Why did we wait 15 years to release our 2005 distillation of The DogFather? It is just the right amount of age to accentuate our unique mashbill and give DogFather a smooth refined finish.
Bourbon of this stature is a rarity. At its birth, a full barrel of bourbon has the potential to yield up to 275-300 bottles (750mls.) Over time, the evaporation is significant. Some barrels might yield only a dozen bottles in the end or, worst case, dry up completely.
The DogFather pays tribute to our fabled distillery dog who could hold court with anyone. The label depicts a speakeasy bar scene, reminiscent of Prohibition era counterculture, when ladies and gents with a bourbon swagger always dominated the room.

Our bourbon is a remarkably smooth combination of corn, rye and barley. Once distilled, we age our bourbon in new American Oak barrels producing a rich, deep yet sweet spirit.
WOOD : AMERICAN OAK
Now that our masterpiece is bottled, our patented In-Bottle Finishing technique begins. Unlike traditional finished whiskey, we do not rest our whiskey in a secondary barrel, but finish our whiskey "in-bottle". We do this by resting a spiral cut piece of barrel wood in the bottle. This spire, is made of American Oak, which contains hundreds of naturally botanicals, ranging from butterscotch to vanilla to toasted marshmallows.
FIRE: MEDIUM TOAST
Fire and heat are used to toast our spires, extracting botanicals and flavor expressions that are imparted to our bourbon and finishing our spirit. For Bourbon & Spire, we expose the spire to a medium toast to extract naturally occurring vanilla & coconut botanicals from the wood.

Our Wheat & Spire begins with a remarkably smooth combination of 51% corn, 45% wheat and 4% malted barley. Once distilled, we age our bourbon in new American Oak barrels producing a rich, deep yet sweet spirit.
WOOD: FRENCH OAK
Now that our masterpiece is bottled, the work of finishing begins. Unlike traditional finished whiskey, we do not rest our whiskey in a secondary cask, but finish our whiskey in-bottle. We do this by placing a 5” long spiral-cut piece of wood, cut from the same species of wood as the finishing barrel into our bottle. In the Wheat & Spire, we cut a Spire from French Oak, porous and rich, containing nearly twice the amount of natural botanicals as American Oak, creating a rich, fruity, silky finish.
FIRE : MEDIUM+ TOAST
Before we place the spire of wood into the Wheat & Spire, we expose it to fire, toasting the wood to the perfect degree that will produce a finish that is deep and rich with subtle notes of fruit and vanilla

Verney Vermouth comes from an old recipe created by Abbé Edouard Berard, a botanist from the Aosta Valley region of Italy, the company says.

Needs a couple of years to come completely together. 55% cabernet sauvignon, 31% merlot, 7% petit verdot, 5% cabernet franc and 2% malbec. Drink after 2022 and onwards.
