This unwavering focus on quality is still the cornerstone of our approach to winemaking today. The 2017 Vintage Port is a blend of 33% Touriga Nacional, 35% Touriga Franca, 15% Sousão and 12% Alicante Bouschet, plus miscellaneous others filling out the blend. This was bottled about a month before tasting after 18 months in seasoned vats, but the just-bottled sample was not really ready. This was instead a pre-bottling sample. It comes in with 115 grams of residual sugar.

Parmigiano Reggiano is produced exclusively in the provinces of Parma, Reggio Emilia, Modena, Bologna to the left of the Reno river, and Mantua to the right of the Po river: this is the area hosting the farms where the cattle are fed on locally grown forage. The feeding of cattle complies with the norms of a strict specification that bans the use of silage, fermented feeds and animal flour.
The story of Parmigiano-Reggiano is a long one, and also a slow one, following the natural rhythm of the seasons.
In fact, the minimum maturation time is 12 months, the longest among all the PDO cheeses, and only at this point can it be decided if each individual wheel is worthy of the name it was given at its birth, and therefore continue the maturation up to 24, 36, 40 months and more.
After 12 months, the Consortium experts carry out a test called “quality inspection” on all the wheels: each wheel is tapped with a hammer and the trained ear of the quality inspector recognises any defects inside the cheese that may compromise quality.
The conforming wheels are marked with the hot-iron brand thus becoming Parmigiano Reggiano. All identifying marks and signs are removed from any wheels which do not meet the PDO requirements. Read More Here

Side Project Merci 2024 Edition

We are going to select another Single Barrel beer at Side Project Brewing!
We have a date now -- August 28th!!
We are doing another barrel tasting with Cory and Karen King at Side Project Brewing. They are allowing us to bring some customers to taste and you will help select a single barrel of beer to be bottled exclusive for The Wine and Cheese Place. Everyone in attendance will be guaranteed a chance to purchase a bottle of that beer when it is bottled.

We are still working on details - but here is what we know now
  • We will be inviting 8-10 customers to helps us taste and select, like the first event.
  • It will take place at Side Project Brewing. August 28th (time to be detertimed)
  • We will invite top beer supporters with a very heavy emphasis on Side Project beer supporters at our stores (you must be a member of our rewards club) and our other TWCP beers.
  • Selection will be based on purchases since November 1st, 2023 up until August 10th, 2024

Side Project Merci 2024 Edition....$14.99 / 375ml
Merci was blended for our friend Paul Hayden at The Wine and Cheese Place in St. Louis. We would like to say “Merci” for all his support of Side Project Brewing by releasing Merci Vintage 2024, a blended Missouri Wild Ale.
For this latest Vintage, we focused on one of our favorite iterations of this beer, Blend #2, by incorporating a rich, funky Lambic-like palate, with our classical Side Project depth, and softness. As we do not blend to volume, only to taste, this batch is much smaller than previous releases and is packaged in 375 mL bottles to make sure we have enough to share. We also bottled this release of Merci in early January and have conditioned it exclusively with Brettanomyces Brux., a process we do not often use, for years of purposeful maturation and development in the bottle. We want this beer to express Side Project and our blending characteristics for years to come as you enjoy it now or later while saying “Merci” to those you are thankful for.

Trip down memory lane
Over the years, we have taken some of these empty whiskey barrels and aged all kinds of stuff including Beer, Maple Syrup, Coffee, Vanilla and honey in them

Back in 2011 we released our first Barrel Aged beer. We selected a Buffalo Trace Single Barrel and then took the fresh unwashed barrel to Schlafly and they aged their Quad in it! This is first of its kind done in Missouri and led to others following suit. Many said this is one of the first BA beers in the country done where a retailer buys the bourbon and sends the barrel to a brewery to make a beer exclusively for them.   The rest is history!

Ron Centenario 30 is a luxurious solera blend that perfects its fruity aroma and woody essence through years of aging. With a great body and bouquet, this limited edition is exclusive for lovers of excellence.
Amber color. On the nose there are red fruits, almonds with vanilla, chocolate, tobacco, wood and smoked. Creamy and very silky, with a great bouquet, long lingering on the palate, fruity and with notes of chocolate.
Ron Centenario are a line of rums produced in Costa Rica made from sugar cane juice as opposed to molasses. This would make it a kind of rhum agricole French style of rum or perhaps a Brazilian cachaca style of rum. Centenario 30yr Edicion Limitada is their premium expression aged in the solera method, which calls for retaining a portion of the oldest barrel (in this case, 30 years) and blending with the next oldest barrel.

The 2021 Côtes de Tablas Blanc is the best iteration of this cuvée I have ever tasted. A blend of 44% Viognier, 32% Grenache Blanc, 14% Marsanne and 10% Roussanne, it offers pure, slowly blossoming aromas of baked quince and peaches, mushroom powder, Manuka honey, roasted almonds and streaks of flint. The full-bodied palate is a harmonious symphony of highly concentrated, savory flavor layers, mouthwatering acidity, an alluring, velvety texture and a very long, flavorful finish. 1,215 cases were made.

Every drop of The Hearach single malt whisky is distilled, matured, blended, married, and bottled here in the Isle of Harris and nowhere else.
Our distillers and blenders are all drawn from the local community and have been trained from scratch in the craft and science of spirit-making.
We have one of the youngest teams of distillers in Scotland with an average age of 25 years with the youngest Rebekah Morrison from the village of Bowglass being 21 years old.
