"Name the O'Fallon Beer" Contest Beer is here.  This is the beer that O'Fallon brewery allowed The Wine and Cheese Place customers to name the beer.  We held a contest with O'Fallon to name this beer back in April of 2010.  The winner was Craig B. of New Haven, Missouri for the name Sticke it to the Man.

Brian Owens' description the O'Fallon Sticke---

"So here’s the skinny on the Sticke! As you probably know the word “Sticke” is a mangled version of the “low german” word “stickum” which translates to “secret”. The secret lies in the recipe where only a small few knew what actually went into the beer. German brew masters of the day measured their ingredients by the bucketful and if they weren’t paying attention or maybe they had a bit too much beer to drink they sometimes added too much grain. They had to add more hops to balance the maltiness of the extra grains and ended up with a bigger and typically darker version of their Alt. Our version will be an Imperial version of the original. Coming in at 10% ABV this beer will be big and malty with hints of toffee and a subtle roastiness, but will be fully attenuated and relatively dry for being such a big beer. The hops that are used are of the German noble variety giving a healthy bitterness and a noble Pils hop aroma. There is a short list of people who will actually know the recipe and I think the winner of the contest ought to be one of those few."

Recipe of the Week



Persian Feta and Riso Pasta Salad
This is one of our favorite recipes for a summer cook out, or as part of a pot luck dinner. The only “cooking” is boiling the water for the Riso. The star of this dish is the incredibly flavorful, rich and smooth Persian Feta from Yarra Valley Australia and while perfect for this Pasta Salad it can be enjoyed just as easily simply spread on crusty baguette.


Ingredients:
  • 1 Can Yarra Valley Persian Feta   ***
  • 1 Box De Cecco Riso Pasta    ***
  • 1 Box Cherry Tomatoes (halved, quartered if large)
  • Fresh Basil Roughly chopped.
  • Salt     ***
  • Pepper   ***

-Add Riso to salted boiling water cook for 11 minutes.

-Once the Riso is boiled, rise with cool water to bring to room temperature, place in a bowl, add Persian Feta and some of the oil from the can. Mix to incorporate feta and riso.

-Add Tomatoes, Basil, Salt and Pepper to taste mix and serve.

There are 7,000 cases of the prodigious 2006 Proprietary Red Wine (a blend of 80% Cabernet Sauvignon, 10% Merlot, and the rest Cabernet Franc, Petit Verdot, and Malbec). Most of the fruit comes from the Stagecoach Vineyard and the Waters Ranch. Sweet, smoky, meaty aromas interwoven with melted asphalt, camphor, blackberry, cassis, and charcoal scents emerge from the complex aromatics. In the mouth, the wine is full-bodied, displaying sweet tannin, a concentrated mouthfeel, and a long, heady finish with substantial fruit, glycerin, and extract. It should drink beautifully for 20+ years.

Tasting Notes:

A vibrant golden color leads to an intense nose of baked apple, pear and Meyer lemon with hints of caramel,spice and peach pie. Opulent and rich in the palate, with flavors of lemon cream, pear, butterscotch and floral notes that linger through the long finish.
Winemaking Notes:

Our Hommage Chardonnay was night harvested and delivered cold in the wee hours of the morning for immediate gentle and controlled whole cluster pressing, ensuring the highest quality grape juice possible. Juice with full solids was racked into barrels, and fermentation with natural yeast proceeded slowly in our chilly Cellar. After fermentation,the new wines were inoculated with amalolactic bacteria strain developed in Champagne which naturally deacidifies and stabilizes the wine without production of buttery flavors and aromas that can detract from our estate fruit personality. This wine was stirred frequently and aged sur lie (on yeast and grape solids)for 16 months without racking. In the summer of 2008,the wine was racked up to tank to prepare for bottling.

Belgian-Style Ale


The “Oud Bruin” or “old brown” style beers, brewed in and around Oudenaarde, on the river Scheldt in East Flanders, are notable for their complex combinations of malt, long boiling times (which provide some caramelization of the wort), and multi-strain, top-fermenting yeasts, some with lactic and acetic character. These are often “provision beers,” bottle-conditioned for cellaring, to be brought out when they can be savored. Their thirst-quenching sweet-and-sour character makes them perhaps the most refreshing beers in the world.

Our Oud Bruin is firmly in the East Flanders tradition. We used American 2-Row barley and German melanoidin malt (for red color) as well as maize (to lighten the body). The wort was boiled in the kettle for four hours and hopped lightly with Idaho Galenas for balance.


We fermented with a Flemish blend of yeast and bacteria cultures, including lactobacillus, pediococcus, and brettanomyces. It took six months at cellar temperature for the culture to achieve the style’s characteristic quenching sourness. Finally, we bottle-conditioned the beer according to the “methode champenoise,” so it can be laid down, to be brought out when it can be truly enjoyed.


Because of its lactic and acetic sourness, this is a wonderful beer for cooking and pairing with food. Unlike any wine, Oud Bruin complements vinegary dishes such as salads or even pickles. Its flavors will enhance those of shellfish, liver, rabbit, and game birds like quail. The acidity of the beer tenderizes beef and is ideal for braising—try it in the classic Belgian Carbonade Flamande.
