has been part of the 200 year history of the Ozark Highlands.
