Noble Oak - Double Oak Bourbon..$31.99 (in stock now)

A unique award winning bourbon with a worthy purpose. We at Noble Oak are fanatics about wood. That’s because 70% of a bourbon’s flavor comes from the wood. With Noble Oak, we elegantly marry two of the world’s most coveted types of oak used in whiskey making: American White Oak and Spanish Sherry Oak. We use time honored methods and our patented Compression Finishing™ process to create an unrivaled bourbon with body, deep color, and richness of flavor from some of the finest sherry oak staves. The result is a Great Bourbon with a Noble Heart. -- Noble Oak

Woodford Reserve / TWCP Double Oaked Single Barrel (tasting only, not for sale)

45.2% ABV
DOUBLE OAKED
An innovative approach to twice-barreled bourbon creates the rich and colorful flavor of Woodford Reserve Double Oaked. Uniquely matured in separate, charred oak barrels - the second barrel deeply toasted before a light charring – extracts additional amounts of soft, sweet oak character.
Woodford Reserve Master Distiller Chris Morris discusses the unique and innovative process that creates Woodford Reserve Double Oaked.

Oak & Eden TWCP Wheat &Spire (tasting only not for sale)
In a traditional bourbon, you’ll find a mash bill of corn, rye, and malted barley. Swap the rye with wheat, and a whole new world of flavors open up. With all the sweetness and creaminess traditionally found in bourbon, but with virtually no bite on the finish, Wheat & Spire is among the most pleasant and drinkable whiskeys in the Oak & Eden family. We then bring this whiskey to life with a fired French Oak spire, introducing new, silky botanicals coming naturally from the French Oak. -- TWCP

We love these spirits from Forthave. very small production with attention to detail, Come in, taste and why we dig ‘em!

A quick word from Forthave
The distillery was founded by two friends: painter Aaron Sing Fox and writer/producer Daniel de la Nuez. We use only plant-based ingredients in our spirits. Our library of botanicals includes over 200 different types of herbs - roots and barks, leaves and flowers, and fruits and seeds - and from that collection, our spirits are born. We macerate in stainless steel tanks, use no artificial filtering agents or artificial colors, and the only sweeteners used are raw: organic turbinado sugar or raw honey from Upstate New York. Almost all of the ingredients are USDA organically certified- the few that aren’t, have either been grown by small farmers without certification or wild foraged.

J.W. Dant BIB

Check this amazing article below - here are a few highlights from the article

Bernie Lubbers, Heaven Hill brand ambassador and bottled-in-bond evangelist. The distillery is known for famous bottled-in-bond brands like Henry McKenna, but Lubbers tells us the bottom shelf J.W. Dant has more in common with these award winners than you think.
The J.W. Dant recipe is regular Heaven Hill bourbon – we don’t put a brand on our barrels, it just says bourbon whiskey,” explains Lubbers. “So it’s our traditional recipe, and when you think about it, the barrels could be Henry McKenna Bottled-in-Bond, which won Best Whiskey in the World, or it could be 12-year-old Elijah Craig Barrel Proof, which won Whisky of the Year. Apparently, that’s a pretty good recipe,” he laughs. “It’s just six years younger – Dant is [at four years] the youngest brother of Henry McKenna, but still damn good.” -- The Bourbon Review

From the article, it looks like the 1.75 for no longer being made, we bought everything we could.

Only found in a few places outside of Kentucky, and The Wine and Cheese Place is one of them!

"While the distillery has discontinued the 1.75-liter sizes of J.W. Dant, Lubbers assures us that the traditional 750ml is here to stay. However, that’s no reason not to stock up when you see it. The brand is very tricky to find outside its home state, spotted sparingly in Indiana and a couple other cities," -- The Bourbon Review

J.W. Dant is the $15 Bottle You Need to Build Your Bourbon Bunker
Imagine arriving in Bardstown on your first trip to the Bourbon Trail, with your eyes peeled for rare finds like King of Kentucky that just don’t seem to make it to shelves in your city. You head off the beaten path, asking clerks at liquor stores on country roads if they happen to have any Michter’s 10-Year tucked away and peeking on top shelves for any dusty bottles of BTAC that have been waiting for a whiskey lover to find them for years. Discouraged, you come away empty-handed, contenting yourself with distillery-only releases like William Heavenhill and special Four Roses Single Barrels.

But what if we told you one of the best bottles to buy while in Kentucky was below your sightline all along, and would barely put a dent in your bourbon budget? That’s right, for less than $20, you can try a bottled-in-bond Kentucky classic that will work for cocktails and neat pours alike – and has a stamp of approval from bartenders and bourbon lovers all over the Commonwealth.

J.W. Dant has had a home at Heaven Hill Distillery since 1993, when it was purchased from United Distillers (now Diageo). It was a hugely popular label in its heyday with a name that dates back to 1836, when Joseph Dant first began distilling out of a hollow log.

The logo hasn’t changed in a century and loyal fans have kept it as a daily drinker for decades, but the brand perhaps has no bigger fan that Heaven Hill’s Bernie Lubbers, Heaven Hill brand ambassador and bottled-in-bond evangelist.

“It’s just six years younger – Dant is [at four years] the youngest brother of Henry McKenna, but still damn good.”

Bottled-in-bond bourbons, by law, must be a distilled by the same distiller at the same distillery in the same distilling season, aged a minimum of four years in a government bonded warehouse, and bottled at exactly 100 proof. It’s been a seal of quality since the law passed in 1897, but Lubbers believes it’s just as important today.

“J.T.S. Brown and Evan Williams White Label are other four-year bottled-in-bonds – all made from the same recipe at the same proof and same age, but we have ten million barrels so we’re able to make them taste a little different.”

The brand has quality and the nostalgia factor in spades, but it was also an important part of building the Heaven Hill business. As the largest family-owned distillery in Kentucky today, Heaven Hill built much of their initial might on brands they bought from other conglomerates.

“We’d just bought the brand and invested a lot of money in this brand and these barrels too, that are in inventory, so what a genius way to build a distillery that only has “x” amount of capacity. The key was buying those old brands, don’t screw them up, and sell them at a great price. The people that drink it like it – so don’t mess it up. It’s the people that don’t buy it that make fun of it – but once you buy it and you drink it, you like it.”

And today, more and more people are liking it.
“Look at Coor’s Banquet, PBR, and Miller High Life – they’re cool again, those labels haven’t changed and bartenders still drink them all over the country and I think that’s one of the keys too is to not change. It’s to Max Shapira credit that he kept these brands alive.”

While the distillery has discontinued the 1.75-liter sizes of J.W. Dant, Lubbers assures us that the traditional 750ml is here to stay. However, that’s no reason not to stock up when you see it. The brand is very tricky to find outside its home state, spotted sparingly in Indiana and a couple other cities, but usually not too tough to find in Kentucky – even though people usually come looking for something else.

“We have some of these little gems that are only in a handful of markets, and we’re the home market so we get to be selfish with J.W. Dant,” admits Lubbers. “When everyone sees J.W. Dant, they say they haven’t seen it before, but that’s because your eyes are looking up. You’re up searching for gold dust on the top shelf, your Parker’s and your Elijah Craig Barrel Proofs, and you should always grab the gold dust when you see it. But remember to look down and see the bricks of gold on the bottom shelf, and put one of those in your cart too.”

Each single cask of whisky matures its contents very differently, imparting its own character to the whisky it holds and, as a result, there are never two Adelphis quite the same.

2021 Rieslingfreak Polish Hill No.2 Riesling...$25.99
The Polish Hill River Riesling comes from a single block in the Polish Hill sub-region of the Clare Valley. John Hughes thinks this vineyard produces the best fruit of all his vineyard sources.Has some generous fruit with strident mineral notes, as well as pure lime. There’s flesh and weight to the palate. Quite fleshy and concentrated with zesty acidity. So drinkable now and will age well. Screw cap.
Rated 95/100 James Suckling
Bright, pale yellow colour, with a very attractive flowery bouquet: gardenia, dried flowers, perhaps boronia. The palate is intense and refined, crisp and linear, with lovely flowing harmony and length. Clean, soft but dry finish. A beautiful young riesling. Grapes from the Jaeschke family vineyard. Drink: 2021-2033

2020 Château Maison Neuve Sauvignon White Bordeaux...$15.99
100% Sauvignon Blanc from old vines
Great White Bordeaux!
This wine presents a pale yellow color that is very fresh on the nose with the classic Sauvignon characteristics of gooseberries. Dry and full bodied, its finish is long and mellow with just a hint of citrus. The wine is made with very low yields from 25 year old vines.

2019 Domaine de la Combe Muscadet Sevre et Maine...$18.99
Sur Lie

100% Melon de Bourgogne
The Vineyard is located in the "lieux dit » La PĂ©tière in Saint-Fiacre distinguished by its particular topography named « Combe » which is a sort of valley. Today Pierre Henry Gadais is the only wine grower to own this terroir. For this reason, it is considered a Monopole. In addition, « La PĂ©tière », located nearby, used to be a pre-historic village. With a total of 9 hectares, planted with Melon de Bourgogne, the vineyard is one of the last to exclusively produce Muscadet. Pierre Henry has always believed in the Melon but also in the traditions. For him, the new generation is changing the variety and by doing so, losing the appellation. Pierre Henry does not want Muscadet to become a new world wine region.

2020 Domaine Cédrick Bardin Pouilly-Fumé...$26.99
100% Sauvignon Blanc - Loire Valley
"Made from a blend of four terroirs, this Pouilly Fumé is the heart of our production." - winemaker
The intensity and richness of this wine are impressive. They promise good aging, with a texture that has a taut citrus-zest character as well as powerful white fruits. Green-fruit acidity gives both texture and freshness. Drink from 2022.
Rated 91/100 The Wine Enthusiast
Ripe tangerine and lemon mousse flavors are flanked with vivid undertones of flint, heather and grapefruit that are lengthened out on the long finish. Drink now. 5,833 cases made, only 450 cases imported

Laphroaig 10 Year Old Cask Strength Batch #14

Batch 14 is here!

Laphroaig 10 Year Old Cask Strength Batch #14....$81.99
58.6% ABV

LAPHROAIG CASK STRENGTH IS AN ISLAY SCOTCH, BOTTLED AT NATURAL DISTILLERY STRENGTH AND NON-CHILL FILTERED
It has all the genuine depth, taste and texture associated with sampling whisky at source. Laphroaig whisky is matured in seasoned oak barrels, which are charred before filling to impart a slight sweet vanilla nuttiness. Laphroaig 10 year Cask Strength is barrier-filtered, only just, to remove the small char particles. This means you can enjoy exactly as we made it, with very little intervention.
In extremes of temperature and when you add water it may appear a little cloudy – this is the natural condition of a peated whisky of such uncompromising purity. Adding a little water releases a rich aroma of peat smoke with some sweetness and strong hints of the sea. Emphatic, full bodied and utterly unforgettable – we like to think it’s the purists' choice.

Gouden Carolus Belgian Single Malt Whisky

Gouden Carolus Belgian Single Malt Whisky...$56.99

Gouden Carolus Single Malt is a refined whisky distilled from the mash of Gouden Carolus Tripel beer. Originally brewed for the Knights of the Golden Fleece in 1491, this pleasant golden blond beer is preferred by all who love heavier, somewhat seasoned, full-bodied, and refreshing beer.

A first for Belgium are the hand hammered, copper pot stills, in which the pure mash is distilled. The result is a pure and clear distillate. The ensuing aging in First Fill Bourbon casks followed by a further aging in ‘Anker’ casks (oak casks reworked by the cooper according to Het Anker’s own specifications) results in a refined whisky with a rich and balanced taste. The subtle fruit aromas are delightfully enhanced by hints of wood and vanilla.

  • Bottled at 46% abv, Non-chill filtered, natural color
  • Double distilled through a wash still and spirit still
  • Their stills are custom made by the Forsyths in Rothes
  • Their copper stills are hand-hammered, which is a first in Belgium
  • Jim Swan was a consultant for the distillery. He was also an instrumental consultant for Kilchoman, Kavalan, Penderyn, & Milk & Honey (amongst others).
  • The whisky is matured initially in first-fill Bourbon casks, and then in a ‘Het Anker’ casks – ex-wine casks which are scraped and charred according to the distillery’s own formula.
  • The bottle is gorgeous and unique, the rest of the magic is in the bottle

Wiseacre Tiny Bomb American Pilsner...$9.99 / 6pk 12 oz cans
Boom! The soft waters of Pilsen, Czech Republic birthed this classic style centuries ago & the waters from the Artesian wells in Memphis are perfect to create our own version today. Pow! This beer is made with German pilsner malt and is spiked with local wildflower honey. There are delicate herbal aromas wafting forth from this crisp, smooth Pale Lager. Shazam!

Wiseacre Ananda IPA...$10.99 / 6pk 12 oz cans
Welcome to Shangri-La. Ananda is the ancient Sanskrit word for bliss & this dry hopped, juicy beer is our version of just that! Malted & flaked wheat create a velvety texture just before the mango and citrus hop notes explode into pure nirvana please in this quaffable IPA. Meditation of sophistication.

Wiseacre Gotta Get Up to Get Down Coffee Milk Stout...$10.99 / 6pk 12 oz cans
Magical natural process beans from the Konga region of Ethiopia lead the way in this beautiful coffee stout. This rare variety of coffee leads to aromas of sweet roastiness and flavors of blueberry pie. Lactose, or milk sugar, is added along with oats for a silky medium body and a lush finish. Red Bull and vodka done the long way for old men, not teenagers.

Wiseacre Puffel Hazy Double IPA...$2.99/ 19.2oz can
Wiseacre Puffel Hazy Double IPA...$11.99/ 4pk 16oz cans
At the dawn of Pangea and off the coast of the coast of an Archipelago that included Madagascar, New Zealand, and the Faroe Islands when reached by a ferry through a mystical portal to the center of earth you’d wind up in the upside down where Puffins, Pengwolfs and Porcas dominated air, land and sea. The temperature was always tropical winter with long sunny days and pillowy clouds of floof. Puffel hearkens this yesteryear of a supercontinent long forgotten with its cloudy cover, New Zealand bred Nelson Sauvin hops which bring cool climate white wine grape flavors, extreme fruitiness, passionfruit, and fresh crushed gooseberries. But beware! Hungry like the Pengwolf...it packs a deceptively potent punch.

Wiseacre Bow Echo Hazy IPA ...$10.99 / 6pk 12 oz cans
When you’ve reached your all time low, you need a parking lot veggie burrito and the warm snuggle of a stranger’s husky (probably named Stash), the winds of change may find this beer landing in your hand. A vigorous dry hopping with Mosaic, Citra, Denali, and Centennial hops add tons of citrus and ripe tropical fruit flavor while oats add the fluffy texture. It may look strange, but they say beauty is in the eye of the beholder (if you’re an IPA traditionalist we recommend closing them). However, you won’t regret trying this clouded up version. Your vision may be blurry from staring into life’s bowl of horseshoes or within the thought sausage of unintelligible words inside a glowing book of sleepless dreams, but Bow Echo will help your eyes climb to safety and the chilly water will take care of the rest.
