Ben Holladay Barrel Pick

We had an amazing trip to Ben Holladay Distillery!
Barrel buying trip!

The Wine and Cheese Place went out to the Ben Holladay Distillery to pick out a few barrels. We tasted some amazing barrels with Kyle Merklein, Holladay’s Master Distiller.

We picked out two stunning barrels - an almost 7 year old Soft Red Wheat at 122.5 proof and an Original Mash Bill Bourbon at 7 years 4 months coming in at 124.2 proof. We tasted the barrels blind, but Kyle says we definitely have a style, always on a high floor and always higher proof.   He said he could pick out barrels for us without us tasting - haha

We will see these barrels sometime in the fall.

Barrell Craft Spirits Gold Label Bourbon is a blend of 16- and 17-year-old straight bourbons. Barrels for this release were selected from four different collections: cherry bomb barrels with a rich mouthfeel, nutty oak-forward barrels, high proof and high complexity barrels, and barrels with pronounced milk chocolate notes. The last group underwent a secondary maturation in toasted virgin American oak casks before being added to this intricate and seductive blend.

The foundation of Barrell Craft Spirits Gray Label Seagrass began with two groups of 16-year-old 100% Canadian Rye barrels - one with bright citrus and crisp green apple notes and the other with earthy spearmint notes. A portion of the first group was finished in Apricot Brandy casks, a portion of the second group was finished in Martinique rhum barrels, and a blend of the first and second groups was finished in Malmsey Madeira barrels. When each set of secondary maturation flavors peaked, those casks were pulled and slowly married into the final blend.

Founders Liam Hughes and Mike Hayward embark on a mission to bring single malt whisky distilling back to the city of Glasgow and officially incorporate ‘The Glasgow Distillery Company Ltd.’ Named after one of the first licensed distilleries in Scotland. The original Glasgow Distillery Company was founded in 1770, subsequently operated under a number of different names, and produced unpeated, peated, and triple distilled single malt until its eventual closure in 1902.

A SPIRIT IS BORN: On the 5th March 2015, the very first cask of single malt scotch whisky is filled. In 3 years, Glasgow will once again have a single malt whisky to call its own

The Original, is the whisky that started it all. Our inaugural expression, The Original is a fresh and fruity single malt that combines the finest concerto malted barley with the purest Scottish water from Loch Katrine.
The Glasgow Distillery 1770 The Original is matured in 1st fill ex-bourbon barrels and finished for 6-9 months in virgin oak casks. This is a non-age statement whisky, but the actual age is around 4 years old.
Nose: Malty and sweet. Fruity. Mild alcohol sting. Vanilla and orchard fruits. With time more malty. Hints of cinnamon and milk chocolate. Very nice development with further time. Lovely vanilla notes and hints of tropical fruits.
Taste: Medium body. A fair bit of pepper on the palate. Malty. Chocolate. Dry-ish. Clean and fruity.

Tasting Notes:
It needs roughly 10-15 minutes to open up before I truly recommend consuming. No matter what stage of evolution the pour is in taffy, brown sugar and sarsaparilla. But once it initially opens it is so reminiscent of Barbados and Australian style rum, give it a little more time and those rum profiles take a back seat. Enter your friend's apples and mid age range calvados come say hi and after a little longer of a wait it seems like you showed up to a carnival and decided to snack on cotton candy and bubble gum.  I simply describe it as spicy, dry and complex.

2022 Laberinto Cenizas Sauvignon Blanc...$21.99
The 2022 Cenizas de Laberinto Sauvignon Blanc is sharp and vibrant, with 12.6% alcohol, a pH of 3.04 and 8.77 grams of acidity. It was produced with grapes from vines planted in 1993 on volcanic ash soils. In 2022, Tirado macerated a bit more, looking for a little more structure. The wine didn't go through malolactic and was bottled after eight months with lees. This is sharp as a knife, with subtle aromas of meat broth and savory rather than floral or exotic, less varietal, complex, austere and mineral, with a rocky sensation. It's textured and tasty, clean, long and nuanced, fresh and balanced, with the cool sensation of the cold nights. He's worked a lot through decantation to be able to bottle the wine unfiltered, and the wine is bright and clean. It's an amazing wine, one of the finest values in Chile. 25,000 bottles produced. It was bottled in November 2022. Experience with older vintages tells me this wine is going to develop nicely in bottle.
