The red 2022 Nativas Tinto was produced with old-vine João de Santarém, the local old clone of Castelão. The grapes were foot trodden in lagar with a short maceration of five days, then the wine aged in stainless steel. They don't like the oak with reds; they used barrels for the whites but not for the reds. It has a balsamic nose with notes of bay leaf. It's not a fruit bomb and has a tender palate with polished tannins—from the shortish maceration—with integrated acidity in a warmer and drier year.

The 2022 Nativas Tinto from Ramilo is composed entirely from Castelão. The grapes are destemmed and then foot trodden in open air lagars, prior to fermentation with indigenous yeasts and the 2022 version tips the scales at a svelte 12.5 percent alcohol. The wine’s aromatic constellation is bright and classy, offering up notes of red and black cherries, dark berries, a touch of tree bark, a lovely base of soil, just a wisp of sweet botanicals and a smoky topnote. On the palate the wine is bright, fullish and shows just a touch of spritz, with lovely intensity of flavor and bounce, fine balance and a long, focused and complex finish. This is light on its feet and a beautiful accompaniment to wide range of dishes at the table. 2025-2035.

A beer that is distinctive to the city of Cologne, the name Kölsch is protected by law so that only beers brewed in and around the city can bear the name. If it’s not from Cologne(Köln), then it’s not Kölsch.
This all natural, top-fermented crisp and refreshing beer is famous for its malt aroma and delicate flavor of vanilla and flowery hops. The original Früh Brew Haus is the second largest beer hall in Germany with over 2.5 million visitors annually.


“Real” Kölsch refers to beer that is brewed in Cologne (Köln), Germany, under protected rules, not just a Kölsch-style ale.

The Emerald 1865 Straight American Whiskey is made from a mash of malted barley, unmalted barley, rye, and oats. Once the grains have been harvested, they are milled and mashed before being distilled on a handmade, direct-fired alembic pot still.

Here’s what you need to know about the French white wine that is a surprisingly great value....

The Chablis region is divided into four AOCs: Petit Chablis, Chablis, Chablis Premier Cru and Chablis Grand Cru. One of the key attributes that distinguishes these Chardonnay-exclusive AOCs from each other is soil type. Grapes in Petit Chablis are grown on Portlandian-limestone soil, while grapes in the other three AOCs are grown on Kimmeridgian soil, which imparts a characteristic minerality for which Chablis wines are well known around the world. Chardonnay grapes grown on Portlandian soil produce wines that are lighter, fresher and more straightforward, with slightly less minerality than grapes grown on Kimmeridgian soil. 

Climate Change to the Rescue

Climate change has significantly improved Petit Chablis’s lot, as it has the Chablis region as a whole—grapes are noticeably riper than they were 20 years ago. Planted at higher elevations, grapes in Petit Chablis that once struggled to ripen are now fully ripening and perfectly positioned to benefit from climate change. This has transformed a once austere-wine-producing appellation into one that is approaching the quality levels of Chablis AOC.
Don’t Let ‘Petit’ Mislead You
So, when you see “Petit Chablis,” don’t think “Little Chablis.” Think “Portlandian Chablis,” which more accurately captures the wine’s relationship to its terroir and with the other Chablis AOCs.
Value That’s Hard to Beat
So, why should you be paying attention to Petit Chablis now? The wine is a great value with increasing quality. It’s approaching the point where it can compete with Chablis, even if it’s not quite there yet.
