Great new German beers...

The classic German wheat beer, Weihenstephaner Hefe Weissbier, was Beer Advocate's #8 beer of the year and rated "A" outstanding with 947 Reviews. We have just received two new beers from Weihenstephaner. You know they have to be good.

" In good time for Lent Weihenstephan's brewers are following an ancient monastic tradition and presenting their VITUS single-bock wheat beer. The monks knew what was good for body and soul and preferred to drink bock beer. During Lent, when no solid food might be eaten, the nourishing, satisfying beverage became a substitute for meals. Nowadays, though, dietary rules are not so strictly kept to, so VITUS can be enjoyed all the year round – even with a hearty meal. Bock beers are often named after important saints. The new single-bock wheat beer from the Weihenstephan brewery takes its name from Saint Vitus, one of the 14 patron saints of the Roman Catholic church. Saint Vitus is, amongst other things, the patron saint of beer brewers. VITUS is a light-coloured, spicy wheat bock beer, infused with fine, top-fermented yeast. I just noticed in the Beer Enthusiast's Draft Magazine Jan/Feb issue...




O'Fallon Whiskey Barrel Smoked Porter was named one of the top 25 beers in the world in 2008. It is great to see them get some recognition from a national magazine. It is amazing how many great beers there are in the world and O'Fallon made the top 25. Well done!! Unfortunately, the winning edition (Buffalo Trace) has been sold out for awhile. I have only 1 bottle left the the Weller Edition at Forsyth and maybe some at Provisions Gourmet Market. I also heard that there is some O'Fallon Cocoa Cream currently in barrel waiting for release.

Even though it is a "Christmas" beer, it has just arrived. But this one at 12% ABV can age for awhile.

"Stille Nacht (Silent Night) is a prestige beer from De Dolle Brouwers brewed for Christmas. It has the highest density of any Belgian beer (27°Pl). It has been boiling for many hours, brewed with pale malt with white candi sugar in the kettle. The Nugget hops gives an extra bitterness to balance the extreme sweetness due to the density. The taste triangle is completed with some acidity of the fermentation. It is a very interesting beer to age. We have samples of every bottling we have done so far and aging does not mean decreasing quality with this beer. Keep some samples at 10°C and mark the year on the cap with an alcohol marker. Cheese stuff....

CHEESE FAMILIES
"The cheese case at The Wine & Cheese Place may look like a mystifying jumble of myriad cheeses to many customers, but almost all cheeses informally belong to one of seven cheese “families.” These groupings are generally defined by the process used to make each type of cheese.

Bloomy rind cheeses are covered with a downy velvet of white mold, and ripen from the outside inward. When ripe, the centers should have a definite “give” when gently pressed in the middle. Before being shipped for sale, they are wrapped in paper and sometimes put into individual wooden boxes so that they can breathe and continue to mature. The inside (paste) will have a very soft, buttery or almost melting consistency. Their rinds are edible, but may not be to the taste of everybody. Popular bloomy rind cheeses are single, double and triple crème Bries, Camembert, Chaource, Fleur de Alpes, and the goat milk Florette. Appropriate wines for bloomy rind cheeses include Pinot Noir or Gamay. Try Mark West Pinot Noir or Duboeuf Moulin a Vent.

Washed rind cheeses have rinds that are tan to almost orangy. During the ripening process they are washed, rubbed or even immersed in a liquid bath that can consist of brine, wine, beer or simply water. This liquid acts as food for the surface bacteria that give these cheeses their distinctive and full flavor. Inside the paste is semi-soft to soft. Well-known washed rind cheeses include Pont l’Eveque, Epoisses, Liverot, Munster, Chimay and Italian Taleggio. They are best served with a minerally white wine like Hunold Pinot Gris.

Natural rind cheeses have rinds that are formed as the cheese is exposed to air and dried. Some are tightly wrapped in cloth for maturing. Their paste is firm to crumbly with a generally creamy, “cheesey” taste. This family includes Cheshire, Mimolette, Cantel, and Tomme de Savoie, and are very good with a nice Cotes do Rhone like the Chateau Segries ($11.99)

Uncooked pressed cheeses are made from curds that have not been cooked before they are pressed into moulds and drained of whey. (However, the milk is usually heat pasteurized.) They are semi-firm to firm, depending on their age. Their taste ranges from mild and smooth (young cheeses) to tangy and sharp (aged cheeses). Best known are Cheddar, French Morbier, Spanish Manchego, and Basque sheep cheeses. Accompany them with a good hearty read like a Atteca Spanish Grenache.

Cooked pressed cheeses are some of the most well-loved, and are often used in cooking. They are made from curds that have been heated to break down proteins before they are pressed into moulds. This is why they melt so well. Most cooked pressed cheeses are aged and firm to hard. They include favorites like Emmenthaler (Swiss), Gruyere, Gouda, Edam and Parmesan.

Veined cheeses are often called “blue cheese,” although their molds can also be green, yellow or purple. Almost every cheese-producing Western country makes a veined cheese, caused by the introduction of penicillium bacteria that either forms naturally or is injected into the cheese as it matures. Veined cheeses are neither cooked nor pressed. The curds are scooped into moulds which are turned frequently to allow the curds to press out most of the whey. Some of the whey remains, however, which is why veined cheeses often weep or drip liquid when they are fresh. Veined cheeses can range from creamy and mild to strong, tangy and crumbly. Fresh cheeses are uncooked and unripened. They are very moist and mild, with a pleasant, somewhat tart taste. Examples include cream cheese, cottage cheese, Chevre (fresh goat cheese), fresh Ricotta, and Mascarpone.

"Like India Pale Ale, Imperial Stout was originally brewed with high levels of alcohol and hops to withstand the rigors of a long sea journey, not to India, but to Imperial Russia and the Baltic States. These beers were exceptionally strong and complex, and were said to age well for as long as seven years. Our not-so-traditional version starts with a huge grain bill featuring several kinds of malted barley, wheat, rye, oats and spelt. Hopping is no less generous, with large portions of Fuggles and Hallertau Magnum, along with Hallertau Perle and Athanum. To enhance the body of the beer, we employ an ancient technique which uses the last runoff from the lautering one brew as mash-in water for the next. During fermentation, Belgian yeast contributes a most uncharacteristic fruitiness and complexity. Finally approximately 10% of the batch is barrel-aged for four months, then blended with fresh beer before bottling. The result is a unique blend of english tradition, Belgian eccentricity, and American ingenuity. "The International Bitterness Units scale, or simply IBU scale, provides a measure of the bitterness of beer, which is provided by the hops used during brewing. An IBU is one part per million of isohumulone — the higher number, the greater the bitterness.
The bittering effect is less noticeable in beers with a high quantity of malt, so a higher IBU is needed in heavier beers to balance the flavor. For example, an Imperial Stout may have an IBU of 50, but will taste less bitter than an English Bitter with an IBU of 30, because the first beer uses much more malt than the second. The technical limit for IBU's is around 100, others have tried to surpass this number but there is no real gauge after 100 IBUs when it comes to taste threshold."

"Save the wild yeasts! From senseless abuse and pasteurization. Suddenly beer-lovers here in the States are all a-titter over dark, sour, wood-aged ales. These complex, fruity-tasting beers, native to the Netherlands and Belgian Flanders, represent one of the oldest beer styles in the world. In their traditional form, these Sour Reds – also known as ‘Flemish Red’ or ‘Oud Bruin’ beers – are related to real lambic beers: a touch of wild yeast and bacteria coming from the wood give acidity, both lactic (sour) and acetic (vinegar).
Trouble is, it’s become nearly impossible to find a true, traditional Sour Red, even in the place where the style was born. The spate of Sour Reds turning up here now leaves most drinkers crying in their beer. They’re too damned sweet! Crass commercialization has brought even the generally recognized ‘classics’ of the style to their knees. They’re pasteurized, and sometimes laced with sugar or artificial sweeteners to make them appealing to the less-discerning beer drinker. The traditional complexity, character, and dryness are missing in action.
But now comes Panil Barriquée, and not a minute too soon. Barriquée is the only all-natural, traditionally-made example you will find today, and it comes from, of all places, Italy. I have been getting a lot of people asking about our online store. It is back up now!

A word about the weekly specials...
Because of our computer system, the prices in the computer do not change until Monday after we close. So if you come in on Monday for the specials, make sure you mention they are on sale to the checker so they can change the price. (The added bonus is that the previous week's special still ring out at the sale price on Monday -- last week's and this week's both on sale!)

Left Hand Smoke Jumper...$8.29 / 22oz
Smoked Imperial Porter.
When I went to the GABF this year, we also took a visit to Left Hand. We saw them smoking the malt for this beer. It smelled unbelievable. It was a great treat to actually see how the smoked the malt. I cannot wait to taste it tonight.

Beer Description: Roasty black in color, the long-lingering smokiness wraps around flavors of sweet molasses, toasted malt and an earthy hoppiness. A 21 degree plato Imperial Porter, the espresso and bittersweet chocolate flavors are present and blend well with, rather than overshadowed by, the hand smoked malt flavors. 9.51% ABV with 50 IBU’s.



A Bit of Smoke & Malt?
We love smoke in our beers. The smokier the better, or, as our Head Brewer, Ro Guenzel puts it, “If it says ‘smoke’ on the bottle, it better have smoke.” There was even a time before the Industrial Revolution that most of the beers crafted had a noticeable smoke characteristic to them. Why is that, you ask? Well, in those early days they didn’t have the ability to pick up the phone and call a maltster and ask for non-smoked malt. Those early brewers had their malt dried over open fires, which proved to be significantly quicker than drying it by the warmth of the sun and air. However, it imparted a smoky flavor, which (aghast!), many of those early brewers tried to filter out. However, some did not.
...So, being the crafty folk that we are, we decided to build our own smoker – developed by our Head Brewer Ro. Basically, we took a free-standing commercial warm & serve oven and outfitted it with 14 custom-built screen lined trays, vents and a very slick smokestack. That allowed us to smoke those 14 trays for 4 solid hours a time without those pesky workers comp related issues! Not to mention allowing us to ultimately control the levels of smokiness that we wanted to achieve with this year’s version – which was critical to us achieving that correct flavor profile without having it overwhelm the other flavors of our Imperial Porter. And, finally, the other question that we typically get: What type of wood(s) do you use to smoke your malt? Well, the use of different woods to smoke malt imparts different flavors in the beer. And that’s right where we’ll have to stop you – that old adage “we could tell you but we would have to kill you” applies. That’s the secret sauce, my friends." -- Chris Lennert, Left Hand Brewing

"Schlafly Grand Cru continues our series of bottle-conditioned, Belgian-style ales. Three different traditional Belgian yeast strains contribute fruity and spicy aromas which give complexity to this deep golden ale. Medium body and effervescence create a light, dry impression, despite its gravity and smooth, sweet finish. Store at cellar temperature until ready to serve." -- Schlafly

Schlafly Tripel has patiently awaited joining the ranks of our bottle-conditioned Belgian-style ale series. It was teh first festival ale for our Hop in the City beer festival which makes it dear to us. Tripel is hearty with a golden hue and rich, fruity character. While this ale is light in color, it is full bodied than many darker ales. These characteristics make it a great after-dinner drink and a perfect complement to aged cheeses and fruity desserts. We age this ale for months before it touches a bottle but, if you have the will power, it will improve for years to come.
