The Whiskey

The Pogues Irish Whiskey is a unique blend of 50% 10-year single malt Irish whiskey aged in sherry oak casks and seven year old single malt Irish whiskey aged in bourbon oak casks and 50% four year Irish grain whiskey aged in bourbon oak casks. The liquid has an aroma of malts and cracked nuts, with a sweet taste and a smooth, intense flavour. Notably, West Cork is Ireland’s only whiskey producer to malt its own barley, enabling exceptional precision and control over flavour profile. It is distilled using ingredients indigenous to Ireland, including locally grown grain and spring water from the idyllic River Ilen. It’s carefully crafted in small batches in handmade copper stills at West Cork’s distillery in Skibbereen, the cultural home of Irish whiskey.

Our whiskey is made by West Cork Distillers, one of Ireland’s last independent distilleries. From humble beginnings and the coming together of a Master Blender and his two fisherman friends it now has become a global success, built on friendship and a passion for innovation and quality. BenRiach 10 Year Old Single Malt Scotch Whisky...$44.99
Bottled at 43% vol, the BenRiach 10 Years Old is Classic Speyside in character. The cask formula focuses on ex-bourbon and ex-sherry casks – exactly the types of wood we favour at BenRiach. This fresh, lively, fruit-laden single malt captures warm oak spices, green apple, dried apricots, peach and banana with sublte touches of aniseed, loemon zest and barley.
NOSE:  A fresh and lively combination of crisp, green orchard fruits, stem ginger and hints of tangerine mellows to creamy vanilla with a delicate note of mint and a gentle twist of citrus, all held together with a sweet barley back note.
TASTE:  Warm toasted oak spices flood through green apple skins and dried apricots, ripening to hints of peach and soft banana. Subtle touches of aniseed and lemon zest create a contrasting edge to the fruit and add an intriguing character to the long, crisp barley finish.



BenRiach Curiositas 10 Year Old Peated Single Malt...$49.99
The BenRiach CURIOSITAS uses a heavily peated malted barley as the cereal varietal to produce a unique, fresh, peated expression. This rare peated single malt, from the Heartland of Speyside, has wonderful overtones of peat reek, combined cleverly with a background of fruity, floral, heathery notes and an appealing presence of Oak wood in the finish.  Traditionalists believe that peated malts achieve optimum balance of peat-bittersweet and oak infusion after 10 YEARS of maturation. In fact, peated BenRiach is a return to the ORIGINAL Speyside character and flavour of malts typical of the nineteenth century. Curiositas is a distinctive and welcome addition to the Speyside scene – this is a dram to be savoured with a dash of water.46% ABV
NOSE:  An explosion of aromatic peat reek, with fragrant hints of honey, fruit and mellow oak.
TASTE:  An avalanche of peat, followed by an extravagant and complex mix of fruit, heather, nuts, oak wood and spices.

The 2014 Pinot Noir Bien Nacido Vineyard opens with exquisite aromatics. Sweet rose petal, red cherry, cinnamon, mint and white pepper are all laced together. Deceptively medium in body, the 2014 possesses striking aromatic nuance and tons of class. Polished, silky tannins wrap around the inviting finish. This is another wine that could use another few years in bottle. The 2014 is a blend of 40 year-old Martini Clone Pinot and younger 777 Clone Pinot, all from the east end of the Q Block, done with around 10% whole clusters.

2014 Monegard Mugneret Vougeot Les Cras 1er Cru....$76.99
Grown a stone's throw from Clos de Vougeot, Les Amoureuses and Le Musigny, Vougeot wines are obviously strongly akin to these illustrious growths.
The 2014 Vougeot 1er Cru Les Cras comes from the domaine's 0.32-hectares of 35-year-old vine, which includes partial whole bunch fermentation. It has a very able bouquet with vivid raspberry coulis, wild strawberry and mineral scents; there is a hint of mint developing in the glass. The palate is medium-bodied with fine tannin, quite tensile in the mouth, plenty of sappy red berry fruit and a long, sustained finish. This would be one of my picks from the domaine in this vintage.

The intense acidity, bold fruit and chocolaty malt is layered with the deep notes of vanilla, spicy charred oak and rich caramels from the bourbon barrels in which this beer matured for more than a year.

Side Project Releases!

One more chance to get bottles

Friday February 10th.  Release of the "extras".  We saved 12 bottles of each the Side Project Beers, plus we will have the extras that people did not pick up and we will release them all with a version of our weighted raffle that we use for the Whiskey Reward Club. 
Each $60 spent in the last 6 months will count as a raffle ticket.  We will draw a name for each bottle we have left.    If you already got a bottle, you will not get a second one.  Sorry.  Going to go to people that did not receive a bottle already.



As I have been saying, this year is the 35th Anniversary for The Wine and Cheese Place.  We have a lot of surprises coming this year.  These Side Project releases are not surprises, but I think it is great that they are coming in our 35th Anniversary year.    We feel honored and privileged to be able to offer them to our customers.

The release party went great and we had a lot of great beer.  Of course, I forgot to take pictures again, but here are the remnants of a great time.

Kicking off our 35th Anniversary with a bang!!


Side Project Release Party- It was a great time!
Friday January 20th with Side Project owners -- Cory and Karen King (not sure if both are making it yet) from 5pm-6pm
This will be BRC invite only release party limited to 35 people.   Invites will go out either Sunday or Monday morning through the BRC - will do a combination of both beer only and overall purchases for the invites.  You will get a chance to taste all three beers and you will be allocated a bottle of Side Project Langst that night.  You will get to taste all 3, but only Langst is being released that night.   Deadline for purchases to count towards the party invites is (Tonight at 7pm)
  
Side Project Langst - Release date Saturday, January 21th.   This was one of the beers that we had the name the beer contest a few years back - read more.   Emails will be sent out Saturday morning.  On these releases, we will do a combination of both beer only and overall purchases for each release.  This one will be weighted more heavily towards beer only.   ($35 / bottle and we have 240 bottles)  Deadline for purchases to count for this release is Jan 20 at 7pm.

Side Project Black and Berry -- Release date Thursday, January 26th.  Emails will be sent out Thursday morning so that we can get them transferred to the stores that day.   On these releases, we will do a combination of both beer only and overall purchases for each release.  This one will be weighted more heavily towards overall purchases.   ($35 / bottle and we have 180 bottles)  Deadline for purchases to count for this release is Jan 25 at 7pm.

Side Project Derivation 6 -- Emails sent.   Emails will be sent out Thursday morning so that we can get them transferred to the stores that day.  On these releases, we will do a combination of both beer only and overall purchases for each release.  This one will be weighted more heavily towards beer purchases.  ($40 / bottle and we have 120 bottles--less 6 we used for the release party).  Deadline for purchases to count for this release is Feb 1 at 7pm.

Our 2012 Napa Valley Cabernet Sauvignon artfully combines the classic elegance of the old world and the ripe fruit of California. It displays an opaque garnet color with a bouquet driven by fruity aromas of blackberry liqueur and hoisin sauce. It also offers the savory components of sage and molasses. These complex aromatics are complemented by sandalwood and nutmeg characteristics indicative of American oak aging. This is a well-structured wine with a compact and rich mid-palate buttressed by silky tannins and generous acidity. Given proper cellaring, this wine will provide drinking pleasure through 2037.

Cherry Ale Aged in Maple Syrup Bourbon Barrels
We took a crisp, light-bodied cherry ale and hid it away in oak barrels that have held both bourbon and maple syrup. After a lengthy stint, it emerged a changed beer, blanketed in notes of warm vanilla and earthy sweetness. The wood proves itself the star of this beer, adding depth and taming the tart cherry while the maple imposes a velvety texture that lingers for not a moment too long.

A tart, barrel-fermented blueberry saison collaboration with Call to Arms. The name, Deinde Repedo, loosely translates to "Next Step". NextStep is an organization that aims to revolutionize the quality of healthcare for the physically-challenged. The beer's release today is timed with the conclusion of The Snow 2 Sand Charity Ride to raise awareness and support for NextStep. The bike ride started in Denver (at Call to Arms) and ended in Anaheim at Bruery Terreux for the beer's release.

Style: blended barrel aged sour ale
Cube Cuvée #1 represents the first in a new series of beers for us. Two years ago, we began stashing beers away in barrels to use in the production of blended sour beers that would include significant aging character. We finally have enough of these old barrels that we can begin to include them in blends. For this first release, we have selected barrels of 16 month old brown sour ale and 4 month old golden sour. Something in the ballpark of a Flemish Red, CC1 is refermented in the keg for a soft carb, and shows beautifully balanced dried fruit notes and a complex, oaky tartness. Meet George Grant of Glenfarclas!


 
We have not seen Glenfarclas 105 in years - maybe 10 years, I cannot remember.  No longer in our system, so that means it has been awhile!  Taste it on Monday with George Grant!

Glenfarclas Highland Single Malt 105 Cask Strength...$67.99
Colour: Deep peaty-gold.
Nose: Complex, oaky, apples and pears, and a tempting dark toffee sweetness.
Flavour: Dry and assertive, develops quickly to reveal a rich spiciness, combined with a hint of oak and sherried fruit.
Finish: Amazingly smooth for the strength; wonderfully warming and with a lingering smokiness, yet very rounded.
Comment: A great whisky holding all the flavours of all the Glenfarclas in one glass. Being so warming, this is the perfect Hogmanay dram. Don’t be afraid of the strength and order a 210, if you dare!
The smoothness makes the 105 drinkable at cask strength, but I suggest adding a little water to fully explore its great depth.
For its price to performance ratio, the Malt Maniacs named Glenfarclas 105 their ‘Bang for your Buck’ in 2004.

George, son of John, is the sixth generation of the family
and the company's Sales Director. George joined the family business in 2000 after working for another Scotch Whisky Distiller, and the Glenfarclas distributor in Hong Kong; Fine Vintages (Far East) Ltd. George is passionate about Glenfarclas and particularly enjoys introducing whisky lovers to the older expressions of Glenfarclas, those distilled by his grandfather and watched over by his father.

Being a relatively small company you won’t find Glenfarclas in every supermarket, however the family were delighted when their commitment to quality and the traditions of the whisky trade were honoured in 2006 when Whisky Magazine named Glenfarclas 'Distiller of the Year', for 'being consistently good and staying true to its core values'.

The prestigious ceremony saw the whisky industry's biggest names competing for a wide variety of awards, encompassing production and sales teams from distilleries around the world into one memorable event.

The panel of industry experts crowned our very own George Grant as Scotch Whisky Brand Ambassador of the Year, an undoubtedly deserved title earned from over a decade of tireless and passionate representation of the Glenfarclas brand.
