Back story:
It is well known that four cups of wine are drunk on the first night of Passover. But little is understood about the fifth cup. In the vast expanse of the Babylonian Talmud, the fifth cup is mentioned just once, giving credence to the assumption by some that it must have been an error. In most printed versions of the Talmud today the ‘fifth cup’ has been removed.

Throughout history though, many Torah luminaries have argued that the ‘fifth cup’ text should remain. In the 16th century, the famous Maharal of Prague urged that the unabridged version of the text be followed: “…over the fourth cup one completes the Hallel. Over the fifth cup one recites the psalm known as the Great Hallel.”

He writes that Hallel (Psalms 113-118) and the four cups of wine at the Seder are related to redemption. The Great Hallel (Psalm 136), however, is one step above redemption and associates with the number five, for it states that the Lord provides every single creature with food. The Talmud aptly expounds that providing “the sustenance of an individual is even more difficult than redemption.”

As such, the fifth cup has its rightful place at the Passover seder. It serves as a testament to the Almighty who not only redeems, but also provides sustenance directly and not through an intermediary. The Fifth Cup™ liqueur was developed to acknowledge this wonder.

Tender and lean, it is deep pink with a layer of fat around the perimeter, with a savory and nutty flavor and a hint of smoky spice. Our lomo is the only loin made from 100% Ibérico pig available on the U.S. market. All Dehesa Cordobesa products are “de Bellota 100% Ibérico,” meaning they come from 100% purebred, acorn-fed Ibérico pigs. This is the highest possible classification of Ibérico meat, and is quite rare. Much more common are several lower quality categories that are still classified as Ibérico, but are non-free-range (Cebo) or only 50%/75% Ibérico. For this Lomo, the pigs spend their last 3-4 months eating acorns until they reach the correct weight for slaughter. They roam freely within the nearly 1 million acres of dehesa (oak forest) in the Valle de los Pedroches in Córdoba. This dehesa is notable for its Encina Oak trees, which produce acorns considered to be the sweetest in Spain, giving the meat its unparalleled sweet and savory flavor.

My favorite in the lineup, the 2017 Pinot Noir Jensen Vineyard is stunning in every way. Gorgeous black raspberry fruits, lots of floral, scorched earth, and sappy herb aromatics, medium to full-bodied richness, flawless balance, and a great finish all make for one of the most captivating Pinot Noirs in the vintage. It's brilliant today yet should easily evolve for 15 years or more.

The 2017 Pinot Noir Jensen Vineyard is powerful and tightly wound today. That won't be an issue in a few years of course, but readers have to be patient. Star anise, cinnamon, dried rose petal, blood orange and mint give the Jensen an exotic feel that is impossible to miss. Deep and layered on the palate, the Jensen has plenty of depth, but the tannins need time to soften. I hope to taste this in another few years' time. The collection of three blocks in a sort of amphitheater yields a Pinot of real distinction.

Shows solid, spicy thrust on a long, smooth finish framed by velvety tannins. This is an exceptional example of an entry-level Châteauneuf-du-Pape.

Madame Ferando continues to knock it out of the park in just about every vintage, and this is well worth seeking out. The base cuvée is 85% Grenache and 5% each of Syrah, Mourvèdre, and Cinsault, aged all in concrete tanks.

The 2019 Châteauneuf Du Pape Collection Charles Giraud includes a big chunk of Mourvèdre and is 60% Grenache and 40% Mourvèdre that was partially destemmed and brought up in demi-muids. If offers a deep ruby/plum color as well as a rich, savory, complex bouquet of black raspberries, cassis, toasted spice, cured meats, and graphite. The Mourvèdre really shows in this beauty, and it's full-bodied, concentrated, and structured, yet never loses its seamless, flawlessly balanced profile. It's going to need 4-5 years of bottle age but will have 20-25 years of ultimate longevity. It's another thrilling wine from this estate.

The mineral and floral notes build on an insanely long, penetrating finish shaped by emerging, polished tannins. This monumental wine was fermented in concrete tanks and raised in demi-muids.

The 2019 Châteauneuf Du Pape Réserve Auguste Favier is based on 85% Grenache and 15% Cinsault, all from the Les Serres lieu-dit, and was brought up all in demi-muids. Black raspberries, spring flowers, pepper, and loamy earth and mineral nuances all make an appearance here, and this flawlessly balanced, medium to full-bodied Châteauneuf du Pape has incredible finesse and elegance while still bringing beautiful richness and length. It's not the biggest, richest wine in the vintage, but it shines for its complexity and seamlessness. It's pure class.

The 2019 Châteauneuf Du Pape Colombis comes from more sandy soils and is all Grenache raised in demi-muids. Wild strawberries, cherries, flowery incense, lavender, and loamy earth all make an appearance, and it's full-bodied, has a deep layered texture, ripe tannins, and a great finish. It's another wine that needs a few years of bottle age, but it will deliver the goods over the following 15+. This is Grenache at its most elegant and seamless.

Deep, shimmering ruby. Expansive, mineral- and spice-accented red and dark berry preserve, incense, cola and garrigue qualities on the finely detailed nose. Palate-staining cherry pie, raspberry, boysenberry, floral pastille and fruitcake flavors show uncanny energy for their depth. The spice and floral notes dominate a seriously long, sappy finish framed by velvety, well-knit tannins.

2018 Isabel Ferrando F601 Chateauneuf du Pape....$799.99
Named for the vineyard parcel from which it comes, the 2018 Chateauneuf du Pape F601 is entirely Cinsault, from vines planted in 1928. Aged in demi-muids, there are only 800 bottles of this new cuvée, so I suppose this review is largely academic. That said, when Cinsault performs like this, it's certainly worthy of note, as it's often used for rosé or (in Châteauneuf, an appellation where rosé isn't permitted) dismissed as a minor blending variety. This wine is anything but minor. Floral and spicy on the nose, supremely silky on the palate, nearly endless on the finish, it delivers the goods, cushioned by perfumed, herbal, cherry and raspberry fruit flavors. It's not quite as expansive or generous as the Grenache-based Colombis, but it might be more concentrated and longer on the finish. I've been deliberately conservative with my drinking window, as it's delicious now, but I wouldn't be surprised to see it showing well in a decade's time (assuming there's any left).

Then one fateful winter night in 1929, their world came crashing down during a sting that would land the brothers behind bars.Six long years later, Franklin D. Roosevelt pardoned the Taub brothers. They were able to reignite their family business with their brother Martin and help launch Baltimore Club Whiskey. This would set into motion a family tradition that would span generations. The brothers served their time, and now, you can spend time enjoying Jacobs Pardon, a fine American whiskey that pays homage to their rebellious roots. Its complex, smooth, timeless, and frankly, a little liberating. It would be a crime not to enjoy it.

NOSE:   Rich aromas of buttered sweet corn, brown sugar and espresso.

High West Whiskey Double Rye!
Marriage of two straight rye whiskies that combines the feisty properties of a high rye 2-year-old and the saddle smooth richness of a 16-year-old. The 2-year-old has a 95% rye 5% barley malt mashbill. The older rye has a "barely legal" rye mashbill of 53% rye and 37% corn. The extra age and corn provides some extra sweetness to calm the "bite" of the younger rye for a relationship that works. High west

Of all the beers in our Proprietor’s Vintage Series, Parabola is the most notorious. It is always a beast of a beer, with intense flavors of black cherry, dark chocolate, vanilla and roast coffee-- yet each annual release also bears its own subtle imprint. We took the extra step of aging the beer entirely in 12-year-old bourbon barrels for this latest edition. These older-stock barrels accentuated Parabola’s signature richness with vintage-specific notes of stone fruit, fudge, and tobacco.
