Chimay Trappist Ales

We always feature "new" items on the blog.
This year we want mix in some classics
in each department whether it be whiskey, wine,
beer or even cheese.
They are classics for a reason, great quality that stands the test of time!  Will post some "classics" periodically for your reading pleasure.

Chimay is an authentic Trappist ale.
That means that it is brewed within the walls of a Trappist monastery under the supervision and responsibility of the monastic community, which is involved in the entire process of making and selling the ale.  The bulk of the revenue that this activity generates is used to finance social services and cover the community’s needs.

The Chimay Red and the Blue are two classic beers from Belgium
(We also have Chimay Cinq Cents, Chimay Gold and Grande Reserve Barrel Aged in stock)

Chimay has been stocked in our stores for at least 30 years!  I cannot remember a time when it was not on our shelves.

Chimay Red Premiere Trappist Ale
Style:  Abbey Dubbel

Abbey Dubbel:  These are dark, malty, yeasty strong ales in the Trappist tradition, but produced (mainly) by secular brewers. Dubbels range between 6.5-8% abv, and have a dark brown, cloudy colour, and a palate mixing malt, a lush fruitiness, and yeast. They are typically bottle-conditioned.
(other Dubbels include St. Bernardus 8, Westmalle Dubbel, Unibroue Maudite, New Belgium Abbey Dubbel, Sierra Nevada Ovila Dubbel)

Rated 97/100 RateBeer
Bottle Conditioned

Ingredients: Pilsner malt (French barley from Champagne); hop extract from German Hallertaur (aroma) & American Galena (bittering) hops. Yeast & liquid invert sugar added to the bottled beer. Chimay Red is noted for its coppery colour which makes it particularly attractive. Topped with a creamy head, it gives off a light, fruity apricot aroma produced by the fermentation. The taste perceived in the mouth is a balance confirming the fruity nuances noticed in the fragrance. Its taste, which imparts a silky sensation to the tongue, is made refreshing by a light touch of bitterness. To the palate, the taster perceives a pleasant astringency which complements the flavour qualities of this beer very harmoniously. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.

Chimay Blue Grande Reserve Trappist Ale
Style:  Belgian Strong Ale
Belgian Strong Ales can vary from pale to dark brown in color, darker ales may be colored with dark candy sugar. Hop flavor can range from low to high, while hop aroma is low. The beers are medium to full-bodied and have a high alcoholic character. Types of beers included here include tripels, dubbels and ultra-strong abbey ales.
(other Belgian Strong ales - Rochefort Trappiste 8, Mikkeller Nelson Sauvignon, Gouden Carolus Classic, De Dolle Oerbier)

Rated 100/100 RateBeer
Bottle conditioned
Chimay Blue is principally distinguished by its character of a strong beer. This is a beer whose fragrance of fresh yeast with a light, flowery rosy touch is especially pleasant. Its flavour, noticed when tasting it, only accentuates the pleasant sensations perceived in the aroma , while revealing a light but pleasant touch of roasted malt. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.

Makers Mark Kentucky Bourbon Whisky

We always feature "new" items on the blog.  This year we want mix in some classics in each department whether it be whiskey, wine or beer.
They are classics for a reason, great quality that stands the test of time!

Makers Mark Kentucky Bourbon Whisky...$19.99

compare to $21.69 at Total Wine and More
This one changed the way we think of bourbon, all because one man changed the way he thought about making it. Bill Samuels, Sr., simply wanted a whisky he would enjoy drinking. Never bitter or sharp, Maker's Mark is made with soft red winter wheat, instead of the usual rye, for a one-of-a-kind, full-flavored bourbon that's easy to drink. To ensure consistency, we rotate every barrel by hand and age our bourbon to taste, not time. Each and every bottle of Maker's is still hand-dipped in our signature red wax at our distillery in Loretto, Ky., just like Bill, Sr., would have wanted.

Routestock Pinot Noir Sonoma Coast

Yet another amazing Pinot Noir Deal
2016 Routestock Pinot Noir Sonoma Coast...$19.99
This is a screaming deal for a wine of this quality: a light, delicate and earthy expression of the grape that's stemmy and spicy. Forest floor, bark and dark brooding fruit meet a tangle of tight-woven acidity dipped in orange zest.
Rated 93/100 The Wine Enthusiast

Chateau Virgile Cuvee L'Eneide

Syrah Based Wine from 90 year old vines!
2016 Chateau Virgile Cuvee L'Eneide...$16.99

60% Syrah + 30% Grenache + 10% Mourvedre
Tasting Notes: The “Cuvée L'Éneïde really shows off the great terroir at Château Virgile. The vines, situated at the edge of a plateau, produce a very dark and concentrated Costières de Nîmes. The nose is intense with cherry and black raspberry notes. In the mouth the wine is dense with rich black fruit flavors complemented by hints of black pepper and garrigue. The wine finishes with ripe round tannins. This is a crowd-pleasing wine, that is an excellent complement to classic dishes, like steak au poivre. Enjoy!

Crozes Hermitage Rouge - 90 Points

2016 Laurent Habrard Crozes Hermitage Rouge...$25.99
Raised mostly in tank, the medium to full-bodied 2016 Crozes Hermitage blends fruit from the granitic north with the galets roulés of the south. It's floral, redolent of violets and jasmine, then plump and supple in the mouth before fading a bit on the finish. Drink it young.
Rated 90/100 The Wine Advocate

Robert Mondavi Napa Valley Cabernet

2015 Robert Mondavi Napa Valley Cabernet...$23.98
The 2015 Cabernet Sauvignon (Napa Valley) is a fabulous entry-level wine from Mondavi, not to mention one of the very best values readers will find in Napa Valley. Rich, succulent and inviting, the Napa Valley Cabernet captures the best qualities of the year in a forward, voluptuous style that make it impossible to resist young. Succulent dark cherry, plum, new leather and dark spice notes wrap around the juicy finish. This is an unreal level of quality for a wine at this price point and a production of around 100,000 cases.

It’s 7%, but totally crushable — it’s not quite like any other IPA you’ve had. Big, bracing, piney hop flavors meet a tropical bouquet of Eureka, Nugget, Citra, Mosaic, and 06277 hops. There’s a balanced bitterness that blends seamlessly into the light to medium body.
Sip it or rip it. Whatever. We’re not your mom.

Suntory Haku Vodka

Suntory Haku Vodka...$25.99
Contrary to what the West may perceive, Japanese white rice is never considered as a "staple" as a Japanese meal. To this day pure white Japanese rice is respected as a luxury. Traditionally white Japanese rice was always reserved for worship, and for the wealthier noble classes, including the imperial family. Milled and polished to perfection, white rice is revered for its mild and subtly sweet flavor.

Part of Haku’s unique creation process, the bamboo charcoal filtration is a Suntory proprietary method. Like a sponge, the charcoal absorbs the impurities present in the distillate, eliminating anything that might detract from the taste. This gives the vodka a clean and clear flavor. Moreover, the minerals from the bamboo charcoal add a remarkably smooth and mellow character.
The use of bamboo charcoal for water filtration is one of the fundamentals of Japanese culture and goes back to ancient Japan where charcoal was said to “sweeten” the water for tea. It is known for its incredible filtering ability, which comes from its super-porous structure — 3 times more porous cavities per gram than other wood charcoal. As bamboo is a fast-growing plant, supply is abundant and sustainable in Japan.

Suntory Roku Craft Gin

Suntory Roku Craft Gin...$23.99

Each botanical has been harvested at the peak of its season to extract the best flavour, and distilled to fully embody the blessings of nature.
The harvest of the four seasons has been blended to create ROKU's balanced flavour.

Style: Sour Mashed Ale With Pineapple
Malts: Flaked Oats, Pilsner, Rye Malt, Wheat
Hops: Citra, Tettnanger
7,1% Sour Ale brewed with 1 Ton of Pineapple pr. 1000L
Pineapple is one of those fruits that are loved and hated. Amazing in a Pina Colada, decent in a fruit salad, outright disgraceful on pizza. We put it in a beer – we put a lot of it in a beer. In the glass, 1 Ton of Pineapple might look like a hazy IPA but fear not, it’s just Pineapple juice.

To Øl Tropical Rumble

To Øl
Tropical Rumble...$3.99 / pint can
Style:Session IPA w/Mango, Peach & Passion Fruit
Malts:Melanoidin, Pilsner
Garden of Eden finally got a sibling! A hoppy, fruity and most definitely a drinkable beer packed with Passion fruit, Peach and Mango.
Heaps of fruity mosaic hops paired with the best fruits we could find.

Grimm Super Spruce Dry Hopped Sour

Grimm Super Spruce Dry Hopped Sour...$5.19 / 16oz can
Super Spruce owes its immense pine aromatics to a double dose of resin. The new growth of spruce trees layered with Chinook hops create a complex profile of fresh pine that includes floral, citrus, cola, and bubble gum undertones. This unboiled beer is luminous and hazy with a grapefruit-like acidity that perfectly showcases the bright coniferous flavors rounded off by a touch of sea salt.
